Bem sei que a sensação que tive quando,
em 1994, cheguei à madeira terá sido dis-
tinta da de Gonçalves Zarco quando, em
1419, pôs os pés em terra e iniciou a des-
coberta desta ilha bem-aventurada. Quero
crer porém, que alguma sensação de des-
coberta e aventura teremos tido em comum
quando, cada um em seu tempo, nos deixámos
encantar por esta ilha maravilhosa.
Ao contrário de Zarco, que a encontrou virgem
e preenchida pela vasta floresta laurissilva,
eu tive o privilégio de a descobrir já com vá-
rias camadas de história e cultura, mas ainda
abençoada pelo seu clima paradisíaco e por uma
paisagem natural dramática e esplendorosa.
Lugar de paragem obrigatória nas rotas da
aventura lusitana pelas Áfricas, pelas Índias
ou pela América do Sul, este foi um espaço
de trocas onde se misturam sabores, se cul-
tivam produtos agrícolas e onde permanece uma
vegetação deslumbrante que hoje faz parte da
paisagem madeirense.
É por isso que, quando vou ao mercado dos La-
vradores ou me aventuro pelos campos, ainda
fico surpreendido pela diversidade e pela qua-
lidade de tantos produtos que nascem nesta ilha
ou no mar em redor dela...

(i am well aware that my first impression
when arriving in madeira back in 1994 would
have differed from those of Gonçalves Zarco
when, in 1419 he set foot here and began dis-
covering this blissful island. However, i be-
lieve we both started off with a shared spirit
of discovery and adventure as each of us, in
his respective time, fell prey to the charms
of this wonderful island.
unlike Zarco, who found it virgin and under its
dome of evergreen laurisilva forest, i had the
privilege of discovering it under several lay-
ers of history and culture, yet still blessed
by its heavenly climate and by a stunningly
dramatic landscape. A mandatory stopover on the
trails blazed by the Lusitanian in Africa, in-
dia and South America, the island was a trading
outpost where nowadays flavours blend together,
agriculture flourishes and the dazzling flora
remains part of the island’s landscape.
that is why i never cease to be amazed by the
bounty our island and the seas around her provide
whenever i venture into Farmer’s market, or into
a Farmer’s market or into the countryside...
...to enter Funchal’s food market is to embark
on a journey through aromas and tastes, one
that bred the idea for this book. its aim is
to tour madeira through its products, which i
combine with my skills to create the dishes i
present here. this book also pays hommage to
the madeira that welcomed me so warmly but its
main stars are... its main stars are the high
quality ingredients found on this unique and
unforgettably beautiful island.
So that i wouldn’t travel alone, i invited my
good friend Henrique Seruca to come along and
register my “créations culinaires” and offer
us the island’s landscapes through his excep-
tional photographer’s eye: Luis Vilhena who,
after marinating words, browning commas and
sautéing sentences baked a set of texts that
truly serve the thrills and the emotions of an
Epicure; and Rubina, whose mastery has devised
for our travellers a luxury conveyance of such
creative and attuned design as to turn this book
into a small work of art.
therefore, i am very proud of this book, which
portrays one of my best journeys in the world of
haute cuisine. i leave you with this invitation
to join me in discovering madeira, its produce
and landscape, along with some of the creations
i have developed during my sojourn in this un-
forgettable land.)
...entrar no mercado do Funchal é fazer
uma viagem de cheiros e paladares. Foi
desta sensação que nasceu a ideia deste
livro. A ideia que o conduz é a de conhe-
cer a madeira viajando através dos seus
produtos, aos quais eu empresto a minha
arte para os combinar produzindo assim um
conjunto de pratos que aqui vos apresento.
Este livro é também uma homenagem à ilha
da madeira, que tão bem me acolheu, mas as
estrelas principais... as estrelas princi-
pais são os produtos de altíssima qualidade
que podemos encontrar nesta ilha única de
paisagens inesquecíveis.
Para não viajar só, convidei o meu bom ami-
go Henrique Seruca para registar as minhas
“créations culinaires” e nos oferecer, com
o seu olhar de fotógrafo excecional, as pai-
sagens da ilha; o Luís Vilhena que, marinan-
do palavras, alourando vírgulas e refogando
frases, tirou do forno um conjunto de textos
que exprimem as sensações e as emoções de
quem desfruta o prazer da mesa; e a Rubina
que, de forma magistral, colocou ao serviço
dos viajantes um veículo de luxo, uma compo-
sição com um design repleto de sensibilidade
e criatividade que faz do livro uma pequena
obra de arte.
Este livro representa, assim, e com muito or-
gulho, uma da minhas melhores viagens no mundo
da alta gastronomia.
Aqui fica o convite para me acompanharem na
descoberta da madeira, dos seus produtos e pai-
sagens, ao longo da qual vos irei sugerir algu-
mas das criações que tenho desenvolvido durante
a minha estadia nesta terra inesquecível.

Este peixe parece ser muito interessante de ex-
plorar, pois a sua dimensão oferece diferentes
partes, que os chefes trabalham de forma distinta.
A ventrecha na brasa, um “carpaccio” do lombo, ou
outra parte num tártaro como Benoît tem utilizado
em alguns pratos mais recentes. Segundo ele, este
peixe combina muito bem com sabores orientais como o
“wasabi”, a soja ou o gengibre.
(it seems a very interesting fish to explore because its size
provides different parts that chefs treat differently: they
butterfly and chargrill its belly, sliver its loins into car-
paccio or, such as Benoît has done recently, work yet another
part into a “tartare”. According to him this fish combines very
well with oriental flavours such as “wasabi”, soy or ginger.)

-me Benoît. Por isso o usa muitas vezes ligando-o
com azeitonas pretas, tomates secos ou confitados.
(“Yam reminds me of artichoke”, Benoît told me. that is
why he often uses it with black olives, dried tomatoes or
tomato “confit”.)

prato para experimentar saboreando cada
elemento individualmente. Cada garfada
deve conter todos eles. Em conjunto, vão
transportar-nos a uma memorável viagem
de paladares asiáticos. É uma dessas ex-
periências em que nos apetece fechar os
olhos e... aos poucos... descobrir cada
um desses ingredientes que nos provocam
os sentidos.

Each forkful must hold them all. together,
they’ll take us on a memorable journey through
Asian flavours. it’s one of those occasions
