PALE ALES
My name’s Duncan and I FUCKING LOVE CRAFT
BEER. Read my mag! It’s awesome. I want you to
like craft beer too; it’s awesome! Craft beer is
local, there’s a billion styles and breweries, there’s
always something new, and you’ll feel better and
become cooler if you drink it.
The Japanese government changed the tax laws
on alcoholic beverages in 1994, reducing the
minimum yearly literage for a license for beer
brewers in Japan from 2,000,000 liters to
60,000 liters. Smart move, Japan.
Breweries popped up all over the
country and ‘ji-beer’ boomed in
the few years afterwards. A
lot of bad beer was made.
With the economic
downturn in the 90s, the
masses stopped
purchasing and many
breweries were wiped out.
Those that survived this first
crash are tough: they’re making
good stuff. Since 2010, craft beer has
been booming again. It’s an affordable luxury, and
even a few really delicious beers won’t break your
bank.
‘Craft’ is the new word and if you read my stuff, I’ll
tell you about everything that’s happening in
Kansai!

地ビールブームがやってきた。
ところが一方で、品質の悪い
ビールも出回った。その後
不況で消費者が減り、
醸造所の数も大きく
減ったものの、生き
残ったタフな醸造所
の地ビールは2010
年以降、再び注目されて
い る。品 質 が 良 く 味 も よ い
地ビールは1杯で、( あるいは2,3 杯
で) 深い味わいや心地よさを感じられるお
財布にやさしい「手の届く贅沢ビール」として愛され
ている。

with my pale ale for years while living in
Japan. Always looking forward to visiting
the US to drink Sierra Nevada. There were
other brews I knew of and drank in
college—Pete’s Wicked Ale, Red Nectar—
but Sierra Nevada always held my heart.
That was until 2011. I was back in
California and the craft beer scene had
really taken off. There were now beers that
rivaled what I liked so much about Sierra
Nevada. During this time I was introduced
to a number of new breweries—Green
Flash, Stone and The Bruery. These beers
were innovative, bold and mostly very
hoppy. I liked them. Many people liked
them. We all wanted more.
When Craft Beer Base opened in Osaka,
my wife and went there on its opening night
and I met two individuals who were very
into craft beer. And that was my
introduction into a larger world for craft
beer in Osaka and Japan. Since that night I
have met a number of craft beer
enthusiasts from all around Japan and the
world. I enjoy the camaraderie of enjoying a
good beer with old friends and new. I like
the connection that you can make just from
drinking a beer with someone.
I like the passion that individuals have for
their favorite beers and the respect that
everyone has for all the different beers,
even if a certain flavor is not your style of
choice. I like that you can enjoy a beer on
your own and share that experience online
with friends through a simple photo and
that you can also drink in a friendly
atmosphere with old friends and new
friends.
So, I think producing a craft beer is very
similar to creating an album. There are
many different ingredients or components
that go into it. I like that brewers can
improve any number of different skills to
refine their art and improve the taste and
overall quality. I like that beer is made to be
shared and enjoyed. It’s a very communal
experience. Even when you just want a
moment to yourself with your favorite beer,
you are not alone. You are part of a larger
story, an ongoing soundtrack that is
playing not just in your life, but in the lives
of many others who have the same taste
for great beer as you.
ビール愛好家のみんなとグラスを重ねて友情を
築いてきた。ビールを一緒に楽しむことから生まれ
るつながりが好きだね。
自分の好みやスタイルとは違っても、ビールに強い
思い入れを持つ人には好感が持てる。おのおのが
お気に入りのビールを飲んで、写真をオンライン
上でシェアしたり、新旧で仲の良い友人と心地よい
空間で飲んだり、楽しみかたはいろいろあるよね。
ここまでいろいろ話してきたけれど、クラフト
ビール醸造って音楽アルバム作りに似ていると思う
んだ。素材や要素を組み合わせていくことで、醸造家
はスキルを磨き、技術をどんどん高める。ビールの味
や品質も向上していく。そうやって作られたビール
は、ただ飲むという経験にとどまらずに、誰かと
「分かち合う喜び」を教えてくれると思う。例えば、
1人で静かに飲んでいる時でさえ、本当の意味では
一人ぼっちじゃない。人生の背景に流れる音楽が
物語を紡いでゆくように、君自身も、美味しいビール
を楽しむそれぞれの物語の一部なんだから。

氏にお話を伺いました。
I like that every craft beer can have its own
story. It’s a story that has many layers—
how it was made, who you drank it with, the
label. The flavor is a story in and of itself.
It’s like a record you want to listen to again
and again. A good craft beer is a story that
you like to tell, that you like to be a part of.
You want that story, that soundtrack, to be
a part of your life.
I like that craft beer has little marketing to
tell you what craft beer is and the
marketing that is out there is mostly
focused on process. There is the brewery,
the label, the beer and you. And what you
may or may not know about that beer from
your friends or the Internet.
I like the labels that define a craft beer. I
like that a beer can be judged before hand
on just a label and afterwards on its taste.
And from there, a moment, a memory that
you want to relive and savor.
I have always liked ales since my first
Sierra Nevada during my freshman year of
university in Southern California when a
friend from Northern California introduced
me to Sierra Nevada Pale Ale. Game
changer. During uni, all my friends also
liked good beer, however, we didn’t have
the terminology to discuss it. So, I stuck

ないけれど学生時代に気に入って飲んでいたもので

2011 年、カリフォルニアに戻って気づいたことは
クラフトビール市場の勢いだ。シエラネバダに匹敵
するようなビールを作る醸造所の数が増えていて、
いくつかの醸造所「Green Flash」、「Stone」そして
「The Bruery」を訪れたんだけど、新しくて大胆で、
ホップが効いた味は、すごく人気があったね。
大阪にクラフトビアベースがオープンした夜、妻と
一緒にオープニングに行った。そこで2人の“ クラフ
トビール通”と知り合いになって、日本のクラフト
ビールについていろいろ教えてもらうことができた
よ。そこでは、あちこちから集まってきたクラフト
クラフトビールの背景―どのように作られたか、
ラベルのデザイン、そして誰と一緒に飲むか、と
いった物語に心惹かれる。良いクラフトビールの味
は、まるで年季が入ったレコードを何度も聞き返し
たくなるように豊かで、誰かに伝えたくなるお気に
入りの音楽みたいにすっかり人生の一部になってい
るんだ。
クラフトビールのいいところ―ビールの味よりも、
醸造所や製造プロセスに焦点をあてたマーケティング
をしているところ。友人やネットから知った情報を
もとにクラフトビールを選ぶことができるところ。
ビールを飲むまでに、まずラベルを見た時の印象や
イメージ、それから実際に飲んでみて、という一連の
流れがある。味だけじゃなくて、飲む前から始まる
時間をすべて味わうことができるのが魅力的だ。

Pale ales are a popular style that
get their name from the pale malt
used in brewing, which ends in a
lighter colour beer (unlike a porter
or a stout). The pale ale family is
large, with a range of colours,
tastes and strengths. They have
more flavour than largers. English
ones are called “bitter” because of
the aftertaste; Americans tend to
use more hops; more flowery
aromas and tastes.

ペールモルツ( 薄い色の大麦麦芽)
から名付けられた人気のスタイル
です。ポーターやスタウトと違って
仕上がりの色が薄いことが特徴。
ペ ー ル・エ ー ル の 種 類 は 多 く、

Brewing is a great outlet, and you can just keep
going deeper and deeper. And nothing beats
showing up to some gathering with a bunch of
homebrews and have people appreciate your
efforts.
Q: Could you tell us about the Kinki
Homebrewers Association?
Basically we are just a bunch of beer swilling
jerks . . . I mean gentlemen and ladies...
まずは自己紹介をお願いします。
Brent A. Jonesです。アメリカ、カリフォルニア州
出身で、1989年に神戸に来るまで、オレゴン州と
ハワイに住んでいました。醸造作業をしていない時
はティーチング、または甲南大 学内にある、Hirao
School of Managementで退屈な運営管理をしてい
ます。
自家醸造の道に入ったキッカケは?
当時家族ぐるみで仲良くしていた友人がドイツの
ビールメーカー、Hofmark Brauereiの後継者でした。
当時、彼は日本でオールモルト(発泡酒)の販促活動を
していて、父親の後を継ぐためにドイツに帰国する
まで、酒造方法を教えてもらう約束をしていました。
実際、醸造に関する様々なノウハウを教えてくれま
した(ドイツ語は教えてもらいませんでしたけど
(笑))。彼の帰国後も、私自身、自らの手 でビールを作
り出す野望は持ち続けていましたが、Tony Torbert
(Kinki Homebrewers in Japanの創始者)に出会って
から、またそのチャンスが巡ってきました。Tonyと
共に1バッチ分製造し、残念ながら今はもうお店自体
は無いのですが、当時、神戸のビア・クラブショップ
のオーナーをしていた、サイトウジュンコさんから
スターターキットを購入しました。それから今に至
ります。
自家醸造は困難な作業ですか?なぜ自家醸造をする
人がいるのでしょうか?
ちゃんと答えるには一杯飲まなくてはいけない質問
ですね(笑)。しいて言えば、自家醸造は言うほど難し
くありません。最低限の設備で始めることが可能で
すし、比較的簡単な作業です。とは言っても良い
ビールを醸造するには根気と十分な配慮が必要です
し、得意レシピに磨きをかけるには、細心の注意が必
要です。
なぜ自家醸造を続けるのかと言われれば・・・・ただ
単に「出来る」からです。また自家醸造は、創造力を
掻き立てる作業であり、どんどんとのめり込むこと
ができるんです。自家醸造をやっている人との
出会いや集会への参加により、色んな人から自分の
努力を認められることもあります。これには何とも
言えない喜びがありますね。
Kinki Homebrewersに関して教えてください。
簡単に言うと私達はビールをガブ飲みするおバカ
集団です・・・ではなく紳士淑女のグループです
(笑)・・・
Could you give us a brief self-introduction?
My name is Brent A. Jones. I was born in
California, and lived in Oregon and Hawaii before
coming to Kobe in 1989. When I am not
homebrewing, I can usually be found teaching or
taking care of some mind-numbing administration
work at the Hirao School of Management, which
is part of Konan University.
How did you get into homebrewing?
A close family friend here in Japan was the heir to
the Hofmark Brauerei who happened to be in
Japan promoting their all malt happoshu. He had
promised to teach me how to brew and was
feeding me articles (about brewing, not German
articles like ein, das and er) before he was called
back to Germany to run the brewery when his
father retired. I kept dreaming about brewing my
own beer, and then had the chance when another
friend Tony Torbert (founder of the Kinki
Homebrewers group) offered to show me how.
We brewed a batch together, I bought a starter
kit from Junko Saito at the old Beer Club shop in
Kobe (now gone, unfortunately), and I haven’t
looked back since.
Is homebrewing difficult? Why do people do it?
This question is difficult. I think I need to pop a
homebrew to answer this one. My kneejerk
answer is that homebrewing is not that difficult.
You can get started with just minimal equipment,
and it is a pretty straightforward process. Having
said so, brewing good beer does take some
patience and care. Perfecting you favourite
recipes requires further attention to detail.
As for the why question . . . Because we can.

I have always liked ales since my first
Sierra Nevada during my freshman year of
university in Southern California when a
friend from Northern California introduced
me to Sierra Nevada Pale Ale. Game
changer. During uni, all my friends also
liked good beer, however, we didn’t have
the terminology to discuss it. So, I stuck

クラフトビール市場の勢いだ。シエラネバダに匹敵
するようなビールを作る醸造所の数が増えていて、
いくつかの醸造所「Green Flash」、「Stone」そして
「The Bruery」を訪れたんだけど、新しくて大胆で、
ホップが効いた味は、すごく人気があったね。
大阪にクラフトビアベースがオープンした夜、妻と
一緒にオープニングに行った。そこで2人の“ クラフ
トビール通”と知り合いになって、日本のクラフト
ビールについていろいろ教えてもらうことができた
よ。そこでは、あちこちから集まってきたクラフト
クラフトビールの背景―どのように作られたか、
ラベルのデザイン、そして誰と一緒に飲むか、と
いった物語に心惹かれる。良いクラフトビールの味
は、まるで年季が入ったレコードを何度も聞き返し
たくなるように豊かで、誰かに伝えたくなるお気に
入りの音楽みたいにすっかり人生の一部になってい
るんだ。
クラフトビールのいいところ―ビールの味よりも、
醸造所や製造プロセスに焦点をあてたマーケティング
をしているところ。友人やネットから知った情報を
もとにクラフトビールを選ぶことができるところ。
ビールを飲むまでに、まずラベルを見た時の印象や
イメージ、それから実際に飲んでみて、という一連の
流れがある。味だけじゃなくて、飲む前から始まる
時間をすべて味わうことができるのが魅力的だ。

Pale ales are a popular style that
get their name from the pale malt
used in brewing, which ends in a
lighter colour beer (unlike a porter
or a stout). The pale ale family is
large, with a range of colours,
tastes and strengths. They have
more flavour than largers. English
ones are called “bitter” because of
the aftertaste; Americans tend to
use more hops; more flowery
aromas and tastes.
ペール・エールは醸造に使われる
ペールモルツ( 薄い色の大麦麦芽)
から名付けられた人気のスタイル
です。ポーターやスタウトと違って
仕上がりの色が薄いことが特徴。

Q: Could you tell us about the Kinki
Homebrewers Association?
Basically we are just a bunch of beer swilling
jerks . . . I mean gentlemen and ladies...

Brent A. Jonesです。アメリカ、カリフォルニア州
出身で、1989年に神戸に来るまで、オレゴン州と
ハワイに住んでいました。醸造作業をしていない時
はティーチング、または甲南大 学内にある、Hirao
School of Managementで退屈な運営管理をしてい
ます。
自家醸造の道に入ったキッカケは?
当時家族ぐるみで仲良くしていた友人がドイツの
ビールメーカー、Hofmark Brauereiの後継者でした。
当時、彼は日本でオールモルト(発泡酒)の販促活動を
していて、父親の後を継ぐためにドイツに帰国する
まで、酒造方法を教えてもらう約束をしていました。
実際、醸造に関する様々なノウハウを教えてくれま
した(ドイツ語は教えてもらいませんでしたけど
(笑))。彼の帰国後も、私自身、自らの手 でビールを作
り出す野望は持ち続けていましたが、Tony Torbert
(Kinki Homebrewers in Japanの創始者)に出会って
から、またそのチャンスが巡ってきました。Tonyと
共に1バッチ分製造し、残念ながら今はもうお店自体
は無いのですが、当時、神戸のビア・クラブショップ
のオーナーをしていた、サイトウジュンコさんから
スターターキットを購入しました。それから今に至
ります。
自家醸造は困難な作業ですか?なぜ自家醸造をする
人がいるのでしょうか?
ちゃんと答えるには一杯飲まなくてはいけない質問
ですね(笑)。しいて言えば、自家醸造は言うほど難し
くありません。最低限の設備で始めることが可能で
すし、比較的簡単な作業です。とは言っても良い
ビールを醸造するには根気と十分な配慮が必要です
し、得意レシピに磨きをかけるには、細心の注意が必
要です。
なぜ自家醸造を続けるのかと言われれば・・・・ただ
単に「出来る」からです。また自家醸造は、創造力を
掻き立てる作業であり、どんどんとのめり込むこと
ができるんです。自家醸造をやっている人との
出会いや集会への参加により、色んな人から自分の
努力を認められることもあります。これには何とも
言えない喜びがありますね。

簡単に言うと私達はビールをガブ飲みするおバカ
集団です・・・ではなく紳士淑女のグループです
(笑)・・・
Could you give us a brief self-introduction?
My name is Brent A. Jones. I was born in
California, and lived in Oregon and Hawaii before
coming to Kobe in 1989. When I am not
homebrewing, I can usually be found teaching or
taking care of some mind-numbing administration
work at the Hirao School of Management, which
is part of Konan University.
How did you get into homebrewing?
A close family friend here in Japan was the heir to
the Hofmark Brauerei who happened to be in
Japan promoting their all malt happoshu. He had
promised to teach me how to brew and was
feeding me articles (about brewing, not German
articles like ein, das and er) before he was called
back to Germany to run the brewery when his
father retired. I kept dreaming about brewing my
own beer, and then had the chance when another
friend Tony Torbert (founder of the Kinki
Homebrewers group) offered to show me how.
We brewed a batch together, I bought a starter
kit from Junko Saito at the old Beer Club shop in
Kobe (now gone, unfortunately), and I haven’t
looked back since.
Is homebrewing difficult? Why do people do it?
This question is difficult. I think I need to pop a
homebrew to answer this one. My kneejerk
answer is that homebrewing is not that difficult.
You can get started with just minimal equipment,
and it is a pretty straightforward process. Having
said so, brewing good beer does take some
patience and care. Perfecting you favourite
recipes requires further attention to detail.
As for the why question . . . Because we can.

PALE ALES
My name’s Duncan and I FUCKING LOVE CRAFT
BEER. Read my mag! It’s awesome. I want you to
like craft beer too; it’s awesome! Craft beer is
local, there’s a billion styles and breweries, there’s
always something new, and you’ll feel better and
become cooler if you drink it.
The Japanese government changed the tax laws
on alcoholic beverages in 1994, reducing the
minimum yearly literage for a license for beer
brewers in Japan from 2,000,000 liters to
60,000 liters. Smart move, Japan.
Breweries popped up all over the
country and ‘ji-beer’ boomed in
the few years afterwards. A
lot of bad beer was made.
With the economic
downturn in the 90s, the
masses stopped
purchasing and many
breweries were wiped out.
Those that survived this first
crash are tough: they’re making
good stuff. Since 2010, craft beer has
been booming again. It’s an affordable luxury, and
even a few really delicious beers won’t break your
bank.
‘Craft’ is the new word and if you read my stuff, I’ll
tell you about everything that’s happening in
Kansai!

財布にやさしい「手の届く贅沢ビール」として愛され

with my pale ale for years while living in
Japan. Always looking forward to visiting
the US to drink Sierra Nevada. There were
other brews I knew of and drank in
college—Pete’s Wicked Ale, Red Nectar—
but Sierra Nevada always held my heart.
That was until 2011. I was back in
California and the craft beer scene had
really taken off. There were now beers that
rivaled what I liked so much about Sierra
Nevada. During this time I was introduced
to a number of new breweries—Green
Flash, Stone and The Bruery. These beers
were innovative, bold and mostly very
hoppy. I liked them. Many people liked
them. We all wanted more.
When Craft Beer Base opened in Osaka,
my wife and went there on its opening night
and I met two individuals who were very
into craft beer. And that was my
introduction into a larger world for craft
beer in Osaka and Japan. Since that night I
have met a number of craft beer
enthusiasts from all around Japan and the
world. I enjoy the camaraderie of enjoying a
good beer with old friends and new. I like
the connection that you can make just from
drinking a beer with someone.
I like the passion that individuals have for
their favorite beers and the respect that
everyone has for all the different beers,
even if a certain flavor is not your style of
choice. I like that you can enjoy a beer on
your own and share that experience online
with friends through a simple photo and
that you can also drink in a friendly
atmosphere with old friends and new
friends.
So, I think producing a craft beer is very
similar to creating an album. There are
many different ingredients or components
that go into it. I like that brewers can
improve any number of different skills to
refine their art and improve the taste and
overall quality. I like that beer is made to be
shared and enjoyed. It’s a very communal
experience. Even when you just want a
moment to yourself with your favorite beer,
you are not alone. You are part of a larger
story, an ongoing soundtrack that is
playing not just in your life, but in the lives
of many others who have the same taste
for great beer as you.

築いてきた。ビールを一緒に楽しむことから生まれ
るつながりが好きだね。
自分の好みやスタイルとは違っても、ビールに強い
思い入れを持つ人には好感が持てる。おのおのが

はスキルを磨き、技術をどんどん高める。ビールの味
や品質も向上していく。そうやって作られたビール
は、ただ飲むという経験にとどまらずに、誰かと
「分かち合う喜び」を教えてくれると思う。例えば、
1人で静かに飲んでいる時でさえ、本当の意味では
一人ぼっちじゃない。人生の背景に流れる音楽が
物語を紡いでゆくように、君自身も、美味しいビール
を楽しむそれぞれの物語の一部なんだから。

I like that every craft beer can have its own
story. It’s a story that has many layers—
how it was made, who you drank it with, the
label. The flavor is a story in and of itself.
It’s like a record you want to listen to again
and again. A good craft beer is a story that
you like to tell, that you like to be a part of.
You want that story, that soundtrack, to be
a part of your life.
I like that craft beer has little marketing to
tell you what craft beer is and the
marketing that is out there is mostly
focused on process. There is the brewery,
the label, the beer and you. And what you
may or may not know about that beer from
your friends or the Internet.
I like the labels that define a craft beer. I
like that a beer can be judged before hand
on just a label and afterwards on its taste.

How did you get into homebrewing?
A close family friend here in Japan was the heir to
the Hofmark Brauerei who happened to be in
Japan promoting their all malt happoshu. He had
promised to teach me how to brew and was
feeding me articles (about brewing, not German
articles like ein, das and er) before he was called
back to Germany to run the brewery when his
father retired. I kept dreaming about brewing my
own beer, and then had the chance when another
friend Tony Torbert (founder of the Kinki
Homebrewers group) offered to show me how.
We brewed a batch together, I bought a starter
kit from Junko Saito at the old Beer Club shop in
Kobe (now gone, unfortunately), and I haven’t
looked back since.
Is homebrewing difficult? Why do people do it?
This question is difficult. I think I need to pop a
homebrew to answer this one. My kneejerk
answer is that homebrewing is not that difficult.
You can get started with just minimal equipment,
and it is a pretty straightforward process. Having
said so, brewing good beer does take some
patience and care. Perfecting you favourite
recipes requires further attention to detail.
As for the why question . . . Because we can.

My name’s Duncan and I FUCKING LOVE CRAFT
BEER. Read my mag! It’s awesome. I want you to
like craft beer too; it’s awesome! Craft beer is
local, there’s a billion styles and breweries, there’s
always something new, and you’ll feel better and
become cooler if you drink it.
The Japanese government changed the tax laws
on alcoholic beverages in 1994, reducing the
minimum yearly literage for a license for beer
brewers in Japan from 2,000,000 liters to
60,000 liters. Smart move, Japan.
Breweries popped up all over the
country and ‘ji-beer’ boomed in
the few years afterwards. A
lot of bad beer was made.
With the economic
downturn in the 90s, the
masses stopped
purchasing and many
breweries were wiped out.
Those that survived this first
crash are tough: they’re making
good stuff. Since 2010, craft beer has
been booming again. It’s an affordable luxury, and
even a few really delicious beers won’t break your
bank.
‘Craft’ is the new word and if you read my stuff, I’ll
tell you about everything that’s happening in
Kansai!

with my pale ale for years while living in
Japan. Always looking forward to visiting
the US to drink Sierra Nevada. There were
other brews I knew of and drank in
college—Pete’s Wicked Ale, Red Nectar—
but Sierra Nevada always held my heart.
That was until 2011. I was back in
California and the craft beer scene had
really taken off. There were now beers that
rivaled what I liked so much about Sierra
Nevada. During this time I was introduced
to a number of new breweries—Green
Flash, Stone and The Bruery. These beers
were innovative, bold and mostly very
hoppy. I liked them. Many people liked
them. We all wanted more.
When Craft Beer Base opened in Osaka,
my wife and went there on its opening night
and I met two individuals who were very
into craft beer. And that was my
introduction into a larger world for craft
beer in Osaka and Japan. Since that night I
have met a number of craft beer
enthusiasts from all around Japan and the
world. I enjoy the camaraderie of enjoying a
good beer with old friends and new. I like
the connection that you can make just from
drinking a beer with someone.
I like the passion that individuals have for
their favorite beers and the respect that
everyone has for all the different beers,
even if a certain flavor is not your style of
choice. I like that you can enjoy a beer on
your own and share that experience online
with friends through a simple photo and
that you can also drink in a friendly
atmosphere with old friends and new
friends.
So, I think producing a craft beer is very
similar to creating an album. There are
many different ingredients or components
that go into it. I like that brewers can
improve any number of different skills to
refine their art and improve the taste and
overall quality. I like that beer is made to be
shared and enjoyed. It’s a very communal
experience. Even when you just want a
moment to yourself with your favorite beer,
you are not alone. You are part of a larger
story, an ongoing soundtrack that is
playing not just in your life, but in the lives
of many others who have the same taste
for great beer as you.
ビール愛好家のみんなとグラスを重ねて友情を
築いてきた。ビールを一緒に楽しむことから生まれ
るつながりが好きだね。
自分の好みやスタイルとは違っても、ビールに強い
思い入れを持つ人には好感が持てる。おのおのが
お気に入りのビールを飲んで、写真をオンライン
上でシェアしたり、新旧で仲の良い友人と心地よい
空間で飲んだり、楽しみかたはいろいろあるよね。
ここまでいろいろ話してきたけれど、クラフト
ビール醸造って音楽アルバム作りに似ていると思う
んだ。素材や要素を組み合わせていくことで、醸造家
はスキルを磨き、技術をどんどん高める。ビールの味
や品質も向上していく。そうやって作られたビール
は、ただ飲むという経験にとどまらずに、誰かと
「分かち合う喜び」を教えてくれると思う。例えば、
1人で静かに飲んでいる時でさえ、本当の意味では
一人ぼっちじゃない。人生の背景に流れる音楽が
物語を紡いでゆくように、君自身も、美味しいビール
を楽しむそれぞれの物語の一部なんだから。

のでしょうか?その魅力は何なので
しょうか?『Gee! Beer』は本シリーズ
の初回に、「Beer Zen Journal」の編集
長と自家醸造者であるマイク・ポスト
氏にお話を伺いました。
I like that every craft beer can have its own
story. It’s a story that has many layers—
how it was made, who you drank it with, the
label. The flavor is a story in and of itself.
It’s like a record you want to listen to again
and again. A good craft beer is a story that
you like to tell, that you like to be a part of.
You want that story, that soundtrack, to be
a part of your life.
I like that craft beer has little marketing to
tell you what craft beer is and the
marketing that is out there is mostly
focused on process. There is the brewery,
the label, the beer and you. And what you
may or may not know about that beer from
your friends or the Internet.
I like the labels that define a craft beer. I
like that a beer can be judged before hand
on just a label and afterwards on its taste.
And from there, a moment, a memory that
you want to relive and savor.
I have always liked ales since my first
Sierra Nevada during my freshman year of
university in Southern California when a
friend from Northern California introduced
me to Sierra Nevada Pale Ale. Game
changer. During uni, all my friends also
liked good beer, however, we didn’t have
the terminology to discuss it. So, I stuck

クラフトビール市場の勢いだ。シエラネバダに匹敵
するようなビールを作る醸造所の数が増えていて、
いくつかの醸造所「Green Flash」、「Stone」そして
「The Bruery」を訪れたんだけど、新しくて大胆で、
ホップが効いた味は、すごく人気があったね。
大阪にクラフトビアベースがオープンした夜、妻と
一緒にオープニングに行った。そこで2人の“ クラフ
トビール通”と知り合いになって、日本のクラフト
ビールについていろいろ教えてもらうことができた
よ。そこでは、あちこちから集まってきたクラフト
クラフトビールの背景―どのように作られたか、
ラベルのデザイン、そして誰と一緒に飲むか、と
いった物語に心惹かれる。良いクラフトビールの味
は、まるで年季が入ったレコードを何度も聞き返し
たくなるように豊かで、誰かに伝えたくなるお気に
入りの音楽みたいにすっかり人生の一部になってい
るんだ。
クラフトビールのいいところ―ビールの味よりも、
醸造所や製造プロセスに焦点をあてたマーケティング
をしているところ。友人やネットから知った情報を
もとにクラフトビールを選ぶことができるところ。
ビールを飲むまでに、まずラベルを見た時の印象や
イメージ、それから実際に飲んでみて、という一連の
流れがある。味だけじゃなくて、飲む前から始まる
時間をすべて味わうことができるのが魅力的だ。

Pale ales are a popular style that
get their name from the pale malt
used in brewing, which ends in a
lighter colour beer (unlike a porter
or a stout). The pale ale family is
large, with a range of colours,
tastes and strengths. They have
more flavour than largers. English
ones are called “bitter” because of
the aftertaste; Americans tend to
use more hops; more flowery
aromas and tastes.

ペールモルツ( 薄い色の大麦麦芽)
から名付けられた人気のスタイル
です。ポーターやスタウトと違って
仕上がりの色が薄いことが特徴。

Brewing is a great outlet, and you can just keep
going deeper and deeper. And nothing beats
showing up to some gathering with a bunch of
homebrews and have people appreciate your

Q: Could you tell us about the Kinki
Homebrewers Association?
Basically we are just a bunch of beer swilling
jerks . . . I mean gentlemen and ladies...
まずは自己紹介をお願いします。
Brent A. Jonesです。アメリカ、カリフォルニア州
出身で、1989年に神戸に来るまで、オレゴン州と
ハワイに住んでいました。醸造作業をしていない時
はティーチング、または甲南大 学内にある、Hirao
School of Managementで退屈な運営管理をしてい
ます。
自家醸造の道に入ったキッカケは?
当時家族ぐるみで仲良くしていた友人がドイツの
ビールメーカー、Hofmark Brauereiの後継者でした。
当時、彼は日本でオールモルト(発泡酒)の販促活動を
していて、父親の後を継ぐためにドイツに帰国する
まで、酒造方法を教えてもらう約束をしていました。
実際、醸造に関する様々なノウハウを教えてくれま
した(ドイツ語は教えてもらいませんでしたけど
(笑))。彼の帰国後も、私自身、自らの手 でビールを作
り出す野望は持ち続けていましたが、Tony Torbert
(Kinki Homebrewers in Japanの創始者)に出会って
から、またそのチャンスが巡ってきました。Tonyと
共に1バッチ分製造し、残念ながら今はもうお店自体
は無いのですが、当時、神戸のビア・クラブショップ
のオーナーをしていた、サイトウジュンコさんから
スターターキットを購入しました。それから今に至
ります。
自家醸造は困難な作業ですか?なぜ自家醸造をする
人がいるのでしょうか?
ちゃんと答えるには一杯飲まなくてはいけない質問
ですね(笑)。しいて言えば、自家醸造は言うほど難し
くありません。最低限の設備で始めることが可能で
すし、比較的簡単な作業です。とは言っても良い
ビールを醸造するには根気と十分な配慮が必要です
し、得意レシピに磨きをかけるには、細心の注意が必
要です。
なぜ自家醸造を続けるのかと言われれば・・・・ただ
単に「出来る」からです。また自家醸造は、創造力を
掻き立てる作業であり、どんどんとのめり込むこと
ができるんです。自家醸造をやっている人との
出会いや集会への参加により、色んな人から自分の
努力を認められることもあります。これには何とも
言えない喜びがありますね。

集団です・・・ではなく紳士淑女のグループです

rivaled what I liked so much about Sierra
Nevada. During this time I was introduced
to a number of new breweries—Green
Flash, Stone and The Bruery. These beers
were innovative, bold and mostly very
hoppy. I liked them. Many people liked
them. We all wanted more.
When Craft Beer Base opened in Osaka,
my wife and went there on its opening night
and I met two individuals who were very
into craft beer. And that was my
introduction into a larger world for craft
beer in Osaka and Japan. Since that night I
have met a number of craft beer
enthusiasts from all around Japan and the
world. I enjoy the camaraderie of enjoying a
good beer with old friends and new. I like
the connection that you can make just from
drinking a beer with someone.
I like the passion that individuals have for
their favorite beers and the respect that
everyone has for all the different beers,
even if a certain flavor is not your style of
choice. I like that you can enjoy a beer on
your own and share that experience online
with friends through a simple photo and
that you can also drink in a friendly
atmosphere with old friends and new
friends.
So, I think producing a craft beer is very
similar to creating an album. There are
many different ingredients or components
that go into it. I like that brewers can
improve any number of different skills to
refine their art and improve the taste and
overall quality. I like that beer is made to be
shared and enjoyed. It’s a very communal
experience. Even when you just want a
moment to yourself with your favorite beer,
you are not alone. You are part of a larger
story, an ongoing soundtrack that is
playing not just in your life, but in the lives
of many others who have the same taste
for great beer as you.

築いてきた。ビールを一緒に楽しむことから生まれ
るつながりが好きだね。

はスキルを磨き、技術をどんどん高める。ビールの味
や品質も向上していく。そうやって作られたビール
は、ただ飲むという経験にとどまらずに、誰かと
「分かち合う喜び」を教えてくれると思う。例えば、
1人で静かに飲んでいる時でさえ、本当の意味では
一人ぼっちじゃない。人生の背景に流れる音楽が
物語を紡いでゆくように、君自身も、美味しいビール
を楽しむそれぞれの物語の一部なんだから。

I like that every craft beer can have its own
story. It’s a story that has many layers—
how it was made, who you drank it with, the
label. The flavor is a story in and of itself.
It’s like a record you want to listen to again
and again. A good craft beer is a story that
you like to tell, that you like to be a part of.
You want that story, that soundtrack, to be
a part of your life.
I like that craft beer has little marketing to
tell you what craft beer is and the
marketing that is out there is mostly
focused on process. There is the brewery,
the label, the beer and you. And what you
may or may not know about that beer from
your friends or the Internet.
I like the labels that define a craft beer. I
like that a beer can be judged before hand
on just a label and afterwards on its taste.
And from there, a moment, a memory that
you want to relive and savor.
I have always liked ales since my first
Sierra Nevada during my freshman year of
university in Southern California when a
friend from Northern California introduced
me to Sierra Nevada Pale Ale. Game
changer. During uni, all my friends also
liked good beer, however, we didn’t have
the terminology to discuss it. So, I stuck

するようなビールを作る醸造所の数が増えていて、

「The Bruery」を訪れたんだけど、新しくて大胆で、
ホップが効いた味は、すごく人気があったね。
大阪にクラフトビアベースがオープンした夜、妻と
一緒にオープニングに行った。そこで2人の“ クラフ
トビール通”と知り合いになって、日本のクラフト
ビールについていろいろ教えてもらうことができた
よ。そこでは、あちこちから集まってきたクラフト
クラフトビールの背景―どのように作られたか、
ラベルのデザイン、そして誰と一緒に飲むか、と
いった物語に心惹かれる。良いクラフトビールの味
は、まるで年季が入ったレコードを何度も聞き返し
たくなるように豊かで、誰かに伝えたくなるお気に
入りの音楽みたいにすっかり人生の一部になってい
るんだ。
クラフトビールのいいところ―ビールの味よりも、
醸造所や製造プロセスに焦点をあてたマーケティング
をしているところ。友人やネットから知った情報を
もとにクラフトビールを選ぶことができるところ。
ビールを飲むまでに、まずラベルを見た時の印象や
イメージ、それから実際に飲んでみて、という一連の
流れがある。味だけじゃなくて、飲む前から始まる
時間をすべて味わうことができるのが魅力的だ。

Pale ales are a popular style that
get their name from the pale malt
used in brewing, which ends in a
lighter colour beer (unlike a porter
or a stout). The pale ale family is
large, with a range of colours,
tastes and strengths. They have
more flavour than largers. English
ones are called “bitter” because of
the aftertaste; Americans tend to
use more hops; more flowery
aromas and tastes.

ペールモルツ( 薄い色の大麦麦芽)
から名付けられた人気のスタイル
です。ポーターやスタウトと違って
仕上がりの色が薄いことが特徴。

homebrews and have people appreciate your

Q: Could you tell us about the Kinki
Homebrewers Association?
Basically we are just a bunch of beer swilling
jerks . . . I mean gentlemen and ladies...
まずは自己紹介をお願いします。
Brent A. Jonesです。アメリカ、カリフォルニア州
出身で、1989年に神戸に来るまで、オレゴン州と
ハワイに住んでいました。醸造作業をしていない時
はティーチング、または甲南大 学内にある、Hirao
School of Managementで退屈な運営管理をしてい
ます。
自家醸造の道に入ったキッカケは?
当時家族ぐるみで仲良くしていた友人がドイツの
ビールメーカー、Hofmark Brauereiの後継者でした。
当時、彼は日本でオールモルト(発泡酒)の販促活動を
していて、父親の後を継ぐためにドイツに帰国する
まで、酒造方法を教えてもらう約束をしていました。
実際、醸造に関する様々なノウハウを教えてくれま
した(ドイツ語は教えてもらいませんでしたけど
(笑))。彼の帰国後も、私自身、自らの手 でビールを作
り出す野望は持ち続けていましたが、Tony Torbert
(Kinki Homebrewers in Japanの創始者)に出会って
から、またそのチャンスが巡ってきました。Tonyと
共に1バッチ分製造し、残念ながら今はもうお店自体
は無いのですが、当時、神戸のビア・クラブショップ
のオーナーをしていた、サイトウジュンコさんから
スターターキットを購入しました。それから今に至
ります。
自家醸造は困難な作業ですか?なぜ自家醸造をする
人がいるのでしょうか?
ちゃんと答えるには一杯飲まなくてはいけない質問
ですね(笑)。しいて言えば、自家醸造は言うほど難し
くありません。最低限の設備で始めることが可能で
すし、比較的簡単な作業です。とは言っても良い
ビールを醸造するには根気と十分な配慮が必要です
し、得意レシピに磨きをかけるには、細心の注意が必
要です。
なぜ自家醸造を続けるのかと言われれば・・・・ただ
単に「出来る」からです。また自家醸造は、創造力を
掻き立てる作業であり、どんどんとのめり込むこと
ができるんです。自家醸造をやっている人との
出会いや集会への参加により、色んな人から自分の
努力を認められることもあります。これには何とも
言えない喜びがありますね。
Kinki Homebrewersに関して教えてください。
簡単に言うと私達はビールをガブ飲みするおバカ
集団です・・・ではなく紳士淑女のグループです
(笑)・・・
Could you give us a brief self-introduction?
My name is Brent A. Jones. I was born in
California, and lived in Oregon and Hawaii before
coming to Kobe in 1989. When I am not
homebrewing, I can usually be found teaching or
taking care of some mind-numbing administration
work at the Hirao School of Management, which
is part of Konan University.
How did you get into homebrewing?
A close family friend here in Japan was the heir to
the Hofmark Brauerei who happened to be in
Japan promoting their all malt happoshu. He had
promised to teach me how to brew and was
feeding me articles (about brewing, not German
articles like ein, das and er) before he was called
back to Germany to run the brewery when his
father retired. I kept dreaming about brewing my
own beer, and then had the chance when another
friend Tony Torbert (founder of the Kinki
Homebrewers group) offered to show me how.
We brewed a batch together, I bought a starter
kit from Junko Saito at the old Beer Club shop in
Kobe (now gone, unfortunately), and I haven’t
looked back since.
Is homebrewing difficult? Why do people do it?
This question is difficult. I think I need to pop a
homebrew to answer this one. My kneejerk
answer is that homebrewing is not that difficult.
You can get started with just minimal equipment,
and it is a pretty straightforward process. Having
said so, brewing good beer does take some
patience and care. Perfecting you favourite
recipes requires further attention to detail.
As for the why question . . . Because we can.

My name’s Duncan and I FUCKING LOVE CRAFT
BEER. Read my mag! It’s awesome. I want you to
like craft beer too; it’s awesome! Craft beer is
local, there’s a billion styles and breweries, there’s
always something new, and you’ll feel better and
become cooler if you drink it.
The Japanese government changed the tax laws
on alcoholic beverages in 1994, reducing the
minimum yearly literage for a license for beer
brewers in Japan from 2,000,000 liters to
60,000 liters. Smart move, Japan.
Breweries popped up all over the
country and ‘ji-beer’ boomed in
the few years afterwards. A
lot of bad beer was made.
With the economic
downturn in the 90s, the
masses stopped
purchasing and many
breweries were wiped out.
Those that survived this first
crash are tough: they’re making
good stuff. Since 2010, craft beer has
been booming again. It’s an affordable luxury, and
even a few really delicious beers won’t break your
bank.
‘Craft’ is the new word and if you read my stuff, I’ll
tell you about everything that’s happening in
Kansai!

tastes and strengths. They have
more flavour than largers. English
ones are called “bitter” because of
the aftertaste; Americans tend to
use more hops; more flowery
aromas and tastes.

Brewing is a great outlet, and you can just keep
going deeper and deeper. And nothing beats
showing up to some gathering with a bunch of
homebrews and have people appreciate your
efforts.
Q: Could you tell us about the Kinki
Homebrewers Association?
Basically we are just a bunch of beer swilling
jerks . . . I mean gentlemen and ladies...
まずは自己紹介をお願いします。
Brent A. Jonesです。アメリカ、カリフォルニア州
出身で、1989年に神戸に来るまで、オレゴン州と
ハワイに住んでいました。醸造作業をしていない時
はティーチング、または甲南大 学内にある、Hirao
School of Managementで退屈な運営管理をしてい
ます。
自家醸造の道に入ったキッカケは?
当時家族ぐるみで仲良くしていた友人がドイツの
ビールメーカー、Hofmark Brauereiの後継者でした。
当時、彼は日本でオールモルト(発泡酒)の販促活動を
していて、父親の後を継ぐためにドイツに帰国する
まで、酒造方法を教えてもらう約束をしていました。
実際、醸造に関する様々なノウハウを教えてくれま
した(ドイツ語は教えてもらいませんでしたけど
(笑))。彼の帰国後も、私自身、自らの手 でビールを作
り出す野望は持ち続けていましたが、Tony Torbert
(Kinki Homebrewers in Japanの創始者)に出会って
から、またそのチャンスが巡ってきました。Tonyと
共に1バッチ分製造し、残念ながら今はもうお店自体
は無いのですが、当時、神戸のビア・クラブショップ
のオーナーをしていた、サイトウジュンコさんから
スターターキットを購入しました。それから今に至
ります。
自家醸造は困難な作業ですか?なぜ自家醸造をする
人がいるのでしょうか?
ちゃんと答えるには一杯飲まなくてはいけない質問
ですね(笑)。しいて言えば、自家醸造は言うほど難し
くありません。最低限の設備で始めることが可能で
すし、比較的簡単な作業です。とは言っても良い
ビールを醸造するには根気と十分な配慮が必要です
し、得意レシピに磨きをかけるには、細心の注意が必
要です。
なぜ自家醸造を続けるのかと言われれば・・・・ただ
単に「出来る」からです。また自家醸造は、創造力を
掻き立てる作業であり、どんどんとのめり込むこと
ができるんです。自家醸造をやっている人との
出会いや集会への参加により、色んな人から自分の
努力を認められることもあります。これには何とも
言えない喜びがありますね。
Kinki Homebrewersに関して教えてください。
簡単に言うと私達はビールをガブ飲みするおバカ
集団です・・・ではなく紳士淑女のグループです
(笑)・・・
Could you give us a brief self-introduction?
My name is Brent A. Jones. I was born in
California, and lived in Oregon and Hawaii before
coming to Kobe in 1989. When I am not
homebrewing, I can usually be found teaching or
taking care of some mind-numbing administration
work at the Hirao School of Management, which
is part of Konan University.
How did you get into homebrewing?
A close family friend here in Japan was the heir to
the Hofmark Brauerei who happened to be in
Japan promoting their all malt happoshu. He had
promised to teach me how to brew and was
feeding me articles (about brewing, not German
articles like ein, das and er) before he was called
back to Germany to run the brewery when his
father retired. I kept dreaming about brewing my
own beer, and then had the chance when another
friend Tony Torbert (founder of the Kinki
Homebrewers group) offered to show me how.
We brewed a batch together, I bought a starter
kit from Junko Saito at the old Beer Club shop in
Kobe (now gone, unfortunately), and I haven’t
looked back since.
Is homebrewing difficult? Why do people do it?
This question is difficult. I think I need to pop a
homebrew to answer this one. My kneejerk
answer is that homebrewing is not that difficult.
You can get started with just minimal equipment,
and it is a pretty straightforward process. Having
said so, brewing good beer does take some
patience and care. Perfecting you favourite
recipes requires further attention to detail.
As for the why question . . . Because we can.
