Peking Duck (北京烤鸭) is a dish from Beijing that has been prepared

since the imperial era. The meat is characterized by its thin, crisp skin, with authentic versions of the dish serving mostly the skin and little meat, sliced in front of the diners by the cook.

Char Siu (叉燒) literally means "fork roasted” after the traditional cooking method for the dish: long strips of seasoned boneless pork are skewered with long forks and placed in a covered oven or over a fire.

Tofu (豆腐) or bean curd, is a food prepared by coagulating soy milk and then pressing the resulting curds into solid white blocks of varying softness.

Chinese Lap Cheong Sausage (腊肠) is a dried, hard sausage usually made from pork. It is smoked, sweetened, and seasoned with rose water, rice wine and soy sauce.

Longjing Tea (龍井茶) is a variety of pan-roasted green tea from the area of Longjing Village in Hangzhou. It is produced mostly by hand and renowned for its high quality, earning it the China Famous Tea title.

Shepherd’s Purse (荠菜) is a plant which bears purse like triangular flat fruits. It is commonly used in food in Shanghai and the surrounding Jiangnan region, where it is stir -fried with rice cakes and other ingredients or as part of the filling in wontons.

Lotus Leaf (荷叶) is used as a wrap for steaming rice and sticky rice and other steamed dishes in Chinese cuisine. It comes from the young leaves of lotus which are heat-treated (either by steaming or roasting) before being dried .

Taro corms (香芋) (stems) have a light purple colour and are roasted, baked or boiled. The natural sugars give a sweet, nutty flavour. The starch is easily digestible, and since the grains are fine and small it is often used for baby food.

Red Bean (红豆) is a bean common in East Asian is commonly found in Chinese dessert dishes. It is sweetened before eating, often boiled with sugar, and served as by itself or as a paste on desserts.

Sago (西米) is a starch extracted from the spongy centre of various tropical palm stems. Sago starch can be baked or mixed with boiling water to form a paste. It is also used in making noodles and white bread.

Rice Cake (年糕) is a carbohydrate made from glutinous rice flour that is pounded or ground into a paste and, depending on the variety, may simply be moulded into shape or cooked again to settle the ingredient. Japanese Mochi are a type of rice cake.
