KINGS OPENING NIGHT What happens when you go to a Sacramento Kings Basketball game? You get to watch super athletes put their bodies on the line for points. They are bumping and nudging the opponent, just to get enough space to shoot a basket. I was standing on the basketball court looking up at these tall guys warming up for the game. I’m glad I wasn’t playing the game. It’s interesting the court actually looks smaller in person than on television. The energy is unbelievable. Excitement is everywhere. Attending a live game is fun. We saw the Kings come from behind with more than a 10 point deficit in the opening minutes of the game to a victory in overtime. Waa…Hoo! As an added bonus there’s entertainment galore. The Happy Breed Spirit, is a member of the “happy breed,” the Petit Basset Griffon Vendeen. The PBGV’s are French rabbit hounds that are still used for hunting today in their homeland. Spirit, a five year, thirty-two pound female is a very happyPBGV owned by Pam & Doug La Vallee of El Dorado County. She is an AKC Champion and Canine Good Citizen as well as a therapy dog. Noted for riding her skate board, and asking for belly rubs, but she can also do parlor tricks like roll over, spin and high 5. The PBGV’s, one of the many varieties of the French hounds, is of ancient origin. The breed can be traced to the sixteenth century and to the Griffon Vendeen, it’s larger, more powerful ancestor. The name in French means much about the breed: Petit-small;

Basset-low to the ground; Griffon-rough or wire coated; and Vendeen- the area of France which they originated.

Spirit has recently been invited to audition for a movie called “Doggie Boogie, Get your Grr On” in Oakland.

Dealing with Legal Problems One of the reasons people hire an attorney is to obtain peace of mind, knowing that their particular problem is being handled by a professional with only the client’s best interests in mind. So once you hire an attorney and turn your legal problem over to him, let him do his job, listen to his advice and tone down the worrying: If you are doing all you can to solve a problem, there is no reason to bedevil yourself with it. That’s just hand wringing. Trust your attorney. It is interesting to note that in most polls, the public’s opinion of the legal profession is low, except for most people’s own attorney. I heard it said “whatever does not kill you makes you stronger.”First of all you need to think outside your box and decide you don’t want to stay where you are, releasing yourself from the trap of mediocrity. Secondly, identify then overcome any personal fears or insecurities that are holding you back. Work on building up your confidence by expanding your social skills, (eye contact and firm hand shake to timely follow ups with prospects or clients). Making even these slight changes will change your results. Most of us know that first impressions are important, so make sure you are putting your best foot forward. When you take the effort to make a good impression, that in and of itself will give you confidence and naturally causes you to feel better about yourself.“Entrepreneurs are usually more comfortable taking risks than most. Improve your risk-taking ability by

improving your performance” Most people adjust to the hardship of a less than a fulfilling life rather than facing the changes necessary to become successful. If you form good habits and continue them daily, you will wake up a different person, eager and ready to take on the world. Growing up I was a very shy person. I didn’t change until I was in my late 20’s when I got married. My wife was the life of the party, miss social butterfly. She had the “any excuse for a party” attitude. I always dreaded being around others for fear of having to have conversations with people I didn’t know. I didn’t think I had anything to offer to a conversation. I had a pretty low self image back then. I was insecure because my formal education stopped at high school. It bothered me when talking with someone with a higher education, “smarter than me”. I cannot begin to tell you how getting out of my

comfort zone allowed me to realize my lack of education was not going to be my downfall. It was my willingness to stretch myself and grow through uncomfortable situations that made me realize I had something to offer others. You have to want something bad enough. Trapped in the Comfort Zone of Life

So many people are trapped like I was, in their own comfort zone; victims of their own insecurities and false realities afraid to go beyond familiar territory. These boundaries are stopping you from realizing what’s out there for you. I’ll say it again, don’t be

afraid to dream big dreams if you’re willing to work hard enough to make those dreams come true.

Fix the Cash Flow Leaks

Slow the flow of money out of your business by fixing these leaks:1. Reduce waste. Each time you throw away a used ink cartridge, printer paper that is blank on one side, paper clips, clamps and rubber bands that have fallen on the floor or been abandoned on a desk, or a refillable pen, you are throwing away money. Instead, trade your used ink cartridges for credit on future ink purchases (I get $3.00 each). Print or copy on both sides of the paper to reduce paper and mailing costs. When someone sends you a document printed on only one side, you can use the back to print drafts of your work or cut the pages in half for use as free scratch paper. And reusing paper or binder clips that often end up in the trash is like putting change back into your cash box. Multiply these small actions by the number of ink cartridges, reams of paper, and boxes of clips you buy per year and see how much money you have been throwing away. 2. Reduce electricity and water bills. Replace your incandescent lighting with the newer Compact Florescent Lighting (CFL). The Sacramento Municipal Utility District estimates that one CFL will save about $30.00 per year in electricity costs compared to one incandescent bulb. You already protect your electronics during the day with a surge protector but if you unplug them during the overnight hours they will use zero energy, costing zero money. Caulk or weather-strip around drafty doors and windows and if you can, install solar shades or screens. Finally, fix leaky faucets; install low-flush toilets, and water indoor plants deeply but not more than weekly.

Whether you work from home or have a triple net lease, fix these money drains and keep more cash in your business.

Youth Toastmasters Leadership Group Completes Their Course

Throughout this semester a group of youth toastmasters have been working on all aspects of their speaking skills to help prepare them for the adult world. The Youth Leadership Group was sponsored by the Carmichael Toastmasters Group #2213. Mrs. Jennifer Harris, a member of the Carmichael Toastmasters Group, served as the Youth Leadership Program Coordinator. This program teaches communication, leadership and public speaking skills for the adult world. It is important to have leadership skills and be able to communicate and organize thoughts quickly in a conversation as well as being able to give a polished speech. Each of the students had the opportunity to work on all of these skills making them more confident and effective communicators.

In addition to speaking skills, the group has elected several student officers which gave them a chance to take on different leadership roles. The offices held include President, Vice President, Secretary and Sergeant of Arms. Two different sets of officers have served. They have also completed other tasks to teach leadership such as conducting a section of the meeting. All of the students have greatly improved their speaking and leadership skills throughout this course. Their celebration banquet will be at First Baptist Church of West Sacramento on November 6.

Keep Your Customers Coming Back for More

I use to do something that kept my clients coming back for more business. It is a basic fundamental of business. I now found a better way to keep my clientele doing business with me.

Small businesses always want to grow their business but get confused on how to grow. There’s an understanding it takes marketing and sales to get a new client. But how do you keep that client. Many business owners think that because they gave great service that the client will be coming back to do more business over and over again. Or a business owner may have sold a product at a low price to a customer and expecting that customer to come back and buy more products. Come to find out in both cases, that customer may be going to a similar business (your competitor), because they forgot about your business.Why is that?

You didn’t keep in touch with that customer. To retain and grow business we must keep in touch with our customers. It’s much more expensive to try to constantly get a new customer, than to take care of the customers you’ve already attracted.

Businesses and sales people are infatuated about adding new customers. They don’t know how to keep in contact with clients that will show their love with purchases if treated correctly.

I built a business one time where I didn’t keep in touch with my clients. I lost a lot of my clients. Then I built other businesses and learned how I could keep in touch with my clients and keep them coming back for more business.No it wasn’t email that kept them coming back.

It was snail mail. I use to mail newsletters quarterly. Then I mailed post cards monthly. I was always selling when I sent a newsletter or post card.

Then I found a way to keep in touch using my data base of clientele and becoming more human in the thoughts of my clients. Wow what a difference. I feel good, my client feels good, and I get more repeat business, because I show I care about my clients. And I really do care. I found a low cost way of mailing a personal card to all my clientele with only a couple of minutes of time. It’s lower in cost than any other system I’ve every tried or found. By sending cards monthly the way I do, you’ll see people/customers respond gratefully with repeat business. You should begin by “walking the aisles” I have a friend in the food business and that is how he begins his food ideas, by walking the aisles of the Safeway supermarket and identifying new food products/opportunities. I begin to identify my next business opportunity by using the same method of “walking the aisles,” in the industry that I am considering; however, in my case, the “aisles” often begin with the internet. You’ll be noticing trends in products and more importantly, you’ll be noticing “gaps” these are gaps in the needs of consumers that haven’t been filled yet. These “gaps” can be tracked and they should reveal to you what you can develop and provide to the marketplace. The next step is to do a competitive research on similar products. You can learn a great deal by studying your competition, but don’t kid yourself into believing that your competitors are all “bad” rather the opposite is true here. You can learn the size of the market, their distribution and the packaging of their product and come to understand the profile of your potential customer. Finally, you must decide what piece of this you can do better; if the answer is “none” do something else.

LEGALLY BLONDE – THE

GOLDEN YEARS There’s nothing like an intrepid heroine and a happy ending to make my spirits soar. I recently saw the movie turned musical, LEGALLY BLONDE at the Community Center. Elle Woods, a blonde bubblehead is addicted to shopping, particularly if the item comes in pink, with a matching outfit for her pint sized pup. When Elle’s boyfriend leaves for law school and replaces her with an ultra serious female law student, she follows him, determined to get him back. With an unflappable zest for life and positive attitude, Elle proves that you can accomplish anything and still keep your sense of humor. As a natural blonde (at least during my toddler years) I know that a positive attitude has nothing to do with hair color. Or age. As we go through life, some people become soured by their experiences. Negativity surrounds them. Others embrace life, choosing to find joy, or at least the humor in their day. In years past, I frequently sweated the small stuff of life. But after traveling with my daughter, she taught me that the mishaps we encountered were shared adventures and memories to be cherished.. When the front grille of your rental car falls off in the middle of the Irish countryside, it’s somewhat unnerving. But my daughter calmly scotch-taped it to the bumper and photographed it for posterity. It still makes me chuckle when I recall the roar of laughter from the mechanic who applauded our homemade auto repair. Suffering from a bout of food poisoning when traveling is one of those episodes I’d rather forget, but I will always treasure a photo of my girl friend and I arriving at the San Antonio airport, attired in spanking new straw cowboy hats and red leather boots, a bottle of Gatorade in one hand, Pepto-Bismol in the other. And even food poisoning can have a silver lining. We each lost three pounds. So when it seems like life is handing you lemons, take a moment to reflect. How can I turn these lemons into lemonade? Or better yet, a lemon drop martini. Remember that sharing a chuckle with your friends is good for the soul.

And just like food poisoning, laughter can turn an ordinary day into a memorable one.

Children’s Museum Breaks Ground

in Rancho Cordova Groundbreaking Event for the Sacramento Children’s Museum was held on October 21st. Rancho Cordova Mayer Dan Skoglund welcomed all attendees. Also on the program were California State Assembly Member Alyson Huber, who was a member of the Sacramento Junior League that backed SCM from the beginning, and Rancho Cordova City Council Member David Sander, who initiated the concept of a children’s museum in Rancho Cordova. Several hundred officials, dignitaries, adults, and children attended the event. The new Museum, which will be located next to the Rancho Cordova City Hall, is scheduled to completed and opened next spring/summer. The first of its kind of attraction in the Sacramento region, the Museum will feature exhibit areas that will encourage children’s imaginations and prompt them to test, tinker, laugh, and wonder. SCM has partnered with the City of Rancho Cordova to develop the Museum.

What’s Cook’n With Mom

Avocado Pie Did you know that California grows 95% of the world’s avocados, and that Californians are the world’s largest consumers of avocados? Avocados have a following in the cultures worldwide, but Californians put them into everything from Ice cream to sushi. One of the most unusual and absolutely delightful dishes made with avocados is the Avocado Pie. Look into the family recipe books of most native Californians, and you will probably find an avocado pie recipe. There are many versions in making the pie, and they all taste wonderful! Leo Porter of Fort Klamath shared this wonderful pie recipe with me. Leo grew up on an avocado farm in California. This is his version of the recipe for avocado pie that was created by his aunt in the 1970’s, and is now one of his signature dishes.

Avocado Pie Recipe1 (9-inch) prepared Graham Cracker Pie Crust* 1/4 cup fresh-squeezed lime juice 1/4 cup fresh-squeezed lemon juice 1 envelope unflavored gelatin 3 medium-size very ripe Hass avocados, mashed** 1 (14-ounce) can sweetened condensed milk 1/2 cup heavy cream 1/2 cup sour cream

* Check out my Graham Cracker Pie Crust Recipe. ** If an avocado is ripe, it will yield to a gentle pressure. Refrigerate graham cracker crust until well chilled. See how to make Graham Cracker Pie Crust. In a small bowl, combine lime juice, lemon juice, and unflavored gelatin; let stand 4 to 5 minutes or until softened. In a large bowl or the food processor, combine gelatin mixture, mashed avocados, and sweetened condensed milk. Pour mixture into prepared graham cracker pie crust. Refrigerate at least 2 hours or until the filling is firm. In a small bowl, whip heavy cream and sour cream together until stiff peaks form. Serve pie topped with prepared whipped cream mixture. Makes 8 servings.

Fried Oyster Po-Boy Crostini with Buttermilk RemouladeWe will be making: Fried Oyster Po Boy Crostini with Buttermilk Celeriac Remoulade and Pico de Gallo Ingredients: 1 cup Buttermilk 1 Egg White 4 Oysters 1/2 cup Panko 1/4 cup Cornmeal Creole Seasoning

Step 1: Combine the egg white and buttermilk. Shuck and soak the oysters in the buttermilk for an hour. Step 2: Soaking the oysters: Step 3: Mix the remaining ingredients to form a breading. Dredge the oysters. Fry in vegetable oil until golden brown. Place on paper towels to drain. Step 4: Pico de Gallo: Ingredients: 1 vine-ripened Tomato (diced) 1/4 Green Pepper (diced) 1/2 small Red Onion (finely diced) 1 clove Garlic (minced) 2 sprigs Cilantro (minced) 2 dashes Sriracha juice from 1/2 Lime 1 tsp Olive Oil to taste Salt/Pepper Step 5: Combine all ingredients. Step 6: Buttermilk-Celeriac Remoulade: Ingredients: 1/4 cup Buttermilk 1/3 head Celeriac (peeled, diced) 2 tsp Capers 1 Lemon 2 sprigs Tarragon 3 Cornichons (rough chop) 2 tbsp Creole Mustard 1/2 Shallot (rough chop) 1 clove Garlic (rough chop) 2 Egg Yolk 1/3 cup Olive Oil to taste Salt/Pepper Boil the celeriac in salted water until soft.

Step 7: Puree in blender with the buttermilk, shallot, and garlic and let cool. Add the cornichons, yolks, tarragon, mustard, and capers. Slowly drizzle in the olive oil until it becomes the consistency of an aioli. Season and finish with a squeeze of the lemon. Step 8: The Crostinis: Ingredients: 1 Sourdough Baguette 1-2 leaves Curly Endive 3 Fried Oysters Pico de Gallo Buttermilk-Celeriac Remoulade Slice the baguette on the bias into 1/4 inch slices. Drizzle with a bit of olive oil and toast a 350F oven for 10 minutes, or until toasted and spread on a bit of the remoulade. Step 9: Layer some endive, then an oyster, and top with some pico de gallo. Drizzle a bit more of the remoulade over the top.

Spicy Sweet Garlic ShrimpIngredients 1-2 lbs uncooked large shrimp, peeled and deveined 6 tbs plus 2-3 tsp cornstarch 2-3 tsp water 1/2 cup corn oil 4 large garlic cloves 3 tbs sugar 1 tsp cayenne pepper (more if you like heat) 1 tsp salt 3/4 cup tomato sauce 2 tsp unseasoned rice vinegar 2 tsp dry cooking Sherry 1 cup thinly sliced green onions

Step 1: Peeling a garlic clove is simple: pound the heck out of it with the flat blade of your knife. The husk falls right off, simple as can be. Chop your garlic...As you can see, this recipe uses lots of fresh garlic. You can set it aside for now. Step 2: Chop your green onion and set it aside also. This will be used for garnish. A very tasty garnish. Step 3: Get all your ingredients together. I like to have everything in little plastic cups because you need to put these ingredients together in your pan in very quick succession. Have the 6 tbs of corn starch in a bowl as pictured. Make a slurry out of the 3 tsp corn starch/3 tsp water. This will be used at the end to thicken the sauce. Also, thaw, peel and devein your shrimp under running water, and set them on a

paper towel. They should be moist as pictured. You’ll see why. You can use 1 lb of shrimp to feed 2 people, or 2 lbs to feed four, the recipe will not suffer either way. I am using 1 lb here. Step 4: Get your rice going. Most rice says to use 1 cup to every 1 3/4 cup of water. Bring it to a boil on high, then immediately set on your stove’s lowest setting and let it cook for 15 minutes. Step 5: Get a huge pan and put the corn oil in it. Heat the pan on medium high until frying temperature (~300F). Have tongs at the ready. Coat your shrimp on both sides with corn starch. Step 6: Place the coated shrimp in the hot corn oil to fry. Step 7: Shrimp will fry VERY fast, turn your shrimp after only a couple of minutes at most. Step 8: Your shrimp is done when it is all curled up and has no opacity. Do not overcook your shrimp or it will be rubbery. We are going to have this shrimp cooking a little bit more later, so even if its slightly undercooked here, it’s not a problem. Step 9: Remove shrimp from oil and drain on a fresh paper towel. Step 10: Pour off corn oil until all you have left is 2 tbs or so. Step 11: Add the garlic, cayenne, sugar and salt. Stir it up. Step 12: Let this fry up for a few minutes until your garlic starts going a bit amber. Step 13: Add the tomato sauce, vinegar and sherry. Stir it up. Step 14: When this has heated through (mere minutes in all of these steps, really) add your corn starch slurry and stir to thicken. Step 15: Stirred: Step 16: Add your shrimp and stir to coat. Step 17: Coated: Step 18: Plate over rice, garnish with green onion. DELICIOUS!

Festa d’Italia-Celebrating the Italian Marques

The 6th Annual Niello Concours at Serrano was held on October 4, 2009 against the backdrop of the beautiful Serrano Visitors Center. With the Italian themed Festa d’Italia bringing a little bit of Italy to the Sierra foothills, attendees enjoyed not only a fabulous array of motorcars but the music, food, wine and spirit of a country far away. With over 200 automobiles on display, you really could find your dream car. From the 1912 Buick Model 43 to the 2010 Ferrari California Spider, a vast array of vehicles, some never before seen in the area, were eye-candy as well as a living history lesson for those in attendance. The Niello Concours at Serrano has become the go-to event on the Concours calendar because of its beautiful location as well as being known to have such fabulous and historic cars on display. The addition of a live fashion show and complimentary Cigar & Cognac lounge at the event, draw a vast demographic vs. the auto enthusiast only crowd. But for the avid auto enthusiast… motorcars that they might have only seen in a magazine such as the 2010 Porsche Panamera, never before shown in Northern California or the Ferrari Enzo with a $1.2 million dollar price tag, the event did not disappoint. With entries from all over California, as well as Nevada, there really was something for everyone.

If you have never attended this event, ask someone who has, you will learn this is the place to be on the first Sunday in October every year.

Finally – Someone Who Can Remove Those Ugly Black Lines By The Walls, or Crevice of Steps I’ve had new clients call us to evaluate some embarrassing black lines where the carpet meets the wall and at the edges of steps and jagged lines under curtains. They told me no carpet cleaner could get them out and in some cases they had tried up to five different firms. But the black remained.
