In thespotlightHong In Joo

Having joined only a year ago, In Joo now leads a small team in the Cake Studio. Majority of the cake and pastry designs were conceptualised by him. The 22-year-old graduated Le Cordon Bleu Korea with a degree in Patisserie in 2009. SeoulBiz sneaks in a few questions before the shy Daegu citizen escapes.

What made you decide to become a pâtissier?I was very close to my late grand-mother growing up. She was an ex-cellent baker… her passion for baking rubbed off on me. One of her dreams was to own a bakery. I guess I’m try-ing to fulfill that dream for her.

What are some of the difficulties you faced moving to Seoul?My accent for one. It took me a while to get used to speaking in the Seoul accent. I was initially studying medi-cine in Seoul but I didn’t like it. My grandmother was the one who made me realised I was better off studying culinary.

What is your favourite creation?I love making cupcakes, in particu-lar red velvet. Lately the studio has been getting a lot of requests for cake pops, which is another favourite of mine.
