Dinner time!Cask No. DKK 745,-The nose seemed like an entire meal on one plate – chip shop wrappers, brown sugar-glazed ham and marmite on toast, followed by syrup sponge, stewed rhubarb and sticky toffee pudding; mainly sweet and savoury but with less obvious aromas of grass, gloss paint, car wax, Calmac ferries and Alpen muesli hiding behind. The palate had the same sweet-savoury duality – Marshmallows, Danish pastries and vanilla bonbons along-side roast beef gravy and honey-glazed parsnips – but now its spicy character became agreeably obvious (cinnamon toast, nutmeg, sweet chilli flavoured crisps). An enjoyable dram that got our juices flowing and made us feel hungry.

Teenage Shenanigans Cask No. DKK 640,-The nose conjured up a youthful romp in a hay barn: sweet peach perfume tangled with sticky homemade strawberry wine. Tropical fruits lip balm of mango and pineapple stole passionate kisses on perspiring cheeks. The aromas of early summer wafted through the dusky evening air: green twigs, gorse flower (coconut), cow parsley and lavender. A crumpled paper bag of sweets with dusty aniseed balls, parma violets, banana foams and Refreshers. Anais Anais and Vosene shampoo intertwined with scrumpy muffled promises never kept. Our rumpled scalliwags stole puffs from herbal cigarettes and tumbled their way home to separate beds.

Flirting with Florence NightingaleCask No. DKK 775,-The panel found Florence tending to her patients in a wartime camp hospital on a beach with ozone and engine smoke blowing on the breeze. Wintergreens and white daisies. A tangle of lobster pots and crab shells. Sweet lime posset and crushed mint. Her paraffin lamp gave off puffs of sooty smoke illuminating her honest face. A sip of water to her lips revealed a more buxom character with musky perfume behind her ears. Salt cured gammon, ribs and shellfish. Florence fluttered her lashes at a grubby mechanic while warming her hands at his flaming forge. Sweet dreams soldiers.

Remarkable freshness, beguiling sweetnessCask No. DKK 730,-The nose had remarkable freshness to it – lemon, laundry, pine, menthol, pan drops and anise – it also had Battenberg cake, buttery toffee, toasted marshmallows and coca-cola. Adding water, we found Lady Grey tea, orange, elderflower, marzipan, ginger cake and ‘a eucalyptus forest in Madeira’. The neat palate had beguiling sweetness – toffee, honey, shortbread, Eccles cake, chocolate and coconut, but with gingerbread, liquorice, sandalwood, marmite, tarragon and mint to balance it. The reduced palate was certainly tasty – tutti-frutti ice-cream, spun sugar, rum and raisin, raspberry, pineapple and vanilla flavours and more; underneath that – menthol, nutmeg and tobacco hints swirled and twirled.(101 words)

Frivolously fresh, with playful spices Cask No. DKK 745,-The nose was frivolously fresh – light fruit cocktail, floral notes and deeper hints of ginger, tobacco, linseed oil and fennel seeds (one panellist was in a dry cleaners opening a pack of menthol cigarettes). The palate was sweet and gingery (cake, biscuits) with some other spices too (nutmeg, cinnamon) and sweet fruitiness (apple strudel, mandarin flan, peaches, pineapple). The reduced nose seemed fresher – but still sweet and fruity (honey, melon, vanilla, toffee apples – someone suggested the tea-room at the Botanic Gardens). Even with water the palate had a pleasant, sweet, viscous mouth-feel – sticky toffee pudding, sugary dried fruits and Christmas cake.

Wham bam, thank you ma’am!Cask No. DKK 700,-Fire in the first aid box! Beeswax on leather, heather honey, singed bandages, Germolene and old peat hearth. Fragrant lavender oil from an incense burner drifted over the top. Sausages and bacon cooked over charred wood and dried lavender, served with fruity HP sauce and almond toasted with honey. Water only emphasised more of the same but cleaned up with shortbread, pistachio Turkish delight, Lux flakes and camphor scented cashmere jumpers from the chest. To finish, the panel found blackened spare ribs with a salty, peppery crust and Monin coffee syrup with ...wait for it...more lavender!

Eccentricity at its best! Cask No. DKK 915,-We found this an eccentric and incredibly enjoyable whisky. Aromas of dough, pine wood, rock pools, salted limes, seaweed, fish boxes, lavender bath salts, prawn cocktail, tuna sushi roll, Paddington Bear marmalade, … do I need to continue? In the taste we found seared scallops in a herb-butter sauce, grilled king prawns and eggs Benedict on a charred muffin. In reduction; salty sea spray, steamed mussels and sea salted chocolate, with flavours of oysters in lime juice and a glass of Prosecco in the finish. After 23 years in an ex-bourbon barrel, we transferred this whisky directly into an Oloroso Sherry butt for the remainder of its maturation.

A curious and eccentric conundrum Cask No. DKK 730,-This nose was a curious and eccentric conundrum - earthy bass notes of pepper, burnt twigs, tarry wood and salty sweetness growled resonantly with sugared almonds and meatballs, yet we also found trills, triplets and tremolos of fruit (pomegranate, banana, wine gums) and even flowers. The palate also had this odd salty/sweet combination – chocolate, toffee and ice-cream ricocheting off sea-salt, sardine and salted caramel. The reduced nose suggested salt and vinegar crisps, lavender and a Bloody Mary sprinkled with celery salt. The palate remained mouth-tingling, with dark honey, salt and wood – odd as three different socks – but very tasty.

Taking tea on the terrace Cask No. DKK 930,-The panel were fancied a balmy place and the scene was set for a dainty tea party. Sun bounced off the warm stone terrace and the scent of daffodils, hyacinths and sweet peas wafted through the breeze. A table was set with lemon bonbons, fresh lemonade and ginger beer with green grapes and under ripe pineapple. A quick shower didn’t dampen proceedings but opened sweeter notes of French fancies, lime posset, Pink lady apples, white apricots and creme Anglaise. One panelist imagined flying a balsa wood plane while eating an ice cream cone, another making daisy chains. And relax!

Churros dipped in hot chocolateCask No. DKK 830,-The aroma evoked almost immediate comments by all Panel members; chocolate tart with a frangipane filling, poached figs in red wine sauce, peanut butter ice cream, almond finger biscuits and a classic coke float – I think we all liked it! The taste did certainly not disappoint; Sailor Jerry spiced rum soaked raisins, marzipan, dark chocolate covered almonds with a cocoa dusting and fizzy cherry whips and red strawberry laces. With water on the nose cinnamon sugared almonds, vanilla cream- filled doughnuts with a glass of horchata and an all-encompassing flavour of freshly fried churros dipped in thick hot chocolate.

Bee Smoker at the seashoreCask No. DKK 775,-The aromas were all over the place; smoky bacon crisps, soy sauce, Chinese plum wine, venison steak with a red wine reduction but at the same time new plimsolls, old engine oil and a puff of soot. Let’s give it a try; big, dirty, oily, salty but also an underlying sweetness – honey roasted parsnips and carrots. With water a picture evolved of a beekeeper based on the seashore using a smoker fuelled with pine needles to calm the bees – it certainly worked on us. The taste was now that of a honey baked ham with glazed cinnamon apple rings and minty new potatoes.

Guns on the grouse moorCask No. DKK 760,-The panel imagined themselves on a misty moor cupping a mug of consomme laced with sherry while munching custard filled doughnuts and caramel bars for breakfast. In the distance was a trail of burning heather and a plume of gun smoke. Lunch was a fine spread of mustard crusted gammon, dressed crab, Iberico ham and honey glazed ribs. For dessert, sherry trifle, zabaglione and chewy orange fudge. A shower of rain amplified all the aromas and flavours, increasing the sweetness. The hunt for game ended with damp hairy tweeds scented with eucalyptus and wild boar on the grill.

A riddle wrapped in a mysteryCask No. DKK 730,-This was a bit of a riddle wrapped in a mystery – the nose offered some light, bright, attractive notes (lemon puffs, vanilla, green grass, nectarines and a furniture showroom) – but we also found deeper, bass notes of old sea-chests, Plasticine and Bisto gravy. The palate was warm and comforting; dark toffee and treacly textured sweetness with welcoming woody spice (cinnamon apple pie, spice cupboard, dunnage warehouses). After water, the nose acquired shell-on peanuts, caramel and polishing cloths. The taste was now a triumph of nutty sweetness (walnut fudge, crème caramel, pecan pie) with a mere suggestion of salt providing interest.

A bodega is burningCask No. DKK 730,-Sherry and smoke on the nose – big time! A bodega is burning by the sea – off-shore a puffer is puffing, while closer in a wet-suited surfer is chewing jerky and riding a wave towards a seafood barbeque on the beach. The palate – woof! – sherry-soaked raisins, Arbroath smokies, syrup of figs, burnt fruit cake, charred wood (maybe a matchstick) and disinfectant on a hot scalextric track. With water, the nose suggests oily rags, snuffed out scented candles, lighting a fondue with meths and zombie shop incense. The palate – still huge – lavender, chilli, dark chocolate and burgers dropped in ash and soot.

Incredibly Awesome!Cask No. DKK 640,-If you like this sort of thing, then this is the sort of thing you like – smoky bacon crisps, smoked eel, pickled vegetables, whole grain mustard, creamy horseradish and burnt honey glazed parsnips. What a sensation to taste; salty, sweet, smoky, spicy – kelp noodles, burnt honey and orange glazed ham, sweet sticky spicy spare ribs with red onion salad and candied walnuts. The addition of water changed the nose completely, much more maritime; sea spray, rock pools, driftwood, steamed mussels and sautéed scallops with a Chablis cream sauce whilst the flavours were now sweet soy oyster sauce, salted caramel and key lime pie.

To start things off Cask No. DKK 670,-This one was a slow starter but continued to develop when given time. At first we got slight metallic, earthy and oaky aromas which then became sweet popcorn, marzipan and spicy ginger snap cookies, ending in a well roasted pork joint with crispy baked potatoes. To taste immediately a foodie theme appeared; Szechuan pepper and honey pork slices in a sweet red wine reduction. Water released the sweetness of butterscotch, orange crème caramel cheesecake and sugared almonds and the flavour was now sweet, fresh and fruity like a Pimm’s and Lemonade using mint leaves and orange slices.

A bodega is burning by the sea – off-shore a puffer is puffing, while closer in a wet-suited surfer is chewing jerky and riding a wave towards a seafood barbeque on the beach. The palate – woof! – sherry-soaked raisins, Arbroath smokies, syrup of figs, burnt fruit cake, charred wood (maybe a matchstick) and disinfectant on a hot scalextric track. With water, the nose suggests oily rags, snuffed out scented candles, lighting a fondue with meths and zombie shop incense. The palate – still huge – lavender, chilli, dark chocolate and burgers dropped in ash and soot.

Incredibly Awesome!Cask No. DKK 640,-If you like this sort of thing, then this is the sort of thing you like – smoky bacon crisps, smoked eel, pickled vegetables, whole grain mustard, creamy horseradish and burnt honey glazed parsnips. What a sensation to taste; salty, sweet, smoky, spicy – kelp noodles, burnt honey and orange glazed ham, sweet sticky spicy spare ribs with red onion salad and candied walnuts. The addition of water changed the nose completely, much more maritime; sea spray, rock pools, driftwood, steamed mussels and sautéed scallops with a Chablis cream sauce whilst the flavours were now sweet soy oyster sauce, salted caramel and key lime pie.

To start things off Cask No. DKK 670,-This one was a slow starter but continued to develop when given time. At first we got slight metallic, earthy and oaky aromas which then became sweet popcorn, marzipan and spicy ginger snap cookies, ending in a well roasted pork joint with crispy baked potatoes. To taste immediately a foodie theme appeared; Szechuan pepper and honey pork slices in a sweet red wine reduction. Water released the sweetness of butterscotch, orange crème caramel cheesecake and sugared almonds and the flavour was now sweet, fresh and fruity like a Pimm’s and Lemonade using mint leaves and orange slices.
