Les presentamos la nueva edición de la Guía Gastronómica de Alicante 2013. Una guía que se ha convertido ya en un
referente de la excelencia gastronómica alicantina. En esta publicación de más de 20.000 ejemplares de tirada, los amantes de la buena mesa podrán disfrutar de la gran va-riedad y excelentes productos de nuestra tierra, exponen-tes de la afamada dieta mediterránea y que se sitúa como un referente culinario a nivel nacional e internacional. No pueden faltar, los mejores pescados y mariscos, salazones, arroces únicos cocinados de muy diferentes formas: seco, caldoso, meloso…, las verduras y frutas más frescas y sa-brosas, especias, vinos y una excelente repostería.
Hemos seleccionado a los mejores restaurantes que des-tacan tanto por su cocina tradicional como en la llamada
cocina de autor o de vanguardia, y las más prestigiosas empresas y produc-tos gourmet que con el suministro de sus materias primas han llevado a la restauración alicantina a lo más alto.
Queremos agradecer la colaboración del maestro Quique Dacosta, conside-rado uno de los mejores cocineros del mundo y que recientemente ha conse-guido las tres estrellas en la Guía Michelín 2013, siendo el único restaurante español fuera del Pais Vasco y Cataluña que lo consigue.

We are pleased to present the new 2013 edition of the Gastronomic Guide of Alicante. This guide has become
a benchmark for gastronomic excellence in Alicante. This publication of more than 20000 copies in circulation allows lovers of good food to enjoy the large variety and quality products that our region has to offer. These products be-ing examples of the renowned Mediterranean diet, making it both a national and international culinary standard. The best fish and seafood, salted meats and fish, unique rice dishes cooked in very different ways: over a stove, in the oven or with a soup…, fresh and tasty fruit and vegetables, spice, wines and excellent confectionery all form part of this.
We’ve selected the best restaurants that stand out for their traditional, signature or nouvelle cuisine. We’ve also chosen the most prestigious companies and gourmet products that due to their supply of raw materials have moved the Alican-tinian catering trade to the highest level.
We would like to specially thank Quique Dacosta for his collaboration, considered as one of best chefs in the world recently being awarded 3 stars in the 2013 Michelin Guide. His restaurant is the only Spanish restaurant with this award outside of the Basque Country and Catalunya.

EL LUGAR: Este es un territorio muy especial.
Denia a 75 kilómetros a la redonda ,desde el olivo que preside la entrada de mi restaurante, se abre una espiral mágica que alberga un universo gastronómico que cualquier cocinero del mundo desearía tener.
Esta es mi gran suerte como cocinero. El territorio en el que vivo, el legado gastronómico que he here-dado, la despensa natural, los campos de cultivos y frutales, los parques natu-rales, la profesionalidad de los artesanos, agricultores, pescadores y ganaderos, recolectores...
SUS GENTES: La forma de vivir de las gentes, y un cri-sol de culturas que se han fundido en una sola llama-da Mediterráneo, ha dado
paso a expresiones plurales y amplias que, como consecución de la apertura mental del pueblo, ha creado una gastronomía que además de todo ba-gaje y tradición comentado anteriormente, se ex-presa con innovación, modernidad e incluso con Vanguardia.
TALENTO: Un valor tangible es el talento de los pro-fesionales de la gastronomía en esta tierra. No es necesario pensar en los más conocidos y reputados chefs, pasteleros o panaderos, para saber que en cada fogón hay un hombre o una mujer entregada a la causa y a la expresión artesanal y Artística de la gastronomía de esta tierra y mar.
El momento es único y a la vez crucial. El talen-to aparece muchas veces y sin una aparente cau-sa. En este momento se da una hornada de chefs pueden liderar las gastronomía española en los próximos años. Jóvenes, apasionados, emprende-dores y soñadores. También realistas y analistas. Y en la figura de Paco Torreblanca, todos podemos mirarnos. Idealizar objetivos. Ver que como él ha hecho, nosotros desde la excelencia podemos al
menos intentar llegar a la cima de aquello que nos propongamos.
FORMACIÓN: Hemos sido capaces de construir cen-tros de formación para que el prestigio del sector sea latente y patente. Quedará como referencia en Europa los centros de desarrollo turístico, distribuí-dos por toda la comunidad; o el invatur como cen-tró de I+D+i de todo lo relacionado con el turismo.
TURISMO: hemos llegado a la cuestión… el turis-mo. Principal industria de esta tierra. Creo firme-mente en que solo desde la excelencia tenemos una oportunidad más. Hay muchas formas de hacer excelencia, pero la ésta solo se puede hacer de una manera. En la sardina o en la lubina, en el guisante o el perejil, en la gamba o la galera, en el atún rojo o la caballa, en el vino o la uva de mesa, en el aceite de oliva virgen extra o en el turrón… en el servicio y la profesionalidad… sólo desde la excelencia, esta tierra podrá conseguir en el futuro lo que todos tenemos en mente, lo que perseguimos, por lo que trabajamos. Somos una tierra con gentes que podemos conseguir cosas muy importantes. Nos
esperan años trascendentales… Trabajaremos en ellos con el tesón y la creencia necesaria. Apoyé-monos unos en los otros.
La gastronomía de aquí la aprendí en los bares, los restaurantes, las arrocerias, las tabernas y los chiringuitos. También en alguna que otra casa par-ticular, donde guisanderos y guisanderos de lujo me enseñaban, y enseñan a cocinar como siempre se guisó en este lugar. Sin formación académica gastronómicamente hablando, ya sabéis soy auto-didacta, el conocimiento del terreno si eres coci-nero has de aprenderlo en la calle...en las cocinas, en las barras, entre viñas y botellas de vino. Con curiosidad y ganas de vivir una tierra está, que nos da más de lo que nunca podremos devolverla.
Vivo y cocino aquí, sin haberlo decidido, pero si tuviera que elegir, seguro pediría vivir y cocinar en este lugar.

THE LOCATION: This is a very special setting.
The area of Denia and its surroundings are approxi-mately 75 square kilometres. From the moment you pass the prominent olive tree at the entrance of my restaurant you enter into a magical gastronomic universe any chef in the world would love to be part
of. This is why I am lucky to be a chef. Where I live, the gastronomic legacy I in-herited, the availability of natural produce, fresh fruit and vegetables, natural parks, the professionalism of craftsmen, fishermen, farmers, and harvesters …
ITS PEOPLE: The way of life and the multitude of differ-ent cultures merged into one, known as Mediter-ranean has given way to a multitude of expressions, the people have become
open-minded and despite tradition as mentioned before, a new type of innovative, modern and van-guard cuisine has been created.
TALENT: Something obvious in this area is the tal-ent the local professionals in the food world have. You don’t have to think of the best known or re-puted chefs, pastry chefs or bakers to know that at every stove there is a man or a woman fully devoted to homemade cooking and to the artistic expres-sion involved in the local delicacies, both from the land and the sea.
Time is both critical and unique. Talent often ap-pears without apparent cause. Today there is a group of chefs that can lead the way for Spanish cuisine in the coming years. Youngsters, passion-ate people, entrepreneurs and dreamers. At the same time analytical and realistic.
We can all see ourselves in the figure of Paco Tor-reblanca. Idealising objectives. Seeing how he has done it, and if we can, from excellence, do it our-selves or at least try and reach our goals.
TRAINING: Different training centres have been built so that the the prestigiousness of the sector remains implicit and visible. All the different tour-istic development centres distributed in the area, and the “invat.tur”: a Research Development and Innovation centre related to all aspects of tourism, will remain as references in the whole of Europe.
TOURISM: Finally we get to it... tourism. This is the main industry in this area. I firmly believe that only from excellence do we get one more chance. There are many ways to excellence, but this can only be achieved in one way. Sardines or sea bass, peas or parsley, shrimps or prawns, tuna or mackerel, wine or table grapes, extra virgin olive oil or nougat ... service and professionalism ... only from excellence can we reach the future that all of us strive for, work for and have in mind. We are a land of people who can achieve very important things. Significant years await us... We will work with all the determi-nation and belief needed. Let’s support each other. I learnt the local cuisine here in bars, restaurants, specialised rice restaurants, taverns and beach side bars. I’ve also learnt how to cook local stews
shown to me by people in their own homes, teach-ing me then and now how things have always been cooked here. As you know I don’t have professional training gastronomically speaking, I have taught myself. To become a chef you need to learn this skill on the street ... in kitchens, in bars, amongst vineyards and bottles of wine.
With curiosity and zest for life to enjoy a land that will give you more than you can never return.
Without consciously having made a decision, I live and cook here, but if I had to choose, I am sure I would ask to stay here.

Color rosa pálido con reflejos salmón, limpio, brillante y cristalino.La nariz expresiva desarrolla aromas de panificación, conjugado con aromas cítricos como la piel de limón.Al agitar, se desarrollan aromas de fruta blanca como la pera, el albaricoque y el melón, es muy frutal y agradable.La boca, con un ataque muy amplio, golosa, lleno de untuosidad, desvela sensaciones más frescas que nos refuerzan su dinamismo, tiene un final largo y agradable.
Pale pink with salmon accents in colour; clean, bright and crystalline at sight. On the nose is expressive and evokes bread-making aromas, mingled with citrus scents as lemon peel.As the wine opens, the aromas of white fruit such as pear, apricot and melon are expanded; it is an intense fruity and enjoyable wine.On the palate, good intensity, silky and velvety unctuousness, reveals fresh notes which reinforce its dynamism; the finish is long and pleasant.
Cesilia RoséBodega y Viñedos Heretat de Cesilia
Vino de color amarillo pajizo con reflejos verdosos. Limpio con una gran brillantez. En nariz destaca por intensidad con predominio de notas frutales (manzanas ácidas y verdes) y cítricas (limones). Presenta ligeros recuerdos florales, característicos de la variedad albariño (flores blancas) en boca la entrada es fresca, desembocado en sensaciones de amplitud y robustez, para finalizar con un recuerdo a perfumes delicados y complejos. Presenta un buen equilibrio entre acidez y alcohol.
Straw yellow colour with greenish highlights. Clean and very bright. On the nose its intensity is highlighted with a predominance of fruity (acid and green apples), and citrus (lemons) notes. Slight floral hints, characteristic feature of the “Albariño” grape variety (white flowers). The palate entrance is fresh, leading to intensity and robustness, to finish with a remembrance to delicate and complex fragrances. Good balance between acidity and alcohol.

Rojo rubí con ribete dorado. Aromas a vainilla, frutas y especias. Elegante, sabroso y largo.Elaborado de 20 a 30 días a temperatura entre 28º y 30º, crianza de 30 meses en barrica de roble francés y americano, con diferentes tostados para potenciar los aromas y 36 meses en botella.
Rubicon red with golden rim colour. Aromas of vanilla, fruits and spices. Elegant, tasty and long.Produced with a fermentation control at a temperature of 28º-30º and 20 to 30 days of maceration. Aged for 30 months in French and American oak, with different toasty smells to improve the flavours and then left for a further 36 months in the bottle.

Vinos Alicante DOPDe la diversidad de climas, comarcas y variedades, Alicante presenta un ca-tálogo de lo más surtido en cuanto a tipos de vinos. Lejos de querer ser una D.O. temática y sólo con una categoria por imperativos del marketing, aquí somos creativos, diversos y variados como reflejo del espíritu mediterráneo que nos ha acompañado desde siem-pre. Por eso somos los Vinos Alicante (en plural) y por eso tenemos estilos de vinos. Curiosamente casi ninguno pasa desapercibido y todos hablan de su origen. Hay un vino alicantino para cada tipo de consumidor, y eso es una ventaja cultural que no podemos des-preciar.
Tinto AlicanteEl vino considerado históricamente como “Alicante” es hoy en día un vino tinto donde la variedad monastrell está presente en un 75% de su ela-boración y el resto lo componen las demás variedades tintas autorizadas.
La monastrell presenta un color ca-racterístico rojo intenso, con capas media, cuerpo destacado y aromas
frutales. Más mediterráneos no pue-den ser.
Moscatel AlicanteSe llama así al vino dulce de licor rea-lizado únicamente con esta variedad al 100%. También se pueden reconcer como mistelas alicantinas, de tanta tradición en la zona de la Marina Alta.
Son vinos con una amplia gama de co-lor que abarca desde el amarillo pajizo y brillante hasta tonalidades ambari-nas con reflejos dorados para algunos tipos de mayor envejecimiento. Desta-ca su aroma floral, su toque elegante y fresco y su gran versatilidad que hará que encuentres siempre sorpresas.
Vinos Nobles y Añejos AlicanteDe gran tradición enológica en la zona, el Consejo Regulador no ha que-rido perder con ello parte de su histo-ria aunque su elaboración esté algo más en desuso por los gustos mo-dernos del consumidor. Son vinos de crianzas largas que, con la potencia de las variedades resultan complejos, intensos, de sorprendentes colores y llenos de historia.
Vinos espumososExisten de variedades autorizadas como espumosos aromáticos para los realizados con moscatel. Con la frescura del terreno y las virtudes de estas variedades, resultan idóneos para combinar con la amplia dieta me-diterránea que se cobija en Alicante, entre valles, montañas y siempre con la presencia de un mar cercano.
Alicante WinesDue to the diversity of climates, re-gions and varieties; Alicante offers a wide range of different wines. Far from wanting to be just a Protected Denom-ination of Origin (P.D.O) or limited to a marketing category, we aim to be creative, diverse and varied, reflect-ing the Mediterranean spirit which has been with us forever. As a result, the wines of Alicante have varying styles. Interestingly almost none go unnoticed and they all represent their origin. Alicante offers a wine for every type of consumer or taste and this cul-tural asset should not be ignored.
Tinto Alicante (Red Alicante)Historically wine that is considered to be from Alicante is nowadays a red wine made up from a grape vari-ety called Monastrell and is present in 75% of its production. The rest is made up of other permitted red grape varieties. The result therefore, is a deep red wine-colored, ruby red or purple tint depending on the time of
maturity. The wines may be, crianza or reserva, though mostly today you find young wines aging in wooden barrels. This results in the Monastrell grape having full body and a touch of con-trast to any another variety. This short time in wooden barrels, tames the wine and gives it a certain elegance, as well as a toasty quality given by the timber which is used in all of our wineries.
Moscatel AlicanteAlicante’s Moscatel is made from the grape of the same name. The wine was developed from the Moscatel liquor which is also known as a sweet wine named ´Mistela´, very famous in the Marina Alta region.
Mostacel wines have a wide range of colours ranging from harvest yellow to the bright, yellow amber of aged wines. This points out its floral bou-quet, elegance, freshness and its ver-satility which allows you to experience new flavours.
Prestigious and vintage winesRecognised from this in the region, the regulating council has not wanted to forget the role they have played in the history of the wines from Alicante, although its production has been re-duced due to the lack of demand.
These types of wine are aged longer than average due to the kind of grape variety used in its production. The wines are very complex with intense and sparkling colours and are full of history.
Sparkling winesThe Sparkling wines are produced by authorized grape varieties such as the Moscatel grape. These sparkling wines have the freshness and the fea-tures of these grapes varieties. They therefore perfectly suit the Mediterra-nean cuisine, specifically in Alicante, where the traditional dishes are differ-ent from region to region but all share its Mediterranean heritage.
