1. Cut the chicken legs to separate the thighs and drumsticks.  Rinse  the  chicken  and  pat  dry  with paper towels. Remove as much fat as possible.

2. Combine the ¹⁄² cup flour, 1 teaspoon salt, and ¹⁄4 teaspoon pepper in a paper or plastic bag. Add the  chicken,  a piece  at  a  time,  and  shake  to  coat with  the  flour.  Set  aside  the  coated  pieces  on  a large plate.

3. Melt the butter and shortening in a large skillet  over medium-high heat. Use tongs to add a single layer of chicken pieces; do not crowd. Cook until browned all over, about 5 minutes per side. Trans-fer the chicken to a shallow roasting pan or baking dish. Repeat until all the pieces are browned.

4. Preheat the oven to 350°F.

5. Pour off all but 3  tablespoons of  fat  from the skillet. Stir in 3 tablespoons flour to make a paste. Continue  to  cook,  stirring,  until  the  paste  is browned and thickened, about 5 minutes. Slowly add in the broth, stirring until smooth and thick. Season to taste with salt and pepper.

6. Pour the sauce over  the chicken pieces,  tuck a bay  leaf  into  the  pan,  cover  the  pan  tightly  with aluminum foil, and bake for 1 hour. 

7. Remove the bay leaf and serve hot.

Chicken FricasseeThe name “chicken fricassee” can be applied to any stewed

chicken dish. Some recipes call for browning the chicken first, while some skip that step. Some call for mushrooms, others for

an assortment of vegetables. A Cuban-style or Caribbean-style chicken fricassee may have raisins, brown sugar, and

vinegar in the gravy. This basic version is widely made.

Baked Barbecued Chicken

Nothing beats the taste of chicken barbecued on a grill, but sometimes the weather doesn’t cooperate. This recipe

provides a tasty rainy-day alternative, and homemade barbecue sauce will make it taste even better.

1¹⁄2 cups barbecue sauce (page 254)3 to 4 pounds chicken parts

1. Preheat the oven to 350°F. 

2. Cut the chicken legs to separate the thighs and drumsticks.  Brush  the  chicken  with  about  two-thirds  of  the  sauce,  brushing  both  sides  of  each piece.  Arrange  the  chicken  in  a  shallow  roast-ing pan or baking dish, skin side down. Bake for  20 minutes.

3. Turn the chicken, skin side up. Brush with the remaining sauce. Bake for another 20 to 30 min-utes, until the chicken is tender and the juices run clear when pierced with a fork.

4. To  crisp  and  color  the  skin,  run  the  chicken under the broiler for about 5 minutes. Serve hot.

Chicken and Dumplings Dumplings are very common throughout Europe and

undoubtedly came to America with the earliest colonists. The dough is steamed rather than baked. Dumplings are

an inexpensive way to extend a soup or stew.

Chicken:3 to 4 pounds chicken parts8 cups water3 medium carrots, diced 3 medium celery ribs, diced 1 medium onion, diced 1 teaspoon dried thyme1 teaspoon salt, plus more to taste¹⁄4 teaspoon black pepper

Dumplings:1 cup all-purpose flour 2 teaspoons baking powder¹⁄2 teaspoon salt

2 tablespoons butter, softened1 large egg, beaten¹⁄2 cup milk

1. To make the chicken, cover the chicken with the water  in  a  large  pot. Bring  to  a  boil,  cover,  and simmer  for  1¹⁄²  to  2  hours,  until  the  chicken  is completely cooked. 

2. Strain  and  save  the  broth  and  let  the  chicken cool. 

3. Remove the chicken meat from the bones. Dis-card  the  skin  and  bones,  and  cut  the meat  into bite-size pieces. Set aside. Skim the chicken fat off the surface of the broth and discard. 

4. To make the dumplings, mix the flour, baking powder, and salt in a large bowl. Cut in the but-ter with a fork until well blended. Mix the egg and milk  together  in  a  small  bowl.  Add  to  the  flour mixture  and  knead  for  a  few  seconds,  until  just mixed. If the dough is sticky, add more flour. 

5. Heat  the  broth  to  a  simmer  in  the  large  pot. Add  the  carrots,  celery,  onion,  thyme,  salt,  and pepper  and  cook  for  5  minutes.  With  a  large spoon, pull the dumpling dough apart into rough-shaped balls  the size of a walnut (do not press  to form).  Carefully  drop  the  dumplings  into  the broth. Cover and reduce the heat so the broth is barely simmering. Cook for 7 to 8 minutes, until the dumplings are cooked through. Overcooking will turn the dumplings to mush.

6. Place  the  cooked  chicken  in  a  large  bowl  and ladle  the  hot  broth,  vegetables,  and  dumplings over the top. Serve immediately. 

Smothered Southern Chicken

Many recipes start with fried chicken that is baked in a creamed (flour-thickened) gravy. These recipes were developed to

tenderize tough old stewing hens that had lived past the age of productive egg laying. Mashed potatoes and biscuits are both

traditional accompaniments.
