    Procedure: Puremaplesyruporhoney,orplainyogurt(optional,forserving) Lightlybutter,oil,orsprayyourgriddlenonstickworksbestwiththese,if youhavethemifneeded,andpreheatitovermediumheat.Ifyouareusing anelectricgriddle,preheatitto350degreesF.Preheattheovento200 degreesFifyoudonotplantoservethepancakeshotoffthegriddle. Whiskflour,sugar,bakingpowder,bakingsoda,cinnamonornutmegand salttogetherinalargebowl.Inaseparatebowl,whisktogetherthemilk, cottagecheese,butter,eggyolksandvanilla.     BlenderHollandaise 10Tbspunsaltedbutter 3eggyolks 1Tbsplemonjuice 1/2teaspoonsalt DashofcayenneorTabasco

    Procedure: Startwiththebacon.Heatalargeskilletonmediumlowheat.Add thestripsofbaconortheslicesofCanadianbacon.Slowlyfry,turning occasionally,untilthebaconisbrownedonbothsides,andifusingstrip bacon,muchofthefatisrenderedout(about10minutes).Usetongsor aforktoremovethebaconfromthepan,setonapapertoweltoabsorb theexcessfat.Dontpourthebaconfatleftinthepandownthedrain! Eithersopitupwithpapertowelswhenithascooledabit,orpouritintoa jartobeusedlater. Whilethebaconiscooking,bringalargesaucepantwo-thirds-filledwith watertoaboil,thenaddthevinegar.Bringthewatertoaboilagain,then lowertheheattoabaresimmer. Maketheblenderhollandaise.Tomakeblenderhollandaise,melt10Tbsp unsaltedbutter.Put3eggyolks,atablespoonoflemonjuice,1/2teaspoon saltinablender,blendonmediumtomediumhighspeedfor20-30 seconds,untileggslightenincolor.Turnblenderdowntolowestsetting, slowlydribbleinthehotmeltedbutter,whilecontinuingtoblend.Tastefor saltandacidityandaddmoresaltorlemonjuicetotaste.Transferittoa containeryoucanuseforpouringandsetitonawarmbutnothot placeonornearthestovetop. Poachtheeggs.Essentially,workingoneeggatatimeyoucrackanegg
