What to give your chi ldren for breakfast

Breakfast is the most important meal of the day. It can determine how your children will behave and function for the rest of the day. The most common foods kids eat for breakfast are cereal and bread. These food choices are problematic, as they are high in carbohydrates.

Though healthy kids do not need to be on alow-carbdiet,itisverybeneficialtogivekids a high protein breakfast, mainly because the school meals they will be eating later on tend to be very high in carbohydrates with very little healthy protein.

Typical school meals are based on bread, pasta, potatoes, corn, rice and compote. These are foods that are very rich in carbohydrate content. This creates a very unbalanced diet and a lot of children barely eat any protein. Because of that, giving children a high protein breakfast does not put them on a low carb diet, as they will get their fair share of carbohydrates later in the day.

It is important to make sure children get enough protein as it is essential for proper

The best protein choice for breakfast is by far eggs. Be creative. You can prepare the eggs in many different ways. If your kids insist on eating it with bread, try offering them some vegetables instead, like peppers.At first itmay be hard for your kids to change their breakfast eating habits but they will get used to it.

Eating tuna on a regular basis is not a good idea because of its high mercury content. Try pink salmon instead.

Serve these muffins as a quick, on-the-go breakfast, a lunchbox treat or an after school snack. There's so much flavor packed into these little snacks that your kids won't even know that they are eating something with a vegetable in them!

What You Need:3 cups all-purpose flour

1 tsp. baking powder

1 tsp. baking soda

1 1/2 tsp. cinnamon

2 cups sugar

4 eggs

1 tsp. vanilla

1 cup oil

2 cups finely grated zucchini

1/2 cup raisins, chopped into small pieces

1/2 cup chopped pecans or walnuts (optional)

1/2 cup mini chocolate chips (optional)

What You Do:Preheat oven to 350 degrees F. Lightly coat

mini muffin tins or use mini tin liners.

Sift the first 5 ingredients into a medium-sized bowl and set aside.

In another bowl, add sugar, eggs & vanilla. Beat together with an electric mixer until blended. Slowly add oil and continue beating until thoroughly blended. Stir in the grated zucchini and chopped raisins. Stir in dry ingredients and mix until well blended.

At this point,divide the batter into two bowls. In one bowl stir in 1/2 cup of chopped pecans and in the other bowl stir in 1/2 cup mini chocolate chips. These are optional ingredients and could easily be left out.

Fill muffin pans 3/4 full. It is important not to fill them any higher than that because the muffins will rise above the rim of each cup and stick to the pan. Bake for 10-12 minutes or until the muffins are lightly browned.

Store in a sealed container up to 3 days. These muffins freeze very well. You can thaw them on the counter or warm them in the microwave to eat.
