住手續及週末休憩的最佳處所，大片落地窗的設

計，紅色系的沙發椅，坐臥其中，讓人飽覽陽明

山的四季風情，舒適的空間裡您可以點一份山嵐

特製中式養身餐點，或享用山嵐午茶點心盤，即

便是啜飲一杯咖啡或茶，我們竭誠歡迎您來此渡

過悠閒自在的美好時光。有位常客每次來陽明山

中國麗緻，都會坐在咖啡廳窗邊欣賞風景，但卻

總是坐不久，細心的服務同仁前往關心詢問後，

才明白客人的腰不適不耐久坐，自此後每當此位

常客前來，同仁皆會主動增加靠墊的擺設，讓客

人坐起來更加舒適，僅僅一個小舉動，卻讓客人

覺得體貼入心！

到了深夜，房客們皆安穩入睡之時，大夜班的櫃

檯才正要開始忙碌，同仁們需熟讀隔日即將入住

的賓客名單，一一確認訂房資訊，掌握每位貴賓

的需求後，安排適合的房間及預先做好客人們入

住的所有準備工作。當接到有特殊需求的客人來

電時，除了在顧客資料檔案裡加上特別註記外，

貴賓入住當日也會提醒飯店相關同仁需多加照顧

及關懷。

Near our hotel lobby is our Shan Lan café. It's a great

place to sit if you're waiting to check-in or to simply

take a rest. In this cozy place you can enjoy Chinese

cuisine, afternoon tea or a cup of coffee. It features large

floor to ceiling windows and plush red sofas to relax on

as you enjoy our expansive view of the lush Yangming

mountains. We welcome you to spend a leisurely and

beautiful time here.

One of our regular guests loves to sit by the window in

Shan Lan. We noticed, though, that he never seemed to

sit for a long time. So we asked why he always got up

so soon. He said it's because he has a bad back. So now

when he comes, our staff will give him extra cushions

so he can sit more comfortably. It's the many small

things like this that can make our guests feel cared for!

Late at night when the guests are sleeping, the night-shift staff reviews the list of guests checking in the next day

and confirm if there's any special requests, arrange appropriate rooms and have everything ready before guests

arrive. When guests have special requests, we don't just write it down, also notify the staff of all departments

related to that request so we can be sure that guest is comfortable.

Good service is about timing, attitude and knowing each guest's individual needs and preferences. It's about

廳，用一種低調奢華、法式優雅的姿態，展現出跨時代的經典魅力。而自2013年起，法籍主廚克萊門‧培睿霖

(Clement Pellerin)接任巴黎廳1930，更展現有別於以往的前衛活力，透過法式廚藝與創新概念的結合，顛覆既

有的傳統形象，打造台灣法式餐飲潮流指標！

出身法國諾曼地的主廚Clement，十分年輕時就確立了自己對於廚藝的熱愛，從廚藝學院的基礎料理技法開始，

邁入廣闊而豐富的法式餐飲世界，而分別於巴黎兩間侯布雄 (L'Atelier de Joël Robuchon) 米其林星級餐廳歷

練，也奠定他對料理的獨到美學及見解，其後他遠赴愛爾蘭、上海、曼谷，每次旅程中的一道風景或是香料，都

成為他創作料理時的靈感來源，他曾說：「品嚐我的料理，就如同體驗了我一部分的人生」，來台短短的3年時間

已創作超過300道原創菜式，藉由充滿劇場感的華麗料理，帶領賓客感受現代廚藝的迷人之處。

Paris 1930 of The Landis Taipei holds a special place in Taiwan's world of fine dining. Taiwan's first restaurant to bring in Michelin-starred chefs, we have been leading the way for more than 30 years. With its understated luxury and French elegance, entering Paris 1930 is like stepping into a different time – one of classic charm and beauty. Chef de Cuisine Clement Pellerin has overseen Paris 1930 since 2013. Combining classic French cooking techniques with a modern perspective, his innovative dishes help Paris 1930 raise the bar for French cuisine in Taiwan!

Born in Normandy, France, Chef Clement knew at a young age that he had a passion for food. He went to culinary school to build a foundation, then entered the world of French fine dining. In Paris, he worked at each of the Michelin-starred L'Atelier de Joël Robuchon restaurants, where he honed his skills and developed his own ideas about food. He also traveled through Ireland, Shanghai and Bangkok. The scenery and local flavors he experienced on those trips continues to inspire him today. "Tasting my food is like experiencing a part of my life," he says. In just three short years in Taiwan, he has created more than 300 original dishes that take diners on an exciting gastronomic journey through the world of modern cuisine.

Working with Chef Clement is the Paris 1930 team of highly talented, experienced, and well-trained chefs. Jill Fu, for example, is not only the first woman from Paris 1930 kitchen team, but also a young chef who competed with international elites. In 2014, she represented Taiwan in the International Jeunes Chefs Rôtisseurs Competition and won third place competing against top chefs from 20 different countries. This was the first time in the 37-year history of the competition that an Asian chef won a prize. In fact, every member of the Paris 1930 kitchen staff has the highest dedication to the culinary arts and diligently pays attention to details of every dish served.

At Paris 1930, Chef Clement and his team source the best ingredients from around the world. They especially seek to use high-quality goods grown here in Taiwan such as cocoa, pigeon, coffee and even wild ginger flower to make each dish an exquisite feast for the senses. Through both contrasting flavors and harmonious combinations of ingredients, the chef's draw from their own life experiences and avant-garde cooking ideas, to offer a gourmet feast at Paris 1930.

1930有史以來首位女廚師，更是充滿天份的台灣年輕廚師，2014年代表台灣參與法國美食協會主辦的世界年

輕廚師菁英賽 (International Jeunes Chefs Rôtisseurs Competition)，從20個國家的參賽者中脫穎而出，獲

全球第三名的殊榮，這也是該比賽舉辦37年來，首度由亞洲籍廚師獲得名次，而每位巴黎廳1930的師傅們，

無不投入無比熱情與專注在每一道料理的細節，讓每個晚上都能端出一道道令人難忘的傑出美饌！

In 2016, we completed two major projects at The Landis Taipei. For Tien Hsiang Lo, its kitchen has

been substantially remodeled to meet the highest international food safety standards. So you can

expect the best Hangzhou cuisine! We also designed and created Proust Lounge – a brand new

VIP lounge on the second floor of the hotel. Beautifully designed and artistically decorated, the

23 square meter parlor offers drinks, fresh fruit and other snacks. It's a great place to relax during

anytime of day, and in the evening our VIP travelers enjoy the place as their private saloon.

Remembering a golden past

The Landis Taipei is distinctly Art Deco.

Popular in the 1920s and 1930s, this French

aesthetic is at once extravagant and succinct;

florid and pithy; simple and elegant. Parts of

The Landis Taipei areas even named after this

era, such as Paris 1930 and the Matisse Suite.

The Proust Lounge is named after Marcel

Proust, one of the greatest writers in early

20th century France. Built at a cost of NT$1.0

million, the Proust Lounge keeps with the

Art Deco aesthetic. As you walk in, you

But it's also cozy and homey, making it a gorgeous

space to relax in.

Inside the lounge, you'll find interesting pieces

collected from around the world. Hardcover

editions of Proust's Remembrance of Things

Past, The Captive, and The Fugitive, as well as

beautifully detailed paintings of the writer at

different times of his life, making the lounge a sort

of Marcel Proust microcosm. Shiny metal on the

dark walls makes the paintings stand out, adding to

the atmosphere of elegance in this room.

Landis Hour: Start the evening with a drink

Every Tuesday and Thursday from 6:00 p.m. to

7:00 p.m. is the Landis Hour. Our VIP guests are

welcomed for a glass of wine or a drink from the

fully stocked bar in the Proust Lounge. Also, we

invite our cherished business travellers to enjoy this

European style of relaxation after work. It's a great

way to destress after a long day of work.

The Proust Lounge is open every day from 8:00 a.m.

to 10:00 p.m. We offer fine teas, coffee, snacks and

fresh fruit. Take advantage of our high-speed Wi-Fi

in a comfortable space, or sit back with a book or a

去年烏來璞石麗緻除了在館內舉辦一系列的聖誕活動外，特別在耶誕節期間舉辦「讓愛延續」募集活動，

於平安夜拜訪位於烏來山區的幼兒園，由璞石麗緻同仁打扮成聖誕老公公發送糖果及禮物給小朋友們。

此次活動募集的二手童話故事書、玩偶、玩具

及冬衣等，在平安夜當天發送給原鄉的學童，

孩子們在收到禮物時，倍感溫馨並留下難忘美

好的回憶。

舉辦此類公益活動，最擔心的就是無法獲得大

眾響應，但經由這次募集活動發現其實現在社

會沒有想像中的那麼冷漠，我們甚至還收到遠

從台中郵寄上來滿滿兩大箱，由全公司一起募

集的愛心物資，更收到匿名者送來一大袋小朋

友用的手套。

在台灣各地，或許是山上、海邊，遠至部落小

村，總有這麼些可愛的孩子，他們的資源不多，

但是他們懂得用心珍惜；他們的要求不多，我

們的到來，更可以讓他們興奮不已。

在發送禮物的時候，小朋友沒有直接看到聖誕

老公公是怎麼到來的，由於原住民小朋友都有

上教堂的習慣，常常聽著聖經的故事，真心認

為世界上真的有聖誕老公公，用著天真無邪的

語氣，問裝扮成聖誕老公公的同仁說：「聖誕

老公公，你是怎麼來的呢？是坐雪橇嗎？麋鹿

都是你的小幫手嗎？」如此純樸可愛的提問，

聽在心裡暖暖的，覺得所有一切的辛苦都值得

了，山路再怎麼崎嶇難走，我們決定每年都要

來當小朋友的聖誕老公公，送來希望，帶來愛

與幸福。

因有社會大眾的愛心，成就了這次募集活動，

烏來璞石麗緻最終的目標是想在人情越漸淡薄

的社會裡，培養向善的心，回饋社會，將愛的

慈善力量散播到更需要的地方，傳遞更多關

懷，讓愛永不止息！

The Pause Landis Wulai has always been

committed to giving back to the community. Our

philosophy is "The community supports us, so

we give back to the community." At the end of the

year, we encourage those who can to share their

good fortune with the schoolchildren of Wulai's

local villages.

Last December, The Pause Landis held some fun

Christmas events in the hotel. But even more

exciting was our "Spreading the Love" charity

event. We collected second-hand children's books,

dolls, toys, winter clothes and other donations.

Then on Christmas Eve, Pause Landis staff dressed

up as Santa Clause and visited the kindergartens

in Wulai to deliver candy and gifts to the children,

giving them an unforgettable Christmas Eve.

Organizing such charity events, there's always

the worry of a poor response. But the response

we had was great. Our staff donated many things

and an anonymous person donated a large bag of

children's gloves. We also received two large boxes

of toys from someone in Taichung. The success of

this fundraising activity shows that the people of

Taiwan do care about helping those children in

need.

Taiwan has many needy children in its mountain

and seaside villages. They cherish their limited

resources and have few needs. So it only takes very

little from us to make a big impact on their lives.

Most aboriginal children go to church and they

know the Bible stories well. They also really do

believe in Santa. So when we delivered the presents

to the kindergartens in Wulai, they wanted to know

how Santa had arrived. They asked "Santa, how

did you get here? Did you take a snow sled? Are

the reindeers really your little helpers?" Hearing

the sincerity in their voices and feeling the purity

of their hearts made all of our hard work worth

it. And we decided right then that every year we

would help Santa bring gifts to the children.

This charity event was only successful thanks to the

generosity of the community. Though our society

may seem to be self-centered, the Pause Landis

Wulai would like to cultivate a spirit of giving

and caring, and facilitate the giving of resources to

those most in need. Together, let's keep spreading

the love!

依產地與風味來區分，原味茶部份以產自

印度的大吉嶺紅茶及阿薩姆紅茶、斯里蘭

卡的錫蘭高地紅茶為首選。風味茶部分，

具佛手柑果香的伯爵茶與玫瑰優雅香氣的

花果茶也相當推薦，建議先品嚐原味茶再

品嚐風味茶，並可依個人喜好加入檸檬薄

片或加鮮奶調製成奶茶來享用。

Some teas are known for their region.

From India you have Darjeeling black tea

and Assam black tea. From Sri Lanka

comes Ceylon premium black tea. Also

common is Earl Grey, which is a black

tea flavored with bergamot. Flower tea

made with rose buds is also popular.

Start with a basic regional tea then move

on to flavored teas. Feel free to add a

slice of lemon or a splash of milk if you

like.

正統的英式下午茶點心為瓷盤裝的三層點

心，三層架中的點心從下而上分別為：手工

三明治、英式鬆餅 (Scone)、小蛋糕及水果

塔。依照味覺清淡到濃厚由下而上，由鹹

而甜來品嚐，從鹹的三明治開始，以至越

來越甜的鬆餅及蛋糕甜點。可以直接用手

取用，但須注意的是盤子中每次只能有一

樣點心。

Proper English afternoon tea includes

snacks on three tiers of porcelain plates.

Sandwiches are on the bottom, English

scones are in the middle, and small cakes

and fruit tarts are on the top. Moving from

light and savory to rich and sweet, start

with the sandwiches and move on to the

cakes. Feel free to pick the food up with

your hands, but it’s impolite to have more

than one item on your plate at a time!

Three tiers of delicious treats can be a bit

heavy on the calories. We recommend

a light and fluffy mousse made of milk,

cream, sugar and seasonal fruits. Gelatin

gives a mousse the rich mouth feel

of a cheesecake but without the extra

calories. Sponge cakes are relatively low

in fat, but it’s hard to eat just one!

烏來璞石麗緻的水硯茶屋點心行政主廚特別示範「焦糖烤布蕾」以及「咖哩燻雞鬆餅」兩道點心，分別以甜鹹

The British tradition of afternoon tea originated in the Victorian era, when the upper class would eat a

big breakfast, a light lunch, and then a large dinner late at night. Early in the 19th century, it is said that

Anna Maria Stanhope, known as the Seventh Duchess of Bedford, would get hungry between lunch and

dinner. So she would have her servants prepare tea and snacks. She began inviting friends to join her, and

eventually this sort of small gathering caught on among British nobility.

In our fast-paced modern world, many people appreciate the small pleasure of sitting down at 3:00 in the

afternoon for a cup of tea or coffee and a light snack. Try the afternoon tea set at Inkstone Tea House in

先將蛋黃、砂糖與威士忌放入大碗

中混合攪拌備用。

Place the egg yolks, sugar and whiskey in a large mixing bowl. Mix thoroughly and set aside.

2. 在鍋內倒入鮮奶油及香草精，以小火慢慢煮至稍微

溫熱，不用煮到滾沸。將微溫的鮮奶油緩緩倒入步

驟 1 內，一邊加入一邊攪拌至均勻後用篩子進行過

濾。

Pour the cream and vanilla extract in a medium size pot, then slowly cook until warm. Do not boil. Once warmed, slowly pour the cream into the first bowl and stir until completely mixed with the egg yolks and sugar.

過篩後的混合液倒入模具容器裡，於烤盤內加入熱水，再將布蕾

放進烤箱以攝氏 150 度烤 50 分鐘即可。出爐的布蕾放涼後包上

保鮮膜，放置冰箱冷藏約 4 個小時待完全冷卻，或可冷藏一夜。

Strain the mixture and pour into the mold container. Add hot water to the baking tray. Place in the oven and bake for 50 minutes at 150˚C. Leave to cool. Once cooled, cover with clear wrap and put into the refrigerator for at least four hours or overnight

銓與烏來璞石的行政主廚賴淑芳師傅以此為發想共同研發，以咖哩作

為主軸的「咖哩燻雞鹹鬆餅」，為鬆餅做出口感上的衝擊感。行政主廚在鬆餅的

麵糊裡加入了以咖哩粉一起拌炒後的紅蘿蔔丁及高麗菜丁，增添口感上的豐富

度，讓鬆餅不再只有甜的口味，口味獨特的鹹鬆餅配上每天現做的咖哩口味燻

雞一起享用，不單單只能作為下午茶，食量小的女孩們更能作為一份正餐，既

Most people like to eat waffles, but their sweetness level varies. So executive chefs Rex Huang from The Landis Taichung and Echooo Lai from Pause Landis Wulai jointly developed a new dish: Savory Smoked Chicken Curry Waffles. By adding curry powder, diced carrots and chopped cabbage to the batter, then topping the waffles with a smoked chicken curry, they created a balanced version of the waffle that isn't cloyingly sweet. This dish is great with afternoon tea or as a light meal on its own.

烏來是臺灣北部著名的山地鄉，位於水源保護區，以溫

泉、老街、瀑布等聞名，此處兩側山峰高聳，溪流蜿蜒

而過，形成峻秀的山水奇景。相傳「烏來」地名一詞，

源自於原住民泰雅族用語「Ulay」，意思是「冒煙的熱

水」，原住民利用南勢溪兩岸湧出溫泉之河床為其天然

洗澡地，故烏來溫泉從發現至今至少已有三百年的歷

史。烏來溫泉水的泉質屬中性碳酸氫鈉泉，又稱美人

湯，有養顏美容、改善腸胃疾病的功效讓不少愛美的

女生慕名而來，感受泡完湯後滑溜細緻的肌膚觸感。

或許烏來在大多數人心中是個老景點，不過正因它夠

「老」，魅力才如此十足且耐人尋味，充滿原住民風情的

老街與美食，還有自日治時代起即有「雲來之瀧」美名

的烏來瀑布，自然與人文的美好在這裡交錯展現，漫步

在山林老街中，聆聽瀑布的呢喃，彷彿進入世外桃源、

Wulai is a famous town and protected water source in the mountains of northern Taiwan. It is famous for its old streets, natural hot springs, and gorgeous waterfalls. Rivers and streams wind their way down towering mountains, resulting in beautiful natural scenery. The name Wulai comes from the Atayal aboriginal name Ulay, which means "steaming hot water."

Wulai and its hot springs were discovered at least 300 years ago. The natural hot spring water in Wulai is odorless and filled with sodium bicarbonate. Also known as "beauty baths", Wulai's hot springs are said to nourish the skin and improve gastrointestinal disorders. Girls young and old come to make their skin smooth and delicate. In fact, the indigenous people use the riverbeds of the Nanshi River as their natural bathing area.

A lot of people think of Wulai as an old attraction. But its old age is precisely what makes it so charming and interesting. During the time of Japanese rule it was known primarily as a place of magical waterfalls and natural beauty. Walk in the mountains on Wulai Old Street, listening to the sounds of the waterfall. This unique paradise on earth is great for tourism and leisure. A storied town, Wulai is brimming with interesting aboriginal foods and handicrafts.

Wulai Old StreetThe town center is known as Wulai Old Street, the shopping district on Pubu Road and Huanshan Road. Walk along the stone-paved roads and take your pick of a multitude of local goods. You can try mountain boar roasted over coals, hot spring eggs, seasoned rice cooked in bamboo leaves or in a hollowed bamboo stick, millet mochi and other Aboriginal dishes unique to Wulai. There are also many unique Atayal traditional handicrafts waiting for you to discover.

The Wulai Atayal MuseumLearn more about the traditional tools and religious beliefs of Wulai's aboriginals at The Wulai Atayal Museum. Photographs, dioramas, models and more tell their story, culture, traditions, religious beliefs and festivals. The museum preserves and displays these items to educate visitors and improve people's understanding and respect for Wulai's aboriginals.

Mei Lu Workshop Weaving Experience

On the first floor of the The Wulai Atayal Museum is the Mei Lu Workshop. Here you can learn Atayal weaving and glass bead making in a DIY class taught by respected Atayal craftswoman Mei Lu Shen. She'll teach you the principles and techniques of traditional Atayal weaving, then help you weave a tapestry of your own design.
