    and in the sunny region between Provence and the Languedoc-Roussil lon along the

    Mediterranan sea.

    Here, condit ions are ideal for creat ing except ionnal wines. The Domaine has a unique

    geological and geographical posit ion, with a wonder ful climate.

    The men and women of the Domaine, at tached to their terroir , are mot ivated by the wil l,

    the str ict requirements that are necessary to make f ine wines and the creat iv i t y to give

  • 3The DomaineThe Domaine has pract ised organic farming since i t s purchase in 1999.

    In reply to a number of impor ters, the process of organic cer t i f icat ion was

    star ted, and obtained in 2012 with Ecocer t, with the whole of the Domaine

    gaining i ts cer t i f icate in 2013.

    The strategy of the Domaine de Calet in 2014 was to open up i ts hor izons,

    par t iculary towards Russia, where a number of par tenerships have blossomed.

    2015 will be dedicated to Asia Vietnam, South Korea and China !

    Vintage : 2005

    Alcohol content : 14.5% - Vol bot t le : 75 cl

    Ground structure : Rolled pebbles, red clay

    Grape Var iet y : Syrah

    Vinif iciat ion : Long macerat ion with str ict temperature

    controls. Lengthy vinif icat ion over 25 - 30 days. Daily

    drawing up and unballast ing. Drained before being

    decantered into oak barrels. Malolact ic fermentat ion

    in the oaks vats dur ing a per iod of 18 months.

    Ageing : 10 - 15 years

    Our comments - tast ing : To the eye, a beaut i ful deep

    purple colour, with violet reflections. A deeply expressive,

    complex and concentrated wine to the nose that develops

    into a frank, full, dense and sublimely silky wine to the taste.

    Conclusion : Exuberance !! Power ful, aromat ic,

    with a complexit y that borders on excellence.

    Ground structure : Pebbled, red clay

    Assembly : 100% Syrah

    Vinif iciat ion : Lengthy macerat ion, st r ict temperature

    controls, lengthy vinif icat ion over 25 - 30 days.

    Debourbage and daily reassembly.

    Malolact ic fermentat ion in oaked barrels for 18 months.

    Ageing : 10 - 15 years

    Our Comments : Complex and full bodied, yet st i l l very

    subtle. This wine, with over tones of spices and red fruits,

    combines dist inct ion, delicacy and structure.

    Vintage : 2012 - 2013

    Alcohol content : 14,5% - Vol bot t le : 75 cl

    Ground structure : Pebbled, red clay

    Assembly : 80% Grenache, 15% Syrah, 5% Mourvdre

    Vinif iciat ion : Lengthy macerat ion, st r ict temperature

    controls, lengthy vinif icat ion over 25 - 30 days.

    Debourbage and daily reassembly.

    Malolact ic fermentat ion in oaked barrels for 18 months.

    Ageing : 8 - 10 years

    Our comments : This aromat ic, expressive wine,

    full of red fruits, develops a hint of vanil la, blueberr ies

    and blackcurrants. Silky and somptuous, this is a wine

    for pleasure!

    Vinif iciat ion : Lengthy macerat ion, st r ict temperature

    controls, lengthy vinif icat ion over 25 - 30 days.

    Debourbage and daily reassembly.

    Malolact ic fermentat ion in oaked barrels.

    Ageing : 7 years

    Our comments : An oaked, profound, generous and

    harmonious wine, concentrated with black fruits and

    velvety tannins.

    Malolact ic fermentat ion. Assembly af ter two rackings.

    Ageing : 6 years

    Our comments : An elegant and well balanced red wine.

    Generous aromas, round and exquisi te of black fruits,

    plums and cherr ies.

    Alcohol content : 13,5% - Vol bot t le : 75 cl

    Ground structure : Pebbled, red clay

    Assembly : 60% Syrah, 25% Marselan, 15% Carignan

    Vinif iciat ion : Carbonic macerat ion using the Carr ignan.

    Lengthy vinif icat ion with str ict temperature controls.

    Daily reassembly. Malolact ic fermentat ion and assembly

    af ter two rackings.

    Ageing : 5 years

    Our comments : A young, fresh and fruit y wine.

    The fresh acidit y is balanced by the aromas of r ipe

    grapes that ooze the suns warmth.

    Vintage : 2013 - 2014

    Alcohol content : 13% - Vol bot t le : 75 cl

    Ground structure : Pebbled, red clay

    Assembly : 61% Roussanne, 13% Verment ino,

    13% Bourboulenc, 13% Clairet te

    Vinif iciat ion : Direct pressing without adding sulfates.

    Musts cooled to 11C. Debourbage af ter 48hrs of

    decantation. Fermentation over 15 - 20 days with str ict

    temperature controls bewteen 14C - 16C.

    Ageing : 2 years

    Our comments : A very expressive and fruit y bouquet

    with a lovely f reshness and with hints of summer fruits

    and apples in the mouth. Well balanced acidit y with a

    roundness and elegance.

    Serve cool : 10C - 14C

    IGP Oc - Languedoc-Roussillon - Oaked

    Vintage : 2008

    Alcohol content : 13,5% - Vol bot t le : 75 cl

    Ground structure : Pebbled, red clay

    Assembly : 100% Chardonnay

    Vinif icat ion : Direct pressing. Musts cooled to 11c.

    Fermentation and ageing in oaked barrels for 12 months.

    Sediment lighty beaten at the beginning of the winemaking

    process, followed by 15 - 20 days of st r ict temperature

    controls between 14 - 16C.

    Ageing : 5 - 8 years

    Our comments : An elegant wine with lots of character.

    A compromise between power and delicacy, with aromas

    of r ipe peaches and vanil la. This wine is round, smooth

    and has a per fect balance between sweetness and acidity.

    Serve cool : 10 - 14C

    Vintage : 2013 - 2014

    Alcohol content : 13% - Vol bot t le : 75 cl

    Assembly : 100% Chardonnay

    Ground structure : Pebbled, red clay

    Vinif iciat ion : Direct pressing without adding sulfates.

    Musts cooled to 11C. Debourbage af ter 48hrs of

    decantat ion. Fermentat ion over 15 - 20 days with

    str ict temperature controls bewteen 14C - 16C.

    Ageing : 3 years

    Our comments : Beaut i ful colour and body, with

    an intense aroma of white f lowers and r ipe fruits.

    Well rounded, but f resh and elegant.

    Serve cool : 10C - 14C

    Ros - Cer t i f ied Organic Wine

    AOC Cost ires de N mes - Rhone Valley

    Vintage : 2013 - 2014

    Alcohol content : 13,5% - Vol bottle : 75 cl

    Ground structure : Pebbled, red clay

    Assembly : 60% Cinsault, 30 % Syrah, 10% Mourvedre

    Vinif iciat ion : Saigne without adding sulfates. Musts

    cooled to 11C. Debourbage af ter 48hrs of decantation.

    Fermentat ion over 15 - 20 days with str ict temperature

    controls bewteen 14C - 16C.

    Ageing : 2 years

    Our comments : Intense yet delicate, full of the warmth of

    the suns rays. Agreable and fresh to taste with a pleasant

    aroma of exot ic f ruits.

    Serve cool : 10 - 14C

    Ecology of The Domaine de CaletThe def ini t ion of Ecology is the study of the environment and the relat ions between

    liv ing organisms.

    For us, ecology can be descr ibed in one word - respect. Without want ing to def ine all

    of the scient i f ic aspects of our ecosystem, We feel that i t is essent ial for us to live in

    harmony within i ts natural elements, be i t land or marine, but also to live harmoniously

    with the men and women who share our daily

    l ives. The environmental issues of humanit y

    need commitment from each and everyone

    of us. We must lead by example.

    Since the purchase of the Domaine in 1999,

    we have worked cont inuously to recuperate the

    balance between liv ing beings exist ing in their

    natural habitat and non liv ing elements such

    as the soil, water and atmosphere. The arable

    lands were t ired, impover ished and saturated

    by the chemical phy tosanitar y products that

    had been used for decades by modern farm-

    ing. We wanted to create a natural environment

    by eliminat ing all harmfull products such as

    insect icides, pest icides and weed kil lers.

    To improve the biodiversit y, we planted nat ive mediterranean hedges creat ing recesses

    for local wildli fe to breed and also protect ing from soil erosion. This also improves the

    landscaping of our surroundings. We are actually par t icipat ing in a study to evaluate the

    inf luence of the landscape on the biodiversit y of ar thropods. This study is integrated in

    an European project called Life+BioDiVine.

    For us, ecology can be described in one word - respect.

    The liv ing environment is impor tant

    for the well being of all of us at the

    Domaine de Calet. I ts the moral

    responsabil i t y of everyone of us to

    ensure the natural balance of nature

    presides. We repeat, respect, is

    the pr imary condit ion that gives a

    sense of responsabil i t y and desire to

    fellow collaborators. This complici t y

    permits us to produce balanced and

    enchant ing wines.

    The wines from the Domaine de Calet

    are, evident ly, well balanced and

    harmonious, but also wholesome.

    It is our responsabil i t y to make sure

    our wines are safe and do not

    harm others.

    Str ict sanitat ion and the almost total absence of

    sulfates throughout the wine processing garantees

    natural wines.

    We hope in the near future, to be able to eliminate all

    addit ives in the wine making process - from the farm-

    ing of the vines, to the product ion in the winery. We

    have worked towards this goal for the past few years.

    To enable our object ives to become reali t y, we are

    developping vines resil iant to cer tain fungal diseases.

    The aim is to eliminate all v ine t reatments, even those

    author ised in organic farming.
