Basic Principles of Organic Agriculture

有機栽培の基本的方針■ Regulated by EU regulation 834/2007

EU規則834/2007で規制されている。

■ Attentive handling of ressources as water, soil, air

水、土壌、大気などの資源を注意深く管理

■ No use of synthetical mineral fertilisers, because those damage soil life

化成肥料は、土中の生命を損なうので使わない。

■ No use of chemical/synthetical pesticides. Used means are based on natural

active ingredients, which are already present naturally in our environment

化学的、合成殺虫剤は使わない。使用するのは、自然にある

原料をもとにしたもの、つまり我々の環境の中にすでに自然に存

在するものである。


Basic Principles of Organic Agriculture

有機栽培の基本的方針

■ Promotion of diversity of species and promotion of beneficial insects

(natural antagonists towards animal pests)

種の多様化を促進し、益虫を増やす。（有害生物に対する自然の敵対者）

■ Creation of diverse ecosystems

多様なエコシステムを作り出す。

■ Natural products instead of genetically modified products

遺伝子組み換え製品ではなく、自然の製品を使う。

Current situation of Organic Viticulture in Germany

ドイツのぶどうの有機栽培の現状■ 1985: Germany started with the first regulations on organic wine growing before there was any

law, either German or EU

The German regulation became the found of the EU Organic Wine law

1985年、ドイツやEUでの有機栽培についての法律が制定される前に、初めてぶどうの有機栽培の規定を設けた。ドイツの規定が、EUの有機ワインの法律の基礎となった。

■ 2018: 9,3 % of all German vineyards are cultivated organically (9,300 ha)

2018年：ドイツのぶどう畑の9.3%が有機栽培（ 9,300 ha ）

■ Organic viticulture is practiced in all German winegrowing areas

ぶどうの有機栽培はドイツのすべての産地で実施されている。

■ Organic wineries are always certified by EU regulation 834/2007 and can

be recognised by EU eco seal:

有機栽培を実践するワイナリーは、必ずEU規則834/2007で認証され、EUのエコシールにより識別することができる。

Current situation of Organic Viticulture in Germany

ドイツのぶどうの有機栽培の現状

■ Many of those wineries (about 50%) in addition are member of organic farming

associations (Ecovin, Demeter, Naturland, Bioland….)

これらのワイナリーの多く（約50%)は、有機栽培の何等かの協会

の会員でもある(Ecovin, Demeter, Naturland, Bioland….) 。

■ Several ideas coming from organic viticulture by now have been taken over by

conventional wineries.

これまでに有機栽培から生じたいくつかの考え方は、慣行農法のワ

イナリーに引き継がれてきた。

■ A large number of wineries work eco – like, but are not certified organic as this

results in quite high certification costs

多くのワイナリーが、有機栽培のような農法を行っているが、有機栽

培の認証は取得していない。認証取得のコストが高いためである。

チャンス＆チャレンジ：構造的状況

■ wineries are small and work in agricultural

landscapes which are difficult to access (e.g. in

Moselle valley)

ワイナリーは小規模で、アクセスが難しい景観の中で働

いている（例：モーゼル）

■ Especially organic viticulture is struggling with the

realisation of necessary prices, which have to be

paid to cover the costs

特に、有機栽培は、そのコストをカバーするために支払

われるべき価格の実現に苦労している。

■ Therefore low-price (or low quality) strategies do not

make sense for most of the German organic

wineries

従い、低価格戦略（あるいは低品質）は、多くのドイツ

の有機栽培のワイナリーには意味をなさない。

■ → Conclusion: a lot of the German organic wines

are high-quality products

Trend: Natural Wines

ナチュラルワインのトレンド

■ Initial situation: Globalised world lead to globalised wines

当初の状況：グローバル化された世界は、グローバル化されたワインに通じる。

■ „Natural wines“ arouse firstly from wineries working organicly

「ナチュラルワイン」はまず、有機栽培を実践するワイナリーから生まれる。

■ No clear definition /no legal standard. Often: spontaneous

fermentation, no additives, unfiltered, low or no added SO2

明確な定義/法的基準はない。よく言われることは：自然発酵、添加物なし、

フィルターをかけない、SO2は少ない、あるいは加えない。

■ Organic viticultors are predestined to experiment with those method

– because the guidelines (e.g. Demeter) do not allow a lot of

additives in the cellar anyway.

– Need to look into the details, to be very close to the product during the whole process of vinification, constant

tasting and subtle steering of those processes by cautious stiring or heating

有機栽培の生産者は、これらの手法を試すように運命づけられている

‐ ガイドライン（例：Demeter）は、多くの添加物を許可していない。

－醸造の全過程を通じて、詳細を観察し、製品を細かく見ていなければならない。そして絶
