But the most authentic waffles can only be tasted in Belgium. There are 2 kinds of waffles: one is the "Brussels waffle" or "Belgian waffle», which is square-shaped, thicker with bigger checks (normally there are 20 checks). Belgium is a veritable paradise for chocolate lov-ers. Black, white or milk chocolate, everyone can find the perfect match. You can find high-quality plain chocolate such as tablets, as well as filled chocolates, known as “pralines”, which are one of Belgium’s most successful exports.

Pralines have many different fillings, including chocolate ganache, caramel, chocolate mousse, nuts, candied fruits and biscuits, all covered in white, milk or dark chocolate. They have been delighting customers since the 1850s and today there are more than 400 different pralines, man-ufactured by all sorts of chocolatiers from small artisan workshops, to huge mechanised factories.

Most artisans still make and decorate their pra-lines by hand, thus giving each one a unique per-sonal touch.

The monument also features seven kilome-tres of underground galleries and boasts wonder-ful walks along its ramparts. PERfUmERY WORkShOP GUY DELfORGEUp in the Citadel, this centre of creativity is unique in northern Europe, and provides all visitors with an understanding of the different steps involved in producing a fine perfume. These perfumes are carefully crafted and matured deep in the cellars of the Citadel. This "light, sound and perfume" show is such that the outside world is rapidly forgotten. thE BELfRYJust over 20-metres high, the Belfry is a remark-able testimony to 14th-century military architec-ture. Equipped with a bell, the Belfry is also called the “Gate Bell”, as it was associated with the opening and closing of the city gates. In 1999, the Belfry was declared a UNESCO World Heritage of Humanity site (Free access).

PALACE Of thE PRINCE-BIShOPSThe first residence of the prince-bishops was built in the year 1000. The palace burned down and was rebuilt several times. The restoration was completed in the 18th century with the construc-tion of a new façade. The Neo-Gothic wing was added in the 19th century on the Notger Square. The palace has two courtyards and is surrounded by four galleries with Gothic vaults resting on 60 columns decorated with fantastic human figures and grotesque masques. This building currently hosts the law courts and is the seat of the provin-cial government.

LIèGE GUILLEmINS StAtIONThis high-speed train station was renovated in the beginning of 2000 and completed in 2009 by archi-tect Santiago Calatrava Valls who gave it its mod-ern and spectacular touch. The masterwork does not only connect numerous cities in Belgium, but also international high-speed lines to Cologne and Paris.

ChURCh Of St. BARthOLOmEWThe collegiate church of St. Bartholomew was founded between 1010 and 1015 outside the city walls. It boasts a characteristic Rheno-Mosan ar-chitectural style. The interior of the East wing is exceptional in its galleries and has partly recovered its original appearance.

In 1986, a group of young Belgians, all graduates from the Fashion Department of the Antwerp Academy, present their work in London for the British De-signer Show. English media instantly fall in love with them and start calling them “The Antwerp Six”, as a way to avoid pronouncing their tongue-twisting names. Walter Van Beirendonck, Dirk Bikkembergs, Marina Yee, Dirk Van Saene, Ann Demeulemeester and Dries Van Noten defined the style of the 1990s and continued their careers showing individually in Paris. Today, many of the Six settled their headquarters in Antwerp and con-tinue to live and work in the city. Located in the north of Flanders, Bruges emerges as a commercial city in the 12th centu-ry. Its historical centre is now a UNESCO World Heritage site. Churches, civil monuments and houses were built around its numerous canals, which gives the city a medieval feel. Known as the Venice of the North, Bruges is renowned to be the birthplace of Flemish painting and has a long history of lace making.
