SAKEIntroduction

SAKEBrewing Process

1. Polishing RiceRice is milled down to at least 70% its original size.

2. Washing & SoakingPowder left from polishing is washed away and the rice is soaked to be steamed.

3. SteamingSteam is brought up from the bottom of a steaming vat, not boiled like table rice.

4. Koji Making (Aspergillus oryzae)Koji mold is sprinkled on steamed rice & yeast is added for the fermentation.

5. Main Mash (Moromi)Preparation and fermentation. Moromi has an important role in the production of an excellent quality of sake.

6. PressingSake from the fermentation is then pressed from the solid rice, yeast and koji mixtures.

7. FiltrationAfter the solid mixtures settle from pressing, a final filtration is done to extract the sake.

8. PasteurizationSake is then passed through a pipe with hot water to kill bacteria and deactivate enzymes.

9. Aging (Storage)Sake sits in maturing barrels for about 3 weeks to round out the flavor profile.

10. BottlingThe finished Sake is then bottled for your

enjoyment..

SAKEWith a history of over 2,000 years, sake is very much a part of Japanese culture and tradition. As the national

beverage of Japan it is consumed by every class in society, and is enjoyed at various events ranging from

private business dinners to public festivals and religious ceremonies. Almost every region in Japan has a

brewery which produces sake that is unique to that area, and the way sake is produced today still follows the

methods of the past.

4 Key ingredients in sake making

• WaterThe quality of water can affect the quality of sake.

Sake breweries are located in areas with excellent

sources of natural spring water.

Hard water gives a crisp sake (rich in minerals that

trigger vigorous, quick fermentation)

Soft water gives a soft, luscious sake (slower

fermentation process)

• RiceSake uses only the core starch of the rice. Sake rice is

different from table rice, it has a bigger central core

with a denser concentration of starch.

• Koji (Aspergillus Oryzae)Koji is a mold (or spore) that produces a variety of

enzymes while growing on steamed rice. Koji is

crucial for converting the starch of rice into sugar

during fermentation.

• YeastFungi that turns sugar into alcohol during

fermentation. Sake brewing yeast is similar to the yeast

used to brew wine and beer, but is

far more potent-producing an alcohol level of 20%.

Types of sake

SAKEDry & Sweet sake

A representation of the hydrometer is used to

measure density and flavor (Nihonshu- Do) of

sake. It is often printed on its label with the

values presented in a horizontal scale. Higher

numbers represent "dry" and lower numbers

represent "sweet".

Cold & Hot sake

Full-bodied, less aromatic sakes, like some bottles labeled junmai or honjozo are actually

best enjoyed warm and hot. lighter, more delicate sakes ginjo, daiginjo and unpasteurized

nama sake are best served at cold.

Sake Rice Polishing Ratio

Sake Rice grains are polished to get rid of protein and fat that attribute to off-flavors of sake, leaving the inner

center that is close to pure starch. Basically, the more rice is polished, the cleaner and lighter-bodied the sake

tends to become. Rice polishing ratio (Seimai-buai) measures the degree of rice polishing. For example, rice

polishing ratio of 70% means that the 70% of the original rice grain remains and the 30% has been polished

away. When rice polishing ratio is low (i.e. a large percentage of rice is polished away) like Dai-ginjo, rice grains

easily get cracked, and therefore it requires much more care, efforts and time to produce sake. It also tends to

be relatively expensive as there is lots of waste and only a small amount of sake can be produced. However,

that does not mean that sake with low rice polishing ratio (like Dai-ginjo) is than the one with high rice

polishing ratio. Sake with high polishing ratio has savory, rice-like flavors, becoming very popular these days.

Rice polishing ratio determines the classification of sake such as Daiginjo, Ginjo, etc. and is one of the factors

that determine the flavors and aromas of sake.
