Step 1

• After confirm the order with the guest, go to the Infrasys to order the wine. Make sure the ordered wine is correct.

• 同客人确认过所点的杯卖葡萄酒后,到 INFRASYS 处将此酒输入电脑,仔细确认所点的酒是正确的。

Step 2

• Go to the bar counter to pick up the wine glasses.

• Prepare correct number of wine glasses according to the number of the guest who order the wine.

• Use white wine glass for white wine.

• Use red wine glass for red wine• Make sure glasses are clean, polis

hed and not chipped.• Cafe Zen ( Do not use coaster)• Lobby lounge ( use coaster for all

the wines and Champagne)

Step 3

• Use the service tray to deliver the glasses to the table first.

• Never carry glasses by hand.• When setting up the glasses,

always hold it by the stem or as close to the base as possible.

• 使用托盘将酒杯放在客人餐桌上。• 不要用手直接运送酒杯。• 把酒杯放在餐桌上时,要拿杯柄。

Step 4

• Collect bottle from bartender, ensure the label is not torn or dirty.

• Check if that bottle is the correct order according to name, vintage, etc.

• Open the wine at the bar counter if it is a new bottle.

• 从吧员处取出葡萄酒 ,确保酒标不是脏的或是损坏的 .• 检查此酒是否是正确的项目,检查名字,年份等。• 如果是未开瓶的酒,请先在吧台打开,不要在客人面前开瓶。

Step Step 55

• Use a folded service napkin when carrying the wine with both hands, Use your right hand to hold the neck of the bottle, and left hand to hold the bottom of the bottle.

• Walk gently to the guest table.

• 用一个折好的葡萄酒服务巾托着酒瓶体,用右手握住瓶颈,用左手握住瓶底。• 优雅地走向客人的餐桌。

• Step right foot forward toward the right side of the host/hostess, then facing the host, bend slightly forward.

• Show the bottle label to the host/hostess. • 站在客人的右手边,右脚在前。稍稍弯腰,面向客人,向客人展示酒标,保持微笑,自然大方。

• Say to host/hostess:"Excuse me Mr. X/Ms. X or Sir / Madam, this is----" state the vintage (if applicable), company name, then grape variety or style.

• E.g: "Excuse me Sir/Madam, this is 1982 Robert Mondavi Cabernet Sauvignon. Is that correct?”

• 告知客人:“ X 先生 /X 小姐 , 这瓶是您点的 1982 年份的罗伯特蒙大为加本力苏维翁红,”(说出年份,酒庄名,及葡萄品种)

• Upon guest approval, then start to serve the wine.

• Remember to serve wine from guest’s right hand side.

• Hold the bottle by the bottom, make sure the label is facing the guest.

• Invite the guest for tasting by pour small amount of wine into the host’s glass.

• Say: “ Mr./Ms. XX, Please have a try!”

• 客人确认 , 准备服务。• 确保是从客人的右边开始服务。• 握住瓶底,确保酒标朝着客人。• 请客人试酒 , 倒一适量的酒到主人的酒杯。• 说:“ XX 先生 / 小姐,请您试酒!”

• While the guest is tasting the wine, stay on guest right hand side and show the label to the guest.

• Make sure the label is visible.

• 当客人在试酒时,站在客人的右手边,展示酒标,• 确保酒标是在客人的视线范围内的。

• After you got approval from the guest, then start to serve the wine.• Each glass should be 150ml ( 20% of a 750ml wine bottle ).• Keep wine label facing the guest while pouring the wine.• Bottle should not touch the rim of the glass while pouring.• Turn the bottle after pouring to avoid dropping.

• 当获得主人(或试酒人)的允许后,开始服务葡萄酒。• 每杯酒的正确的服务量是 150 毫升(一瓶 750 毫升装的葡萄酒的百分之二十)。• 当倒酒的时候酒标对着客人。• 倒酒的时候酒瓶不能碰到杯子的边缘。• 当倒酒结束时旋转一下瓶口,以防止酒滴滴在客人的桌面上。

Step 11• For Wine by glass refill order: • First refill is poured in the same glass, and glass is changed for second refill

ther guests at the table are offered the choice of a fresh glass.2. when a different brand new bottle of wine is ordered, all the guests have to have a

new glass.• -QS FB3.3.5(S)14-.• 杯卖酒:• 第一次续杯不必更换酒杯,第二次续杯要更换酒杯。• 瓶装酒:1. 当客人试一支新开的同一款酒时,一定要用一个新的酒杯去试酒,同时需要去问在座的其它客人是否需要更换酒杯。2. 当客人享受一支新开的不同款酒时,在座的所有客人均要更换新的酒杯。
