UVOD V leto�njem letu drugiè sodelujemo v projektu Turizmu pomaga
lastna glava. Tudi tokrat smo storili koristno delo. Glede na
temo, so letos uèenci skupaj s pomoèjo odraslih, zbrali recepte
starinskih poljanskih jedi, ki se �e redko najdejo na na�ih mizah;
v hi�ah kjer �e babic veè ni � skoraj nikoli. Pa bi morale biti!
Tako raznolike, dobre in zdrave so.
�Na mladih stoji�, da obudijo stare navade tudi v pripravi jedi.
K temu bo malo doprinesla knji�ica, ki je pred nami.

Zamesimo gladko testo, ki naj poèiva 1 uro. Medtem segrejemo mast. Testo
èim bolj tanko razvleèemo, nama�emo s segreto mastjo in previdno zvijemo.
Zvitek damo v poma�èen pekaè. Peèemo 30 minut na 200°C.

1 kg kislega zelja,
0,5 kg fi�ola,
3 do 4 �lice masti,
èebula,
3 dag moke,
2 stroka èesna,
sol
Postopek:
Kislo zelje skuhamo, dodamo posebej kuhan fi�ol. Na olju zarumenimo èebulo
z moko, dodamo sesekljan èesen in vlijemo v zelje, ki naj �e nekajkrat prevre.
Zraven ponudimo cel krompir.

25 dag bele moke,
25 dag ajdove moke,
sol,
2 �lici ocvirkov
Postopek:
V slan krop stresemo me�anico bele in ajdove moke. S kuhalnico naredimo
luknjo v sredini. Vse skupaj naj poèasi vre 20 minut. Odlijemo vodo in �gance
zme�amo ter jih razdrobimo.. Ocvirke segrejemo na ma�èobi in jih nato
polijemo po �gancih.

1 kg ovèetine s kostmi,
3 korenèki rdeèi in rumeni,
2 èebuli,
3 stroki èesna,

1 vejica peter�ilja,
1 zelnata glava,
5 velikih krompirjev,
cel poper in sol po okusu
Postopek:
V lonec damo na ko�èke narezano meso, èebulo, korenje, èesen, paradi�nik,
sesekljan peter�ilj, cel poper, solimo in zalijemo z vodo. Kuhamo dokler se
meso zmehèa. Oèi�èeno zelno glavo nare�emo na kocke in blan�iramo.
Posebej skuhamo na kocke narezan krompir ter kuhanega odcedimo. Oboje
damo v lonec z mesom, solimo po okusu in na blagem ognju kuhamo �e pol
ure. Ponudimo vroèe s sve�im domaèim kruhom in vinom.

Postopek:
Surov krompir naribamo na drobno, dodamo sol in ga dobro stisnemo, da gre
ven �krob. Dodamo ocvirke in jajca. Zme�amo dodamo moko, naredimo hrge.
Kuhamo jih v slanem kropu pol ure ali pa zmes speèemo v poma�èenem
pekaèu. Zraven ponudimo kislo zelje v solati.

2 svinjska parklja, lahko �e u�eca in ko�ice,
20 g èesna,
poper,
sol,
kuhana jajca
Postopek:
Parklje kuhamo toliko èasa da postanejo mehki. Zaèinimo jih s celim poprom,
lovorom, èesnom in soljo. Vrejo naj toliko èasa, da zaène meso odstopati od
kosti. Meso poberemo iz juhe, juho precedimo in postavimo na hladno, da se
na vrhu zbere mast. Strnjeno mast skrbno posnamemo. Ohlajeno meso
oèistimo kosti in meso zre�emo na ko�èke. Meso zlo�imo v pekaè zalijemo z
juho, popopramo, dodamo strt èesen in trdo kuhana na rezine narezana jajca.
Postavimo na hladno. Drugi dan jo nare�emo na kose in ponudimo z narezano
èebulo.

30 dag kruha,
2 dag ma�èobe,
2 dag èebule,
�èep popra,
malo slanine,
zelen peter�ilj,

malo mleka ali juhe,

Postopek:
Kruh nare�emo na kocke. Posebej na ma�èobi prepra�imo èebulo in slanino
in jo stresemo h kruhu, ga malo popramo in dodamo sesekljan peter�ilj. V
mleku ali juhi raztepemo jajca, oboje vlijemo na kruh, rahlo pome�amo in
pustimo stati 15 minut. Tedaj dodamo moko, ponovno rahlo preme�amo in
oblikujemo veèje cmoke. Skuhamo v slanem kropu in �e opeèemo na ma�èobi
od peèenke ali peèene koko�i.

Testo:
500 g gladke moke,
5 g soli,
50 g masla,
50 g sladkorja,
2 rumenjaka,
40 g kvasa,
10 g limonine lupine,
3 dl toplega mleka,
Ocvirkov nadev:
400 g mesnatih drobnih ocvirkov,
10 dag masla,
3 rumenjaki,
sol in poper po okusu,
1 g mletih klinèkov,
15 g kru�nih drobtin za posip
Postopek:
Pripravimo kvasni nastavek tako, da dodamo kvasu manj�o kolièino sladkorja
malo toplega mleka in moke. Pustimo vzhajati. Ostale sestavine dobro
preme�amo, dodamo vzhajan kvas. Zamesimo testo ga dobro pregnetemo, da
ostopi od rok in posode. Testo naj poèiva 15 minut, nato ga ponovno
pregnetemo in pustimo vzhajati v toplem in vla�nem prostoru. Vzhajano testo
razvaljamo 1 cm debelo in nama�emo s pripravljenem nadevom. Testo tesno
zvijemo in prelo�imo v dobro nama�èen in z moko posipan model za potico.
Potico prebodemo z leseno palèko in pustimo, da vzhaja. Pred peko povr�ino
nama�emo z maslom. Potico peèemo pri 190°C 60 minut.
Ocvirkov nadev:
Stepamo maslo,dodamo rumenjake, poper in sol.Nadev prema�emo po
razvaljanem testu in posipamo z ocvirki in posipamo �e z drobtinami.

Postopek:
Zame�eno in pregneteno testo vzhaja 1 uro. Testo razvaljamo za no�ev rob
debelo, nama�emo ga z nadevom, tesno zvijemo in damo v pomazan model.
Vzhajano nama�emo z jajcem in speèemo. Po nadevu lahko potresemo tudi
rozine.
Nadev:
Orehe poparimo z mlekom, pridamo sladkor, margarino, ko se nekoliko
ohladijo dodamo �e jajce z rumom in naribano jabolko.
