The Audiotherm® is your partner in the kitchen, keeping an eye on your cooking so you don’t have to. It will alert you when

your AMC unit reaches important temperatures indicated on the

Visiotherm® – first red area (time to start frying, or reduce heat),

white zone (ideal temperature for longer cooking) and 2nd red area

(unit too hot). Once in place, the Audiotherm® will signal an alarm

when the Visiotherm’s gold indicator is aligned with the arrow on the Audiotherm®.

The Visiotherm® is your personal kitchen assistant that takes the guesswork out of cooking. With a built in thermometer, the Visiotherm® indicates the temperature inside the unit during the cooking process. This allows you to control the temperature with ease.

how does the VisiotherM® worK?As the unit preheats, the gold indicator in the Visiotherm® will move according to the temperature inside. It indicates the ideal temperature to start frying, browning or cooking specific foods, and it shows you when the temperature is too high. View the Visiotherm® as a clock face. There are four key areas to consider as the indicator moves during cooking:

12 ‘o clocKThe ideal cooking temperature is between the 12 o’ clock and 2 o’clock position, indicated by a white zone.

First red areaWhen heated over a medium temperature, this indicates the ideal heat to start browning or sautéing most foods without the addition of fat. Or you need to reduce the heat now when cook-ing rice or waterless vegetables.

second red area The unit is too hot and your food might burn. Reduce the temperature or remove the unit from the heat.

cold area This indicates a cold unit, or a cold lid that was removed during cooking. Preheat your empty unit on medium to brown or sauté foods. Or place dripping wet vegetables or rice with water in your cold unit and heat over a medium temperature.

Now it is quick and easy to judge if your heat setting is too high or too low, by simply checking whether or not the gold indicator is in this “optimal range”.

a Versatile lid MaKes cooKinG a pleasureA perfect–fit, weighted lid creates a water tight seal during the cooking process. The lid also has a non-drip design capturing moisture that has collected on it’s inside surface, keeping kitchen counters clean. The lid fits conveniently between the handle and rim for safe placement while adding ingredients to your meal or stirring. And finally when reversed (lid knob facing down), the lid becomes a stable serving base for your meal.

rooibos fruit punChMakes approximately 3 litresThis is a wonderful refreshment on a hot day.

5 rooibos tea bags1 litre boiling water3 - 4 thin slices of fresh ginger30 ml sugar50 ml fresh lemon juice1 litre fruit juice e.g. mango or orange, chilled1 litre ginger ale, chilled

ice cubes, mint leaves and thinly sliced lemon wedges

1. Place tea bags and boiling water in an AMC 20 cm High. Allow tea to brew over a low temperature for 10 – 15 minutes. 2. Add ginger and sugar and stir over a low heat until all the sugar has dissolved. Remove from heat, add lemon juice and allow mixture to cool down. 3. Remove tea bags and ginger, pour into a large pitcher and add fruit juice. Refrigerate until ice cold and add ginger ale just before serving. 4. Place some ice cubes, mint and lemon wedges in glasses and fill up with punch.

variations: • Add lemonade, Apple-

tiser or sparkling wine instead of ginger ale.

• Add a tin crushed pine-apple or a tin granadilla pulp. Refrigerate tins and add with ginger ale.

• Add 50 – 100 ml brandy or sherry to punch if preferred.

Below are three of the most frequently asked questions that we have received from consultants and customers. if you have any more queries please don't hesitate to ask!

Q: HOw MUCH TiME AND ENERGy wiLL i sAvE UsiNG A KETTLE ON THE FLUx TO BOiL wATER?A: None. One litre of water boiled in the kettle on the Flux will take the same amount of time and energy as boiling one litre in an electric kettle. You will however save time and energy if you normally boil water on the stove.

Q: wiLL THE FLUx iNDUCTiON COOKER iNTERFERE wiTH My PACEMAKER?A: Maybe, maybe not. We have scoured the web and found reports that say “no” while others say “yes”, and have yet to receive any feedback from our customers. This is why we rather recommend using the Flux responsibly, to minimise risk of interference. This would mean not standing too close to the Flux and always placing your cookware over the induction coil in the centre of the flux, not off-centre. If you have experienced any interference with your pacemaker, please send us your feedback to [email protected] - thank you!

Q: DO iNDUCTiON COOKERs EMiT RADiATiON?A: Yes, induction cookers do give off low frequency radiation, similar to a microwave oven. As with a microwave, the amount of radiation reduces drastically as you move a few centimetres away from it.

Flux FAQ& the InSim Plate

insim plate

insim plateThe AMC insim plate enables you to use your AMC on the Flux if you purchased cookware before 2009. Cookware manufactured before 2009 is not induction friendly and will give an error code when placed on the Flux. Please note: The insim Plate is only available with the purchase of the AMC Flux.

NEvER use a high heat. A high heat setting on the Flux (7-9) will cause the InSim plate to overheat and warp. Once it has warped, it will not work properly again.

Heat the insim plate with the cookware. The InSim plate is heated by the Flux and transfers heat to your cookware. There may be a slight delay in heating your cookware, compared to using New Generation units on the Flux.

The plate gets hot, vERy hot. Remember the InSim plate becomes the heat source for your pre-2009 AMC and will retain heat, continuing the cooking process even after the Flux has been switched off. Use two forks to move it to somewhere safe to cool down.

1 onion, finely chopped1 x 2 cm slice wholewheat bread80 ml beef, chicken or vegetable stock1 clove of garlic, crushed500 g lean beef mince1 extra large egg7,5 ml ground coriander30 ml fresh, finely chopped herbs of choice15 ml fresh, finely chopped parsley, or herbs of choice10 ml worcestershire saucesalt and freshly ground black pepper to taste20 ml oil for frying

TOMATO sAUCE1 onion, chopped2 x tins chopped tomatoes15 ml sugar20 ml each fresh, chopped or 10 ml dry thyme and origanum

1. Place onion in an AMC 20 cm Kombi. Pour boiling water over and leave to stand for 5 minutes.

2. Meanwhile, soak bread in stock and mash with a fork when soft.

3. Place all meatball ingredients, except oil, in an AMC 24 cm Dome. Mix well and season to taste. Roll into small balls.

4. Preheat an AMC 30 cm Electric Fry Pan over a medium temperature, probe on 6, until the Visiotherm reaches the first red area.

5. Add 20 ml oil and fry meatballs on both sides until golden brown, then spoon out.

6. Sauce: Sauté the onion in the EFP until soft. Add the tomatoes, sugar and herbs and simmer for 5 minutes until reduced slightly.

7. Season to taste and place the meatballs back in the sauce. Reduce the heat, cover with lid and simmer for a further 5 – 10 minutes. Serve on crispy rolls topped with freshly grated parmesan.

easy ChoColate Cakemakes 1 x 20 cm cakeBaking a cake in AMC is really so easy! This delicious chocolate cake is a breeze to make and bake.

1. Place an inverted AMC Grater in a 30 cm Electric Fry Pan. Cover with lid and turn probe to 8 until the gold indicator of the Visiotherm reaches the 12 o’ clock area. Prepare the cake batter while the unit preheats.

2. Butter an AMC 20 cm Baking Tin and set aside.3. Place butter in a bowl and beat with an electric

beater until smooth. Add the sugars and beat for 2 - 3 minutes until fluffy. Add the egg and mix through, then add the buttermilk and vanilla beating well. The batter may look a little lumpy at this stage.

4. Sift the remaining dry ingredients over the

batter. Use a spoon or spatula to mix together until well blended, but don’t overmix.

5. Pour the batter into the cake tin. Once the unit has preheated, place the cake tin on top of the grater. Cover with lid. Leave probe on 8, ensuring that the Visiotherm stays around the 12 o’ clock area. Reduce or increase heat as needed. Bake for 1,5 hours or until a skewer inserted comes out clean.

6. Turn probe off and remove cake tin from unit. Leave to stand for 10 minutes in the tin before turning out and leaving to cool. Ice as preferred or serve dusted with icing sugar, strawberries and a side of whipped cream.

How long HAVe You or Your fAMilY been CooKing witH AMC?My gran and my mom bought their AMC universal sets in 1970. The en-tire set cost R120 - my brother was given my mom's pots as a wedding gift. The universal set was sent in for new handles, a good polish and then shipped off to Canada.

wHAt Do You enjoY About CooKing in AMC?There is nothing that beats cooking in the best cookware. From early childhood, AMC cookware has been a part of the kitchen must haves. I watched my gran and my mom cook in these pots and appreciated them from an early age.

wHere Does Your loVe for CooKing originAte?I am certain that my love for cooking is genetic - it’s something that is passed on in my DNA. The women in my family are fantastic cooks who spent most of their time hovering around the kitchen. From an early age, the kitchen was the heart of our home. I would do my homework at the kitchen table and soak up the delicious aromas wafting from my mom's AMC curry pot!

wHAt Are Your fAVourite ingreDients?I could go on and on about this - spices are a must have in my kitchen. I love simple food yet flavoursome meals. Garlic, chilli, fresh herbs especially coriander, smoked paprika, chorizo, and lamb. I have to say that I find a good lamb dish irresistible.

if You were sent to An isolAteD islAnD for 3 MontHs - wHiCH AMC pot or pAn AnD 3 spiCes will You tAKe witH You AnD wHY?I would take a 40 cm Magnum, a large bottle of Curry Me Home Red Chilli Powder, Magic Masala and Cumin Seeds. I would need these ingredients to prepare a feast for visiting pirates! On a serious note, I love spicy food and Magic Masala, as the name suggests, adds a magic to anything I cook. I am sure that I am addicted to chilli and would struggle with the withdrawal symptoms. Cumin seeds can be used to sauté just about anything and its one of my must have spices.

1. Remove the chicken skin, disjoint and cut into pieces. Rinse the chicken under cold running water and leave in a colander to drain. Pat the chicken pieces dry with absorbent paper towel.

2. Heat the sunflower oil over a medium temperature in an AMC 30 cm Electric Fry Pan or 30 cm Roaster.

3. Add the bay leaf, cinnamon stick and cardamom pods. Sauté until fragrant and then add the mustard seeds. When the mustard seeds begin to splutter, add the chopped onion and salt. Sauté until the onion is golden brown. Add the crushed ginger and garlic. Stir the red chilli powder into the fried onion and stir for a few seconds.

4. Add the chicken and stir well to coat the pieces in fried onion mixture, stir until pieces are sealed.

5. Add the ground coriander, cumin, garam masala and turmeric. Gently stir the chicken to coat in the spices. Use a wooden spoon to scrape the bottom of the pot to loosen the spices that are stuck.

6. Add the chopped tomatoes and reduce the heat. The moisture and acidity from the tomatoes will help de-glaze the base.

7. Cover with lid and simmer until the chicken is cooked through, about 40 minutes. Simmer uncovered until the sauce thickens and coats the chicken.

8. Add the coconut cream, magic masala and curry leaves. Simmer for another 2 minutes.

9. Remove from the heat and garnish with fresh coriander. Serve with basmati rice.

YuDHiKA’s tips:• The chicken can be

cooked in advance - add the coconut cream just before serving to prevent the sauce from thickening too much.

• For a lighter dish, add 200ml coconut milk instead of the coconut cream.
