Lambic is a type of beer brewed traditionally in Belgium. Unlike conventional brews, which are fermented by carefully cultivated strains of brewer’s yeasts, lambic beer is produced by spontaneous fermentation: it is exposed to the wild yeasts and bacteria of the region.
