There are almost never any problems. And of course it's cheaper, because you don't have topay for a hotel. AIso, hotels can be so impersonal. Staying in somebody's home is alwaysapleasant expenence.

I once stayed for two weeks at a retired Parisian couple's apartment. They were wonderful.Theycooked meals every night with an appetizer, aperitif, salad, main course, cheese course,dessert, and a fruit course. And lots of French table wine.

It's called chicken paprika.

Well, my wife usually does the cooking around here, so I'm no expert. But I can try to tell youthe gist of it, and later Zsuzsanna can fill in the details.

Fine. I realize you're not a gourmet chef

First, you chop an onion and fry it. When you think it's ready, sprinkle in some paprika. Do youhave that in England?

Well, I know what it is, of course, but I don't suppose there's any in my cupboard.

I can get you some here to take back with you. I'm sure it's cheaper in Hungary anyway.

Thank you, that's very kind of you.

Anyway, once you put in a little paprika, you put in some chicken pieces - maybe somedrumsticks - and turn them in the oil until they are covered. They will look red because of thepaprika. You fry it a little this way until the chicken tums golden brown. Then you pour in enoughwater to boil the chicken, and cover the pan. You should simmer it until the chiken is tender.

And what about those little globs of pasta? They are delicious!

Those little globs of pasta are the hard part. I've never be en able to cook those successfully -my wife always says they taste like soap! They really don't have an English name. Perhaps youhave heard the Italian name: gnocchi.

I've heard of it.

To make them, you need flour, egg, water and salt. And, I think, a little oil. You should also get aspecial pan with holes in it. My wife will show it to you. You mix the ingredients in a bowl andforce the batter trough the holes in that pan I mentioned, into a big, tall pot of boiling, saltywater. Stir it occasionalIy, and taste a few to see if they are done after a few minutes. Then pour

off the excess water.

- The only trick is knowing when to stop boiling them.
