Here comes April. The weather is mild and warm, and the world is

awakening from the chill. This is also the time for you to revitalise your

body and soul.

In this issue, we introduce various treatments available in the spas of

Macau. From facials and body scrubs to foot reflexology, these treatments,

applying essences extracted from flowers and fruits, help to rejuvenate

your body and mind and boost your energy levels. In these lavish spas,

customers can relax and recharge in a tranquil and comfortable environment.

Some even feature unique facilities such as a vitality pool or ice fountain.

After a well-earned rest, it is time to get back on the road. Tuen Mun

in Hong Kong’s New Territories is not only famous for its 100-year-old

historical monuments, but also its seafood. Stalls selling the fresh catch

of the day line the Sam Shing Street market. Most customers prefer to

buy their seafood at the stalls and take them to nearby restaurants, where

experienced chefs can use the ingredients to create delicious dishes. Take

a break at a café or tuck in to some tantalising Thai cuisine. And if you

decide to hang out until late, there are small shops selling local delicacies.

So, why hesitate? Hop on a jetfoil now.

If you’re planning to travel overseas, we have a few enticing sugges-

tions. Consider Tokyo, Japan, where Nihonbashi, in the heart of the city,

is packed with new shops and eateries. Or take a trip to Seoul, South

Korea, where you can enjoy a hologram concert by your music idols. And

if you’re craving for a balmy sea breeze and traditional Spanish cuisine,

Vilanova i la Geltrú on the Mediterranean is a must. No matter where

you go, bon voyage!

今期，我們的專輯介紹澳門各大水療中心的不同療

程，由面部護理、身體按摩以至腳底按摩，均採用大自

Since opening last November, the House of Magic in Studio City Macau has seen master illusionist Franz Harary

and his cast of top magicians perform ground-breaking illusions to stunned audi-

ences. Now performing at the three-theatre magic complex are guest magicians Raymond

Crowe (until May 4), famed for his signature hand shadow puppets, and Kalin & Jinger (until

May 10), the magic couple awarded Magicians of the Year by the Academy of Magical Arts, who will

amaze visitors with an array of mind-bending tricks.

The Macao Fashion Gallery has reopened in grand style with an exhibition by Qiu Haisuo, a professor at Hangzhou’s China Academy of Art and an expert at painting on silk. Qiu displays 15 elegant silks hand-painted by her before becoming items of clothing at the crossroads of traditional art and modern design. Concur-rently, the gallery is hosting a spring pop-up store to showcase up-and-coming local fashion brands.

為慶祝英女王伊利沙伯二世在四月份的90歲生辰，英國皇家典藏將會舉辦三場名為《Fashioning a Reign: 90 Years of Style from The Queen's Wardrobe》的特別展覽，展出 150 套標誌著英女王的人生和國家重大事件的服裝。首階段展覽於4月21日在愛丁堡荷里路德宮揭幕，其後於7月23日移師倫敦白金漢宮，最後於9月17日起在溫莎堡展出。

To celebrate Queen Elizabeth II’s 90th birthday on

21 April, the Royal Collection will stage three exhibitions of

her wardrobe over the years. Fashioning a Reign: 90 Years

of Style from The Queen’s Wardrobe features 150 outfits

that mark significant events in the Monarch’s life and the

nation’s. The first segment opens 21 April at Edinburgh’s

Palace of Holyroodhouse, then at Buckingham Palace on

23 July and finally at Windsor Castle on 17 September.

澳門自身擁有多元文化共存的獨特性，為建構

世界旅遊休閒中心奠下根基。然而，澳門特

別行政區政府旅遊局局長文綺華表示，「世

界旅遊休閒中心」的定義，不僅限於旅遊層面，而是

更廣闊：建構一個宜居、宜遊的城市。

協同效應不斷發掘更多新鮮元素針對「宜遊」方面，文綺華希望在旅遊產品及旅客結構

方面更趨多元化。她說：「以往，大家對澳門的印象可

能是博彩元素較多，其實我們也有許多其他元素，故

此如何調配民間資源、發掘各社區的旅遊元素，把其

文化底蘊更好地呈現給遊客，都是我們發展旅遊產品

一個重要的環節。所以，除了提倡遊客到訪澳門歷史

城區、中區，也建議大家走出中心地帶，去探索澳門半

島其他社區或離島。」

另外，她表示希望把旅遊、文化及體育三方面結合，

形成協同效應。「去年12月6日，澳門早上舉辦國際馬拉松賽事，下午有拉丁城區幻彩大巡遊，晚上則啟動

光影節，讓旅客可在同一天體驗集旅遊、文化與體育

元素的觀光活動。今年將會跟體育局繼續合作，並積

極研究如何增加其旅遊元素及配套，計劃落實後將會

公佈。」

與時並進全方位開拓國際客源在旅客組成結構方面，現時大中華市場（即香港、內

地及台灣）佔總旅客的九成，文綺華希望做到更多元

化，吸引更多不同國家的過夜旅客到訪澳門。「在資

訊發放方面，近年我們盡力緊貼市場動態，採用合時

宜的宣傳方法去吸引國際市場，如多用不同社交媒體

平台、設立澳門旅遊數據+、手機應用程式等。近年亦開始邀請博客前來澳門體驗，再寫評價及感受與

粉絲分享。」

在交通及行程方面，文綺華認為最近開通的澳門屯

門航線，除了有助增加香港新界西北居民的遊澳意欲

外，航線可為國際旅客提供多一個便捷選擇經香港到

澳門。她分析道：「以往對國際旅客來說，最方便當然

是在香港赤鱲角機場下機後，直接乘船往澳門。隨屯

門航線班次逐漸增加，再配合往來屯門碼頭和機場專

車的接駁服務，可補充機場航線的班次，相信可吸引

更多國際旅客使用屯門航線訪澳。」

至於中央政府倡議的粵港澳一程多站旅遊合作，

文綺華抱持樂觀正面的態度，表示會繼續跟內地及

香港加強合作，研究相關旅遊產品，促進三地的旅遊

業發展。

NEW SYNERGIES: EXPLORING FRESH ELEMENTSTo make Macau attractive to visitors, Senna Fernandes says efforts will be made to introduce more tourism products and broaden the tourist demographic. “In the past, people’s impression of Macau has been about gaming. We actually have a lot more to offer. In our effort to develop more tourism products, one important thing is to allocate the right resources and identify attractive elements in different districts so that visitors get to experience Macau’s local culture. This is why we encourage tourists to visit not

TIMELY RESPONSE: DIVERSIFYING INTERNATIONAL TOURISM MARKET At present, visitors from Hong Kong, mainland China and Taiwan account for 90 per cent of tourist arrivals, but Macau is striving to draw more visitors from different parts of the world to stay in the city. “Regarding information distribution, we have been trying to keep up with the ever-changing market trend in recent years. We will adopt updated measures to promote Macau to the international market,” says Senna Fernandes. “[These include] a variety of social media platforms, Macau Tourism Data plus (MTD plus) and new mobile apps. Now we invite bloggers and encourage them to comment on the attractions and share the experience with their followers.”

Senna Fernandes bel ieves the recent ly launched ferry service connecting Tuen Mun with Macau will not only bring more visitors from Hong Kong, especially those living in Northeast New Territories, but also open up more options for international visitors travelling from Hong Kong to Macau.

“For international travellers, the most direct way to go to Macau is to take the airport ferry after landing at the Hong Kong International Airport,” she says. “With a more frequent ferry schedule between Tuen Mun and Macau, together with the shuttle bus service between Tuen Mun and the airport, the new route can complement the ferry service at the airport and can attract more international travellers to the city via the Tuen Mun route.”

Senna Fernandes is also optimistic about the plan to promote multi-destination itineraries for travellers to visit Guangdong, Hong Kong and Macau on one journey, as proposed by the Central Government. She says Macau will step up collaboration with mainland China and Hong Kong and explore the possibilities of related travel products with a view to promoting tourism in all three regions.

近年，屯門區內各式食肆如雨後春筍般湧現，

有些更深得老饕歡心，慕名而至。美食博客、

旅遊書及飲食專欄作者何穎家住屯門，最愛

是鑽進區內巷里尋找美食。今期，我們跟著她的美食

地圖邊走邊吃。

漁港風情何穎認為沒有吃過三聖邨的海鮮，不算到過屯門。在

三聖邨經營了13年的嘉彩漁村酒家，其總經理梁志洪表示，青山灣三聖街的海鮮聞名全港，全因有口皆碑，

明碼實價。食肆歡迎顧客攜帶自行購買的海鮮，顧客

也可以到三聖街的市場選購，忠仔記是其中一家頗具

名氣的海鮮攤檔，酒樓主廚之後會按顧客的要求，將

海鮮烹調成色、香、味俱全的菜餚，例如海大蝦沙律、

芝士焗龍蝦和胡椒蟹。

喜歡新派裝修及環境的話，何穎推介廣東名門，而

位於熟食亭的則有泰海鮮、南記，以及除海鮮外，炮

製燒鵝也十分出色的興記，她認為燒鵝的水準比深井

的還要高。用餐後，食客可以在毗鄰的青山灣海濱長

廊漫步，欣賞海灣夜景。

另外，何穎亦推介有超過60年歷史的容龍海鮮酒家，其招牌菜包括缽酒焗蠔、金銀蒜肉蟹糯米飯及芝

士焗龍蝦等。午市則有點心供應，何穎特別推薦懷舊

糯米雞及奇異米網炸兩，酒家更連續六年獲米芝蓮指

南美食推介。

國際品味如果想度過一個悠閒的下午，何穎推介到訪位於屯

門舊區，開業約一年半的海圖，該咖啡店以夢想為主

題，供應咖啡、意粉及「全日早餐」。她說：「我最喜歡

那裡的翠香汁意粉，醬汁以果汁(包括菠蘿汁、橙汁、檸檬汁)、沙律醬及少許芥末拌成，十分醒胃。這道菜的靈感源自店主廖智聰的父親，他父親在新加坡任職

廚師時，便是以此汁來烹煮鹿肉。這種美食傳承的故

事，令人格外窩心。各式單品咖啡也值得一試。」

此外，小曼谷是街坊最愛光顧的泰國家常菜館，何

穎笑道：「如果作為屯門人，不認識小曼谷實在太過份

了。」由於價錢實惠，餐廳每到晚市都座無虛席。必試

美食包括豬頸肉飯伴咖喱汁、海南雞飯、咖喱蝦碌及

冬蔭功等，令人回味無窮。

For dining in a stylish set t ing, Chinese Legend is a must-visit. Other favourites include Seafood Thai and Nam Kee. Hing Kee serves up great seafood dishes, but its roast goose is even more delicious than that found in Sham Tseng, which has a reputation for the best roast goose.

Dragon Inn Seafood Restaurant has been around for more than 60 years and its signature dishes include port wine oysters, steamed glutinous rice with crab and garlic, and lobster with cheese sauce. In the afternoon, dim sum is served. "The steamed glutinous rice with chicken and fried dough is amazing", says Ho. Dragon Inn has received a Bib Gourmand from the Hong Kong and Macau Michelin Guide for six consecutive years.

After dinner, visitors can take a walk along the Castle Peak Bay waterfront promenade and take in the cool harbour view.

INTERNATIONAL AFFAIRSFor a relaxing afternoon, Café Heato is a good option. Located in the old district of Tuen Mun, the restaurant adopts the theme of 'dream' , offering coffee, pasta and all-day breakfast. "My favourite is one of the pasta dishes," says Ho.

餅，蠔味濃郁，香脆可口，是必試的美食。

TASTES OF THE SEAA trip to Tuen Mun is not complete without trying the seafood at Sam Shing Estate in Castle Peak Bay. Leung Chi-hung, manager of the 13-year-old Kar Choi Fishing Village Restaurant, says the seafood on Sam Shing Street is popular thanks to the reasonable prices. There is a wet market where stalls such as Chung Chai Kee sell the freshest catch – and restaurants can prepare dishes with ingredients provided by the diners and according to their specific demands. Popular choices include prawn salad, lobster with cheese sauce and pepper crab.

"The sauce is made with different juices from pineapple, orange and lemon, salad sauce and a bit of mustard. It tastes refreshing. In fact, the sauce is created by the restaurant owner David Liu’s father, who used this sauce to cook deer meat when he worked as a chef in Singapore. This is a tale about legacy and it touches me. The coffee at the restaurant is also worth a try."

Also highly recommended is Mini Bangkok. "You would not call yourself a Tuen Muner if you have never heard of Mini Bangkok," Ho says. This Thai eatery is renowned for its reasonable prices and tasty dishes such as pork neck meat rice with curry sauce, Hainan chicken rice, prawns with curry and tom yum goong. Little wonder the place is heaving with diners every night.

FOR THE NIGHT OWLSThe local snacks are not to be missed. At Lung Mun Oasis, a 100m alley is lined with shops serving snacks and drinks. It is known as the ‘street for late-night snacks’ as most shops stay open until late. Modern Stand Lane is a favourite haunt. "I dig its tofu pudding and Horlicks with Ovaltine known as children’s yuen yeung," says Ho. The adjacent shop offers crispy fried oyster omelette and curry fish balls.

回顧與展望蘇炤成任職屯門區議員30多年、交通及運輸委員會

主席20多年，見證區內交通與飲食及旅遊業發展的密切關係。

蘇議員憶述，現時的屯門客運碼頭於1986年11月啟用，當時區議會已察覺到屯門碼頭的位置適宜開辦往

澳門及中國內地航線，所以碼頭曾開辦往來澳門及珠

海的航線，惟後來航線取消。直至今年1月28日，信德及中旅船務有限公司復辦前往澳門外港碼頭，以及深

圳機場的航線，令碼頭人氣再度急升。

蘇議員認為如果把元朗計算在內，受惠於新航線的

居民達一百多萬，他表示：「對居民來說，最大的好處

是省時、方便、快捷及享受到優質服務。對整體社區來

說，能帶旺經濟及旅遊業，包括食肆。」

作為振興青山灣工作小組的召集人，蘇議員與一眾

有關人士積極提升屯門的旅遊設施，包括促成海鮮街

的營運、興建「青山灣海鮮坊」牌坊作地標，並於街旁

興建800米長的青山灣海濱長廊。

A BRIGHT FUTURE So Shiu-shing, a district councillor in Tuen Mun for more than 30 years, and chairman of the Traffic and Transport Committee for more than 20 years, has witnessed how the transportation network in Tuen Mun shapes the local dining scene and the tourism sector. So, convener of the Working Group on the Revitalisation of Castle Peak Bay, has worked closely with various parties to enhance local tourist facilities. These include constructing a gateway landmark for the Castle Peak seafood street and building the waterfront promenade.

According to So, when the Tuen Mun Ferry Pier opened in November 1986, it encouraged new routes linking Tuen Mun with Macau and Zhuhai (although these were later cancelled). The pier was again in the spotlight on 28 January, when Shun Tak-China Travel Ship Management Limited launched a route between Tuen Mun, Macau Maritime Ferry Terminal and Shenzhen Airport.

So says the new route will benefit more than a million locals including residents of nearby Yuen Long. “For locals, this route is great. It is convenient and enables them to save time and enjoy quality services. It can also boost the local economy and tourist sector. Restaurants will be among the beneficiaries.”

K-LIVEBilled as the world’s f irst K-Pop hologram concert hall, K-Live is a must-visit destination for fans of the YG Entertainment label, with recent concerts featuring performances by G-Dragon, Big Bang, PSY and 2NE1. Providing room for up to 350 attendees per show, the performances utilise a combination of specially recorded content by each artist rendered in both 2D and 3D on a performance stage and surrounded by three wall-sized flat-panel displays. The addition of sound and lighting effects, as well as images of the audience taken at the entrance, all help create the illusion that they are actually on stage with the stars.

At other locations in the complex, the AR Elevator, Star Lounge and Square AR Show allow visitors to create and print digital images of themselves with their virtual idols.

“K-Live takes audiences beyond the concert hall,” says Kim Seung-hwan, director of the venue’s Virtual Culture Team. “Our shows can take place in any setting, in a virtual space of the imagination.”

一。「日本橋」以位於市中心的一道古代橋樑

橋樑原為木造，後來於明治年間（1868-1912年）改建為石橋；到了1960年代，高架公路跨建於橋上，將大部分的橋樑遮蓋，但它代表著日本全國高速公路網絡

今天，日本橋區一洗固有的商業形象。隨著傳統藝

術及工藝店、時尚精品店、食肆及娛樂場所紛紛進駐，

以魅力十足的全新姿態示人。近年，日本橋一帶積極

開展活化工程，部分原因是由鄰近的Marunouchi商業區成功轉型所帶動。

日本橋區內同樣擁有類似的戰前地標大樓，例如東

of Japan, but also offers a fascinating glimpse of ancient traditions thanks to the area’s location at the very ends of the Tokaido and Nakasendo roads that once connected Tokyo (formerly called Edo) with Kyoto.

In the early 1700s, the shogunate (military government) ordered that all fish be sold through a central wholesale market near the Nihonbashi Bridge. Restaurants nearby developed a creative new cuisine called Edomae sushi, which combined the freshest of raw fish wrapped around rice seasoned with vinegar. Reflecting this past, many of the small shops in the area still sell traditional cooking products such as knives, lacquerware and dried seaweed, even though the fish market moved to the Tsukiji district after the Great Kanto Earthquake of 1923.

Still, food is a big drawcard to the district; it ranges from Michelin-starred cuisine at the Mandarin Oriental, Tokyo to sushi and tempura in discreet eateries. The area also hosts ancient festivals including Sanno, a Shinto celebration centred around a vibrant procession, and is home to the Fukutoku Shrine, which was rebuilt in 2014 and has 1,000 years of history.

Early modern development of the district was primari ly led by the Mitsui family , which established Japan’s first department store, Mitsukoshi. Its more recent retail development, Coredo, now offers a mix of contemporary boutiques, restaurants and local craft specialists, while the surrounding maze of historical lanes has been revitalised with trees, cobblestones and footpaths.

Nihonbashi, a district considered the birthplace of modern Tokyo, has been one of Japan’s most important

mercantile centres since the 17th century. The name Nihonbashi literally means ‘Japan bridge’ and refers to an ancient bridge in the city centre, a powerful symbol of the district’s position at the capital’s crossroads. Originally constructed in wood, the landmark bridge was rebuilt in stone during the Meiji period (1868–1912) and today is largely hidden by an elevated expressway that was constructed in the 1960s. But it is still thought of as the centre of Japan, representing the official kilometre-zero marker for the country’s national highway network.

Today, Nihonbashi is dusting off its once-staid business image with an enticing new fusion of traditional arts and crafts, chic boutiques, dining and entertainment. Recent interest in revitalising the area has been driven in part by the successful transformation of the adjacent Marunouchi business district. Nihonbashi comprises a similar collection of post-war institutional buildings, such as the Tokyo Stock Exchange and the Bank

Just 40 kilometres southwest of Barcelona, Spain, and right on the Mediterranean, Vilanova i la Geltrú has a lot to offer: four

kilometres of fine beaches, a certain Cuban vibe, picturesque strolls along broad avenues called ramblas, shopping, dining, festivals, a f ishing port, water sports and a marina for super-yachts.

And then there is the 19th-century railway, linking Vilanova to the rest of the region and revitalising its economy. It also divides the town in two: the town side and the sea side.

L as R amblas connec t s Vi lanova’s t wo halves in the most delightful way. More than a kilometre long, this tree-lined, pedestrian-only boulevard is one of the longest ramblas in Catalonia, ideal for an evening walk. It runs from the church of Sant Antoni Abat with its 17th-century leaning bell tower right down to the port. Famous Spanish brands such as Massimo Dutti, Zara and Mango are there, as well as outdoor dining until very late.

Vilanovan Josep Tomàs Ventosa Soler was a textile magnate who made his fortune in Cuba in the 19th century. He and those who also made their fortunes in Cuba – indianos – returned to the town and built beautiful mansions in the Moderniste (Art Nouveau) style. Many indiano mansions are now eateries, such as the Gaudí-esque Casa Renard, now Pizzeria Gilda, and El Fornet, a bakery-café with a turtle pond out back.

The iconic Plaça de la Vila (Town Square), w ith many publ ic bui ld ings f inanced by Ventosa, is the focal point for the famous castellers (human towers) and other exciting events dur ing the Festa Major. For indie boutiques, quality shoe shops, cosy bars and historic plazas, wander up Capuxinos Street.

For more than 2,000 years, wine has been produced in the Penedès area, which puts Vilanova in the midst of one of Spain’s most popular wine tourism regions. Famous for sparkling cava wine – it produces 95 per cent of the bubbly in Spain – visitors can tour cava cellars; the adventurous can visit on horseback. At Espai Cel ler Can Pujol , you can even

Vilanova is Catalonia’s third-largest fishing port. More than a hundred boats arrive daily at the fish market, whose emblem is the Vilanova prawn. You can watch the fishermen unload their catch every day at 8am or 3pm, and many of the seafront restaurants along Passeig del Carme serve fish caught that morning. Try an authentic seafood paella, local specialties such as bull de tonyina (tuna stew), l'all cremat (seafood casserole) or Vilanova’s signature xató – a hearty salad made from local ingredients such as curly endives, raw cod and anchovies.

於1862年，美國調酒師Jerry Thomas的著作《How to Mix Drinks or, The Bon-Vivant's Companion》出版，就此開啟了雞

尾酒的第一個黃金時代。儘管經歷了一些阻滯，例如美

國的禁酒時期（1920-1933），但是75年多以來，仍有不少出色的雞尾酒，如乾馬天尼、古典酒、血腥瑪麗、戴吉

利和Sidecar等流傳下來。然而到了20世紀後期，人們卻不再那麼重視雞尾酒，調酒師的地位也大不如前。

踏入本世紀，消費者對經典雞尾酒再度產生興趣，

配合新飲料的開發，帶來百花齊放的創意，市面上出

現種類更廣泛的優質烈酒可能是原因之一。今天在澳

門與香港酒吧調配的雞尾酒，可能就是明日的經典。

The first golden age of the cocktail began in 1862 with the seminal publication of American bartender Jerry Thomas’

inf luential book How to Mix Drinks or, The Bon-Vivant’s Companion. It lasted, with the occasional hiccup such as Prohibition in the United States (1920–1933), for about 75 years, giving us the Dry Martini, Old Fashioned, Bloody Mary, Daiquiri, Sidecar and many more. However, cocktails were taken less seriously in the second half of the 20th century and bartending lost much of its kudos.

Martin Newell同意不過。他說：「雖然目前尚處於初階，但酒店已經開始重視酒吧。最知名的是麥卡

澳門的雞尾酒酒吧大部分都位於酒店，但Santos指出，選址友邦廣場的Sky 21卻是一個例外。他說派馳「受到本地的影響，以本地歷史及文化為靈感，並且

亦陸續有新的品牌及種類躋身市場，這方面亞洲扮演

This century has seen a revival of interest in classic cocktails, alongside a f lowering of creativity in the development of new drinks, partly because of the availability of a wider range of high-quality spirits. Tomorrow’s classics are probably being mixed today in bars in Hong Kong and Macau.

New gins, vodkas, rums, whiskies, tequilas, l iqueurs and bit ters are coming onto the market and Asia is playing a role. Gin and vodka are distilled in China at a time when a new appreciation of traditionally distilled Chinese spirits is growing. Japanese whisky is a requirement in any well-stocked bar.

“Bartenders are a lot more knowledgeable, can introduce people to new things and craft drinks to suit their palates,” says Martin Newell, brand manager at Moët Hennessy Diageo Hong Kong. “More people are educated about spirits.”

These days, mixologists are members of a respected profession, with new techniques and technologies greatly extending their range. IM

In Hong Kong, Antonio Lai of Quinary (ranked 39th on Drinks International’s World’s 50 Best Bars 2015 list) introduced liquid-nitrogen cocktails. He’s currently evaluating vaporised cocktails, which the drinker ‘smokes’. Often described as a ‘molecular mixologist’ (he prefers the term ‘multisensory’), Lai makes drinks with scientific precision. He uses a Brix meter to test the sugar level of fruit juices for proportionate, consistent sweetness, and f ish-tank oxygen pumps to froth drinks. Chinese ingredients (teas, mustards, black sugar) also feature prominently, while the Milo Dinosaur showcases the popular brand of drinking chocolate.

Lai co-owns two other cocktail bars with business partner Charlene Dawes – the recently opened VEA at The Wellington and The Envoy at The Pottinger. When meeting fellow bartenders for a drink, his favourite venues include the Island Shangri-La’s Lobster Bar and Grill (18th on the World’s 50 Best Bars 2015 list), Butler in Tsim Sha Tsui (for its Japanese bar service) and The Pontiac in Soho.

“The cocktail culture in Macau is a little behind Hong Kong,” Lai says, but he singles out Heart Bar

at the Ascott Macau and The Macallan Whisky Bar & Lounge at Galaxy Macau as quality places to visit.

When Quinary opened in 2012, the Hong Kong cocktail scene moved up a gear. Pacha, a new branch of the global nightclub group in Studio City Macau, may have the same impact in Macau. “In Macau, it’s more about classics and signature drinks,” says Bruno Santos, Pacha’s bar manager and president of the União de Bartenders e Cocktails de Macau (UBCM). “More experienced bartenders are making classic cocktails, so there is now a better approach to them.”

Martin Newell agrees. “It’s in its early stages, but hotels here are beginning to put more emphasis on their bars. The best-known is The Macallan, which has a full range of whisky, but also bartenders who know how to make a drink.”

Most cocktai l bars in Macau are in the hotel/casino complexes, but Santos tags Sky 21 in the AIA Tower as a good independent bar. Pacha, he says, is carving out new territory in making cocktails “with local inf luences, inspired by local history and culture, using local ingredients”; it also has eight signature cocktails named for Studio City’s entertainment sections, including a Poison Ivy for Batman Dark Flight. “If Pacha becomes known for the creativity of its bartenders, the scene will grow.”

意大利氣泡酒Prosecco是一種味道清爽的開胃酒，喝後讓人齒頰留芳，其不斷冒出的氣

泡，給人歡騰的感覺，而且餘韻濃烈。在意大

利的食店或餐廳，顧客看過菜單、點好菜之後，必會先

來一杯Prosecco。這種習慣現已席捲全球，由首爾以至聖地牙哥的派對，都可以看到這款冰凍開胃酒的蹤

影。相比層次複雜、在瓶內熟成的香檳，Prosecco只是簡單的氣泡酒，但它的好處是容易入口和價格實惠。

過去十年來，各地精明的消費者發現了象徵能量和活

Sculpture Competition in Sri Lanka, which encourages local residents to design sculptures of Asian elephants, was also introduced.

Its interior is equipped with removable glass partitions, flexibly transforming the space into private resting areas for those who prefer quiet relaxing moments, or small meeting rooms for business travellers. The Lounge also offers complimentary snacks and refreshments, magazines and newspapers, free WiFi, and personal escorts during embarkation. The Lounge is conveniently located immediately next to the building’s vehicle drop-off point for easy transit. 線，希望在下一個航班見到大家！

The company is committed to employee development and has provided many job opportunities to maritime studies graduates. I joined the company after graduation, and have been promoted from Deck Cadet to Night Vision Officer. I’m now the Chief Officer of a catamaran, learning and gaining experience every day. For seven years, we’ve carried passengers to their destination in safety and comfort. I love my job and felt it with a sense of mission. I’m now working on the Hong Kong–Macau–Airport route. I hope to see you on the next journey.

In addition to the 24-hour ferry services, the company also launched the Premier Jetfoil and Premier Plus services, provid-ing complimentary land transfers to our Premier Grand Class and VIP passengers. I’ve been working at the ticketing counter for Premier services since its launch. I understand customer expectations and have gained much job satisfaction over the years. I will strive to provide even better service professionally in the days ahead.
