Captivate allows you to create application simulations and PowerPoint presentations with interactive capabilities such as branching scenarios, and quizzes.

Camtasia records video and audio from computer screens and cameras, and imports media (video and audio) to edit and create video and audio files.

They both use features to highlight the action, add interactivity, quizzing, and include accessibility.
