ZUCCHINI BREAD 2 cups sugar 2 cups grated zucchini 3 eggs 1 cup vegetable oil 2 teaspoons vanilla Preheat oven to 325 degrees F. In a large bowl, combine the eggs, sugar and oil. Add the vanilla and zucchini. Stir in the jar of zucchini bread mix until blended. Grease and flour 2 8” x 4” loaf pans. Pour the batter evenly between the 2 pans. Bake for 55 to 65 minutes.
