    The wall built during Ming Dynasty is the most oftenseen and well preserved. The Great Wall is 6700kilometres long. It passes through the mountains,

    across the Great Plains through the vast expanses of thedesert. It was built about 2000 years ago. Constructionof the Great Wall began in the Warring States period ofChina's territory. In 221 BC, the Qin first emperor, Qin

    Shi Huang, crushing all opponents of the state, and inthe history of China established a centralized andunified dynasty. To consolidate and protect minoritytribal territory and borders inviolable connection and

    extended his walls which has a total length of over 5000km.

    It was built in 1750 during the Qing Dynasty. It is a place forthe emperor and their families to relax and enjoythemselves. The Palace suffered several attacks by theBritish and French troops, in 1860 and destroyed by fire in1888. In 1900, the Summer Palace was ransacked again. Thegarden survived and was rebuilt in 1886 and 1902. In 1888, itwas given the name, the Summer Palace. After the successof the revolution in 1911, the Summer Palace was open tothe public.

    Ancient Chinese Astronomers believed that the PurpleStar (Polaris) was in the centre of heaven and theHeavenly Emperor lived in the Purple Palace. ThePalace for the emperor on earth was so called the

    Purple City. It was forbidden to enter without specialpermission of the emperor. Hence its name The PurpleForbidden City, usually The Forbidden City. It startedthe construction of the Forbidden City in 1407, and wascompleted in 1420. The capital was then moved fromNanjing to Beijing the following year.

    It has a long and gradual story of refinement. The original idea ofthe tea was credited to the legendary Emperor Shennong, whohad lived about 5000 years ago. A story goes that, "One summerday, while visiting a distant part of his realm, he and the courtstopped to rest. In accordance with his ruling, the servants beganto boil water for the court to drink. Dried leaves from a nearbybush fell into the boiling water, and a brown substance wasinfused into the water. As a scientist, the Emperor was interestedin the new liquid, drank some, and found it very refreshing. And

    SHAOBING

    Shaobing or Huoshao are baked layered flatbread withsesame on top. They are usually made in two flavours:

    savoury or sweet. According to Chinese cuisine,Shaobing are served with hot pot in winter.

    The origins of shaobing was discovered by Wang Qian.

    Thousands of years ago, during the Han dynasty, the shaobing was bakedinto a type of thick baked bread.

    The original shaobing is about 2-cm thick and tastes no different from the

    common baked bread. People used to buy it as staple.

    Guo Yunlong, the first person who make the first shaobing rolled out thedough as thin as possible to improve its texture and made it much crispier.

    Shaobing was a luxury item only the rich could afford to eat often in thepast.

    EIGHT TREASURES RICE (BA BAO FAN)

    It is a traditional Chinese dessert with more than athousand years of history. This dessert is made in all

    regions of China with their own local ingredients andrecipes; however, all recipes are based upon theingredients of sticky rice and eight different dried fruits.The most famous Ba Bao Fan recipe is from Jiang

    Nan, a southern area of China.

    Yuanxiao is a special dumpling in China for the LanternFestival (the 15th night of the 1st lunar month). It is a"ball" made of glutinous rice flour.     Fujian Cuisine

    Consist of four different styles:

    Fuzhou: the taste is light compared to other styles, often with a mixed sweet

    and sour taste. It is famous for its soups.

    Western Fujian: there are often slight spicy tastes from mustard and pepperand the cooking methods are often steaming, frying and stir-frying.

    Southern Fujian: spicy and sweet tastes are often found and the selection of

    sauces used is elaborate.

    Quanzhou: the least oily but with the strongest taste/flavour of Fujian cuisine.

    Great emphasis is placed on the shape of the material for each dish.

    Hangzhou style: characterised by rich variations and theutilisation of bamboo shoots. It is served by restaurants such
