CLASIFICACION DE LAS PROTEINAS SEGÚN SU FORMA:
Fibrosas: presentas cadenas polipeptídicas y una estructura atípica. Son
insolubles en agua y hacen parte de este grupo la queratina, colágeno y
fibrina.
Globulares: se caracterizan por doblar sus cadenas en una forma esférica
apretada, dejando grupos hidrófobos hacia adentro de la proteína y grupos
hidrófilos hacia afuera, lo que hacen que sean solubles en disolventes
como el agua. Hacen parte de este grupo: enzimas, anticuerpos,
hormonas.
Mixtas: poseen una parte fibrilar en el centro de la proteína y otra parte
globular en los extremos.
