Sy lin tc: vt liu c cung cp lin tc v s chuyn ng ca vt liu m qua bung sy cng xy ra lin tc. Phn loi theo s chuyn ng tng i gia dng kh v vt liu m: Loi thi qua b mt. Loi thi xuyn vung gc vi vt liu. 2.3.Nhn t nh hng n qu trnh sy chui Trong qu trnh sy chui qu xy ra mt lot bin i ha sinh, ha l, cu trc c hc v cc bin i bt li khc, lm nh hng ti cht lng sn phm. Nhng bin i c hc bao gm s bin dng, nt, cong queo, bin i xp ...S thay i h keo do pha rn (protein, tinh bt, ng,..) b bin tnh thuc v nhng bin ihal.Nhngbinihasinhtrongqutrnhsylnhngphnngto thnhmelanoidin,caramen,nhngphnngxyhavpolymehacchpcht polifenol, phn hy vitamin v bin i cht mu. Ngoi ra, m tng i ca chui, m cn bng .. nh hng trc tip n qu trnh sy. 2.4. Cng ngh sy chui 2.4.1 chnh ca chui nguyn liu Chuikhithuhiphigingha,lcthtchn.Tuynhinchuit chn th chui chn chm v khng ng lot.
