1.1 c im thin nhin

TNG QUAN VNGUYN LIU V SN PHM2.1. c im ca cy lc
Lc thuc h u nhng c th x p vo loi cy c v c ng l loi cy ngn

Kh du lc sau khi p l ngun nguyn liu lm thc n cho con ngi nh
lm bt thc phm, sn xut nc chm v lm thc n cho gia sc.

CHNG III : CHN V THUYT MINH QUY
TRNH CNG NGH3.1. Chn quy trnh cng ngh.
Quy trnh cng nghl y u tquan tr ng quyt nh n cht lng sn phm,
hiu qukinh t , chi ph u t, gi thnh sn phm. Trong sn xut du lc tinh ch
quy trnh cng nghph i m bo nhng yu cu sau:
+ Tch du c nhiu nht
+ Du v kh du c cht lng tt nht.
+ Hiu qukinh t cao nh t.
Trong cng nghkhai thc d u c hai phng php chy u l phng php p
v phng php trch ly. Mi phng php u c nhng u v nhc im nht
nh so vi phng php p th phng php trch ly c nhiu u im hn v:
+ Tch c trit l ng du c trong nguyn liu, hm lng du c

3.2. Thuyt minh quy trnh cng ngh.
1. Nguyn liu.
Nguyn liu c thu mua tnhi u vng khc nhau thuc cc tnh min Trung.
Ring vng xa, nguyn li u c vn chuyn bng t hoc bng tu la cn cc
vng gn c ththu mua t i nh my.
2. Thu nhn.
Nguyn liu sau khi a v nh my c tin hnh cn v phn loi tng l
hng.Do nguyn liu thu mua t nhi u ni khc nhau nn cht lng, tnh cht,
trng thi ca khi ht khc nhau, nn cn phi phn loi nguyn liu v tk t qu
phn loi c m t phng php bo qun, sn xut ring cho tng l hng. V vy
nhn vin phi c trnh chuyn mn. Nguyn li u thu mua cn phi kh, sch
khng bm c mt, hh ng. Ti ni thu mua phi b tr cn t ng cn l ng
nguyn liu nhp vo nh my.
3. Lm sch.
Mc ch: Tch cc tp cht c hi ra khi lc trc khi a vo sn xut.
Nhng tp cht thuc nhm v c, t, . Khng ch lm b n sn phm m cngy hh ng bo mn my trong qu trnh chbi n. Tp cht hu c, rc... lm tng
m, tng vi sinh vt hot ng. V vy lm sch ht l mt yu cu rt quan trng
trong bo qun ht.

4. Bo qun.
Lc sau khi kh mt phn em i sn xut ngay phn cn li a vo bo
qun. Nhim v quan tr ng trong bo qun l gign ch t lng vn c ca ht, hn
chcc qu trnh h h ng xy ra. Lc a vo bo qun phi c m t6 7%,
nhit trong kho b o qun khng qu 2527 oC.
Trong qu trnh bo qun phi thng xuyn theo di kim tra k p thi xl
cc sc x y ra, ngn chn , hn chk p thi mc, mt. Kho bo qun c sc cha
