El 11 de marzo de 2009 hubo una reforma en el 'Estandard y criterio de los alimentos' del Ministerio de Alimentos

y seguridad de medicamentos('식품의 기준 및 규격' del MFDS, Ministry of Food and drug safety) y en ella se

redefinió el concepto de 'cabezas de pescado'.

Definición anterior: Cabezas de merluza congeladas para consumo.

Se refiere a las cabezas de merluzas(Gadus morhua, Gadus ogac, Gadus macrocephalus) cortadas junto a las

aletas pectorales y aletas abdominales, atravesado por el proceso de congelación rápida en donde su eje

registra una temperatura menor de -18℃, apta para el consumo humano.

Nueva definición: Cabezas de pescado para consumo

Se refiere a las merluzas(Gadus morhua, Gadus ogac, Gadus macrocephalus, Merluccius australis) y atunes

cortadas junto a las aletas pectorales y aletas abdominales, además de cabezas de todo tipo de pescado

comestible excluyendo el pez orbe o pez globo separado la parte comestible, atravesado por el proceso de

congelación rápida en donde su eje registra una temperatura menor de -18℃, apta para el consumo humano.

Se amplió el concepto de 'cabezas de pescado' para fortalecer el control higiénico, incluyendo los pescados

Merluccius australis y atunes. Entra en esta categoría la parte comestible separada de la cabeza del pescado y

se agregó el estandard de seguridad referente al metal pesado e histamina (inferior a 200 mg/kg) que pueden

contener los atunes.

Detalles de estos reglamentos, favor de consultar a la importadora o agente aduanal.

Sólo los establecimientos registrados y autorizados en SENASA pueden exportar cabezas o visceras de pescado

hacia Corea del Sur.

comercializan a un precio mayorista de 7.000 a 10.000 wones, equivalente a 6,85 a 9,79 dólares por kilo(tipo

de cambio a la fecha: 1.021,10 wones por dólar).
