This recipe is my secret weapon in trying to get my kids to eat veggies. They dont even know there is zucchini in these muffins; I tell them theyre eating apple!
This recipe is from our Great Granny Betty. I have fond childhood memories of her serving these jam tarts when my family would converge on a Saturday for morning tea. Now when my children visit, she makes sure she has a few on hand.
My son is gluten intolerant and this is a fantastic recipe which means that the whole family can enjoy the same meal. Plus it tastes amazing!
