    Sushi Roll

    "Sushi can be filled with any ingredients you choose. Try smoked salmon instead of imitationcrabmeat. Serve with teriyaki sauce and wasabi."

    INGREDIENTS:2/3 cup uncooked short-grain white rice3 tablespoons rice vinegar3 tablespoons white sugar1 1/2 teaspoons salt4 sheets nori seaweed sheets1/2 cucumber, peeled, cut into small strips2 tablespoons pickled ginger1 avocado1/2 pound imitation crabmeat, flaked

    DIRECTIONS:1-In a medium saucepan, bring 1 1/3 cups water to a boil. Add rice, and stir. Reduce heat, coveand simmer for 20 minutes. In a small bowl, mix the rice vinegar, sugar ,and salt. Blend themixture into the rice.2-Preheat oven to 300 degrees F (150 degrees C). On a medium baking sheet, heat nori in thepreheated oven 1 to 2 minutes, until warm.3-Center one sheet nori on a bamboo sushi mat. Wet your hands. Using your hands, spread a thlayer of rice on the sheet of nori, and press into a thin layer. Arrange 1/4 of the cucumber, gingavocado, and imitation crabmeat in a line down the center of the rice. Lift the end of the mat, agently roll it over the ingredients, pressing gently. Roll it forward to make a complete roll. Repeawith remaining ingredients.4-Cut each roll into 4 to 6 slices using a wet, sharp knife.

    Smoked Salmon Sushi Roll

    "A very basic and easy way to make sushi rolls."

    INGREDIENTS:2 cups Japanese sushi rice6 tablespoons rice wine vinegar6 sheets nori (dry seaweed)1 avocado - peeled, pitted and sliced1 cucumber, peeled and sliced8 ounces smoked salmon, cut into long strips2 tablespoons wasabi paste

    DIRECTIONS:1-Soak rice for 4 hours. Drain rice and cook in a rice cooker with 2 cups of water. Rice must beslightly dry as vinegar will be added later.2-Immediately after rice is cooked, mix in 6 tablespoons rice vinegar to the hot rice. Spread rice

    on a plate until completely cool.3-Place 1 sheet of seaweed on bamboo mat, press a thin layer of cool rice on the seaweed. Leavat least 1/2 inch top and bottom edge of the seaweed uncovered. This is for easier sealing laterDot some wasabi on the rice. Arrange cucumber, avocado and smoked salmon to the rice. Positithem about 1 inch away from the bottom edge of the seaweed.4-Slightly wet the top edge of the seaweed. Roll from bottom to the top edge with the help of thbamboo mat tightly. Cut roll into 8 equal pieces and serve. Repeat for other rolls.

    Cch lm:

    - Bt go cho vo ni non-stick, pha theo cng thc pha chtrn bao b.Khoai mun s luc chn, lt v cho vo my xay tn nhuyn; bng dao nha (food processor) rcho khoai mn vo chung trong ni bt.

    RECI PE METHOD

    Prepare the dipping sauce; set aside.

    - 1 clove garlic, finely minced- 1 fresh small red chili pepper, seeded and finely minced- 1/4 cup sugar- 1/4 cup fresh lime juice, including pulp- 5 tablespoons Vietnamese or Thai fish sauce- 1/2 cup water* In a mortar, combine the garlic, chili and sugar and mash with a pestle to form a paste.Add the lime juice and pulp, fish sauce and water and stir to dissolve the sugar.

    * Strain the sauce into a bowl or jar and use immediately. Or, cover tightly and refrigeratefor up to 5 days.

    Cut the bread on the diagonal into slices 1/2 inch wide. Set aside.

    In a food processor fitted with the metal blade, combine the garlic, shallots and ginger; processuntil finely minced. Add the shrimp, sugar, salt, pepper and cornstarch; process until finely

    chopped but not pured.

    Spread about 1 tablespoon of the shrimp mixture evenly over each slice of bread; smooth thetops. Sprinkle the tops evenly with the sesame seeds, pressing them lightly into the paste. Placethe slices, shrimp side up, on a baking sheet and cover with plastic wrap until ready to fry.

    In a wok or deep frying pan, pour in oil to a depth of 1 1/2 inches and heat to 350 degrees F on deep-frying thermometer. Carefully add the slices, shrimp side down, and fry until golden brownon the underside, about 2 minutes. Turn over and continue to fry until golden brown on the secoside, about 1 minute longer.

    Using a slotted spoon, transfer the toasts to paper towels to drain. Arrange on a serving dish anserve warm with the dipping sauce.

    - 1/2 tsp salt

    What to Do:

    Mix together rice flour, salt, tapioca starch and turmeric powder. Beat egg with water and add to floumixture mix well. Peel and grate taro and sweet potato (you'll need approx. 1 cup taro and 1/2 cup swpotatoes). Mix together grated taro and potatoes with batter. Heat oil over high heat to about 350'F. D
