20TH ANNUAL NATIONAL CORNBREAD FESTIVALAPRIL 23RD & 24TH, 2016
This year on April 23rd and 24th over 40,000 festival goers from all over the southeast will gather in South Pittsburg, TN to enjoy the sights, sounds and tastes of the 20th Annual National Cornbread Festival. Lo-cated just a few miles west of Chattanooga, nestled in the foothills of the South Cumberland Mountains on the banks of the Tennessee River, this quaint little town hosts a grand festival in celebration of a culinary delight often referred to as the cornerstone of southern cuisine; corn-bread.
Contestants from all over the country enter their best recipes in hopes of becoming the next National Cornbread Cook-off Champion. This event inspires a wide range of recipes from traditional southern corn-bread to creative flavors like maple bacon, jalapeno and local favorites all served up with a smile as you stroll along Cornbread Alley. If you’re really courageous, join one of the cornbread eating contests or butter-milk chugging races.
Throughout the town there are 5 stages including the historic Prin-cess Theatre that will feature over 30 acts filling the streets with the sounds of country, bluegrass, old-time fiddlers, southern gospel, and rock music. 14-time Grammy Award winning country music and blue-grass artist Ricky Skaggs and Kentucky Thunder will headline the main stage Saturday, April 23rd. Bring your bag chairs and experience Ricky Skaggs and Kentucky Thunder’s well-known unique cross-cul-tural, genre-bending musical sounds along with other chart-climbers like Brain White, Red Roots and many others for the low festival ad-mission price of only $5.
The National Cornbread Festival was recently selected as one of the top 100 events in North America by the American Bus Association and it’s easy to see why with so many arts and crafts, children’s corner with fun games and inflatables, the best festival concessions vendors, gen-eral store, musicians jam tent and events that feature a huge carnival, beauty contest, classic car show, historic South Pittsburg tours, Lodge Manufacturing tours, pancake breakfast, 5K road race and church ser-vice.
Be sure to tour the Lodge Manufacturing Co. foundry, maker of Lodge Cast Iron cookware since 1896 and spin the giveaway wheel sponsored by Martha White, producer of high-quality flour and cornmeal since 1899 as they come together with the friendly local volunteers of South Pittsburg to showcase a wide variety of family friendly events, attrac-tions and of course, plates full of good ole cornbread.

Bring your stomach to the Annual National Cornbread Festival
The 20th Annual National Cornbread Festival promises to be a good time and include some great food.
Most of the corn in the U.S. (about 99% of all corn production) is field corn; it’s a much starchier cousin to sweet corn, which is what you see in the grocery store or at the farmer’s market, and it doesn’t pop like popcorn does (and despite how much salt and butter you use, it probably won’t taste as good as popcorn either). It is most commonly used to feed livestock, such as cows, pigs and chickens, but it has hundreds of other uses as well.

A southern staple, deep fried and delicious.
Ingredients: In one bowl, place dry mix: 2½ cups fine-ground cornmeal (white or yellow) ½ cup all-purpose flour 1 tbsp. baking powder ½ tbsp. sugar ½ tbsp. ground black pepper
½ tbsp. salt, ¾ tsp. baking soda ½ tsp. cayenne pepper
In another bowl, place wet mix: 3 eggs (lightly beaten) 1½ cups buttermilk ¾ cup chopped scallions
Directions:1 - Whisk wet and dry mixes together until the
batter is just combined. 2 - Let rest for 10 minutes. 3 - In a 6-quart stockpot or a mini electric fry
pot, heat oil to between 350ºF and 360ºF, keeping the oil at a steady temperature.
4 - Once the oil is hot enough, drop small scoops or rounded tablespoons of the batter into the oil in batches of eight. The cooking process is fast, about 60 to 90 seconds.
5 - As soon as the hush puppies start to float, use tongs to rotate (both sides should be crisp and light golden brown). It helps to put a pasta strainer on top of them at this point to keep them submerged.
6 - Use a slotted spoon to remove, and trans-fer to a clean brown bag to quickly drain. Serve steaming hot.
TIPS:• Use very fine ground cornmeal• Don’t beat the batter too much or it will get
rubbery• To cook properly, hush puppies should be
submerged in oil (about a three-inch depth ought to do it), so you need a pot with high sides.
• Unless allergies prevent it, peanut oil holds cooking heat well and it provides color.
• Working in batches of eight is the easiest, us-ing a small cookie scoop or rounded tablespoons to get the perfect size.

1861 The Civil War begins
The bloodiest four years in American history begin when Confederate shore batteries under General P.G.T. Beaure-gard open fire on Union-held Fort Sum-ter in South Carolina’s Charleston Bay. During the next 34 hours, 50 Confederate guns and mortars launched more than 4,000 rounds at the poorly supplied fort. On April 13, U.S. Major Robert Anderson surrendered the fort. Two days later, U.S. President Abraham Lincoln issued a proc-lamation calling for 75,000 volunteer sol-diers to quell the Southern “insurrection.”
As early as 1858, the ongoing conflict be-tween North and South over the issue of slavery had led Southern leadership to dis-cuss a unified separation from the United States. By 1860, the majority of the slave states were publicly threatening secession if the Republicans, the anti-slavery party, won the presidency. Following Republican Abraham Lincoln’s victory over the divid-ed Democratic Party in November 1860, South Carolina immediately initiated se-cession proceedings. On December 20, the South Carolina legislature passed the “Ordinance of Secession,” which declared that “the Union now subsisting between South Carolina and other states, under the name of the United States of America, is hereby dissolved.” After the declaration, South Carolina set about seizing forts, ar-senals, and other strategic locations with-in the state. Within six weeks, five more Southern states–Mississippi, Florida, Al-abama, Georgia, and Louisiana–had fol-lowed South Carolina’s lead.
In February 1861, delegates from those states convened to establish a unified gov-ernment. Jefferson Davis of Mississippi was subsequently elected the first presi-dent of the Confederate States of America. When Abraham Lincoln was inaugurated on March 4, 1861, a total of seven states (Texas had joined the pack) had seceded from the Union, and federal troops held only Fort Sumter in South Carolina, Fort Pickens off the Florida coast, and a hand-ful of minor outposts in the South. Four years after the Confederate attack on Fort Sumter, the Confederacy was defeated at the total cost of 620,000 Union and Con-federate soldiers dead.
