Thai New Example แพทยเผยอาหารไทย มสารตกคางเกนมาตรฐาน • จากรายงานการเฝาระวงอาหารเปนพษของกรมควบคมโรคในกลม
ผบรโภคทกชวงอายทวประเทศพบผปวยโรคอาหารเปนพษจ านวน 102,370 ราย โดยพบวา ภาคตะวนออกเฉยงเหนอมากทสด เทากบ 53,182 หรอ 51.95% ภาคเหนอ 25,414 หรอ 24.82% ภาคกลาง 19,658 หรอ 19.23% ภาคใต 4,089 หรอ 3.99%
• ผปวยโรคอาหารเปนพษพบมากในเดกวยเรยน อาย 5 - 24 ป และวยท างาน อาย 25 ? 64 ป โดยจากการเฝาระวงอาหารในโรงเรยนไดตรวจพบเชอจลนทรยกอโรคในอาหาร ผสมผสอาหาร และภาชนะในโรงเรยน 101 แหง เกนมาตรฐาน 46.5% อกดวย

………………………………………….. ดวยปรากฏวามผปวยจากการบรโภคเนอปลาปกเปาทมสารพษเตตโตรโดทอกซน (Tetrodotoxin) ซงอาจเปนอนตรายถงชวต กระทรวงสาธารณสขจงเหนควรก าหนดมาตรการในการคมครองความปลอดภยของผบรโภค
โดยออกประกาศกระทรวงสาธารณสข (ฉบบท 264) พ.ศ.2545 เรอง ก าหนดอาหารทหามผลต น าเขา หรอจ าหนาย ลงวนท 19 ธนวาคม 2545 โดยมสาระส าคญหามมใหผลต น าเขา หรอจ าหนายปลาปกเปาและอาหารทมปลาปกเปาเปนสวนผสมซงประกาศกระทรวงสาธารณสขฉบบนไดประกาศในราชกจจานเบกษาฉบบทวไป เลม 119 ตอนพเศษ 128ง. ลงวนท 25 ธนวาคม 2545 มผลบงคบใชตงแตวนท 26 ธนวาคม 2545 เปนตนไป และ
นบตงแตวนทประกาศกระทรวงสาธารณสขฉบบนมผลใชบงคบแลว จะตองไมมการผลต การจ าหนาย หรอน าเขา ปลาปกเปาและอาหารทมปลาปกเปาเปนสวนผสมทงน รวมถงการผลตเพอสงออกดวย ส านกงานคณะกรรมการอาหารและยาจงขอประกาศใหทราบโดยทวกนและขอใหผประกอบการทเกยวของปฏบตตามประกาศดงกลาวโดยเครงครด ผฝาฝนจะมความผดตามมาตรา 50 แหงพระราชบญญตอาหาร พ.ศ.2522 กลาวคอ ตองระวางโทษจ าคกตงแตหกเดอนถงสองป และปรบตงแต หาพนบาทถงสองหมนบาท หากมขอสงสยประการใด โปรดตดตอสอบถามไดทกองควบคมอาหาร ส านกงานคณะกรรมการอาหารและยา กระทรวงสาธารณสข โทร.0-2590-7322,

(ฉบบท 173) พ.ศ.2539 เรอง ก าหนดอาหารทหามน าเขาหรอจ าหนาย อาศยอ านาจตามความในมาตรา 5 และมาตรา 6(8) แหงพระราชบญญตอาหาร พ.ศ.2522 อนเปนพระราชบญญตทมบทบญญตบางประการเกยวกบการจ ากดสทธและเสรภาพของบคคล ซงมาตรา 29 ประกอบกบมาตรา 35 มาตรา 48 และมาตรา 50 ของรฐธรรมนญแหงราชอาณาจกรไทย บญญตใหกระท าไดโดยอาศย

น าเขาหรอจ าหนาย ลงวนท 10 เมษายน พ.ศ.2539 ขอ 2 ใหเนอโคและผลตภณฑทไดจากโคทมแหลงก าเนดจากประเทศทมความเสยงจากการเกดโรคววบา (BSE) ไดแก สหราชอาณาจกร โปรตเกส ฝรงเศส ไอรแลนด สวตเซอรแลนด เบลเยยม สหพนธ
สาธารณรฐเยอรมน และเนเธอรแลนด เปนอาหารทหามน าเขาหรอจ าหนาย (1) นมและผลตภณฑนม
(2) เจลาตนทมหนงสอรบรองวาปลอดจากโรคววบา (BSE) จากหนวยงานของรฐทรบผดชอบของประเทศทเปนแหลงก าเนด หรอสถาบนเอกชนทรบรองโดยหนวยงานของรฐทรบผดชอบของประเทศทเปน
แหลงก าเนด แลวแตกรณ โดยมสาระส าคญตามทส านกงานคณะกรรมการอาหารและยาประกาศก าหนด ขอ 3 ประกาศน ใหใชบงคบตงแตวนถดจากวนประกาศในราชกจจานเบกษาเปนตนไป

Refrigeration is one of the most important ways contamination of foods in controlled. When food are not handled properly in cold storage, they can become heavily contaminated.

• Food product provide nutrients that people need. Microorganisms need many of the same nutrients, so food products are an ideal source of nutrition for microorganisms.

How to prevent and control contamination of food?
1 The environment
- food should not be touched by human hands
- Food should be covered during storage, holding, and service
- Food in single-service wrappers or containers, such as milk and juice, should be served directly from these containers.
- Equipment and utensils used in food processing, packaging, preparation, and service should be cleaned and sanitized between use.
- Food service manager should train employees to handle dishes and eating utensils so that their hands do not touch any surface.
2 During storage
- Storage facilities should have plenty of space and an organized storage layout, and stock should be rotated.
- Storage area floors should be swept or scrubbed and shelves or racks should be cleaned and sanitized
3 Litter and garbage
- Refuse should be kept in appropriate containers and removed from the food area regularly.
- Clean, disinfected, seamless trash containers should be kept in all work areas.
- The best method is to use separate containers for food waste from those used for litter and rubbish
4 Toxic substances
- Poisons and toxic chemicals should not be stored near food products.
- Only cleaning compounds, supplies, utensils, and equipment approved by regulatory or other agencies should be used in food handling, processing and preparation.
